Isaac At Tucked away in the North Laines is ‘Isaac At’ an unassuming restaurant, which has been making waves since it opened in 2015. It’s owned by 24-year-old Isaac Bartland, who runs the kitchen with his team of young chefs. With big windows that let in lots of natural light, this small restaurant’s on-trend interior is informal and unfussy, with slate-grey walls and bare wooden tables. Food is prepared in an open kitchen, so you can see Issac and his team at work while you sip something from their all-English drinks menu, be it ‘Ridgeview’ sparkling wine, ‘Silly Moo’ cider or ‘Blackdown' vodka finished with silver birch sap, tapped from a Sussex woodland. A paper scroll on each table explains where your food and drink are sourced from – for example local lamb, Arundel cucumber and foraged wild garlic. If you decide against the wine pairing to match the seven course tasting menu then Alex (the restaurant manager and sommelier) will be happy to help you choose something special. There’s a choice of set or tasting menus. While awaiting starters, get stuck in to some bread and butter. It could be a treacle and stout loaf with a thin, crisp crust, steamy inside and scored into fours. Be sure to smother your tear-and-share wedge with local ‘Ringmer’ butter. No other Brighton restaurant champions local produce quite like ‘Isaac’s’. Thanks to the restaurant’s talented team, every drink and dish served feels like a carnival of local ingredients and suppliers, whilst their pared back approach means that every ingredient has a chance to sing. At ‘Isaac At’ all of the ingredients are sourced locally and the menu is diverse. A Glass of Sussex

We are all familiar with British foods and drinks that enjoy protected status under rulings by the European Commission. Think Cornish pasty, Stilton Blue Cheese, Arbroath Smokies and Gloucestershire Perry. These, and about 70 other British protected names, may soon be joined by Sussex Sparkling wine.
Vineyard owners in Sussex have applied for protected designation of origin(PDO) status. A ruling made ultimately by the European Commission would see their sparkling wine enjoy the same prestige as Champagne and Burgundy.
Officials from the Department off Environment, Food and Rural Affairs (DEFRA) are expected to give make an announcement shortly, with further ratification from Brussels soon afterwards.  Producers could call their wine ‘Sussex ’provided that certain stringent quality controls are met.
In years to come it may be quite normal for a bar-tender to ask you ‘Would you like a glass of Champagne or a glass of Sussex?’
Now that is progress for the UK wine market.

Isaac At Twenty four year old Isaac Bartland is an ambitious young entrepreneur who has worked as a professional chef for seven years. His focus is contemporary English fine dining and he firmly believes in using locally-sourced, seasonal ingredients. ‘Isaac At’ first opened as a ‘pop up’ restaurant back in April 2015 on weekend evenings only. Since 2017 then they have undergone some internal refurbishing and the place is looking smart and tasteful. So what has changed? The kitchen is bigger (yet still bijoux by most standards) and there are a couple of places at the pass in addition to the larger dining area. The tables have been set away from the kitchen and service is now staggered by table rather than served all at once to the room. Everything at ‘Isaac At’ is sourced as local as possible. The mileage of every ingredient and wine is listed on the menu. Interestingly they offer a juice pairing as well as the alcoholic kind. All juices are created in house. Wines are a real celebration of local vineyards - ‘Ridgeview’, ‘Bolney’, ‘Sedlescombe', ‘Davenport’, ‘Nyetimber’… they're all here. The same goes for the rest of the drinks menu, including the spirits (bar the whisky) and even the bottled water. ‘Isaac At’ is one of the many gems pushing harder and harder in terms of quality, variety and experimentation. A true tribute to the region ‘Isaac At’ is the epitome of ‘Sussex on a plate’ – or seven plates, one cheese board, an amuse bouche and a loaf of bread. Isaac At ‘Isaac At’ is a small restaurant in the the North Laines owned by Isaac Bartland. Bartland works alongside a team of 20-somethings who are incredibly driven and passionate when it comes to food. The restaurant itself is beautiful, with simple decoration, an open kitchen and stunning photography alongside transparent screens that allow guests to see into the kitchen. The menu is bound with a cord and upon unravelling you will discover the tasting menu for the evening. There’s a choice of set or tasting menus. Alongside the menu a list of the ingredients used perfectly demonstrate the locally sourced ethos that runs throughout ‘Isaac At’. To accompany the menu is a comprehensive list of British wines by the glass or bottle, as well as the option of a wine paring menu, with a new glass presented by the very accommodating manager and sommelier, with each plate. For the non-drinkers the equivalent, but with juice, is offered. ‘Isaac At’ cannot be praised highly enough for their allergy awareness. All the food is as locally sourced as possible and the wine and juices are all from within the Sussex borders. From the cutlery holders housing perfectly polished silverware for each course, to the hand-tied scroll containing the menu, the scrupulous attention to detail is clear to see.
