Sunday is my favorite. A day of catch up, laundry family time or just hanging out. Cooking became my therapy after my mom passed away and has become even more therapeutic since my little brother passed this June. There are some days where I’m truthfully really sad and others where I’m ok and able to handle grief in the best way possible. Valentine’s Day weekend has been nothing short of amazing. I stepped back a bit and have been spending time with my loved ones, which has been much needed and just lovely. What has been even more lovely is this dessert I made for my husband. His favorite dessert is Apple Pie, or more specifically Dutch Apple Pie. Yesterday I whipped up @mrsvitale recipe for it but after dinner yesterday (swipe for that deliciousness) we were stuffed to the brim and saved dessert for today. This pie is perfect. I used two Granny Smith apples and two gala apples to make the best balance of sweet and tart but what makes this pie the best is the topping. It’s flaky and sweet everyone took their first bite and said: “Wow! This is REALLY good!” You gotta make it guys. I know it’s not Apple season anymore but it’s so so good. I mean, who could say no to Apple pie??! Guys, I had the best day yesterday. My kids spent the day with grandma, so mama spent the day in the kitchen cooking and honestly I haven’t been this filled with joy in a while. I made two recipes from @mrsvitale. First her Broccoli Cheddar Soup and second her Basque Cheesecake. Both recipes were absolutely incredible. The soup was perfect. Easy to make, cheesy, hearty and way more filling than it looks. Plus, these croutons are perfection. Cheesy, salty, and the perfect amount of texture on top of soup. This cheesecake is out of this world delicious. A Basque cheesecake (aka a burnt cheesecake) is similar to a traditional cheesecake flavor but has an amazing texture at room temperature. We have had a long couple of days helping some of our family move. As I you most likely know, moving is exhausting and all I was looking forward to doing when we got home was to get into my kitchen and make us a home cooked meal. I really feel like a grownup lol. Tonight we went easy: Chicken breasts cooked with a sauce of shallots, garlic, lemon juice, chicken broth, heavy cream and parsley which I found on Pinterest. @mrsvitale Buttery Parmesan Orzo which tbh is basically a Parmesan Mac and cheese and it’s a winner every time. No laws were broken when eating this dinner 😂 Remington and I spent the whole (abnormally long) day dealing with the nastiness of a cold.
