These easy 30 minute Chicken Burritos are stuffed with an incredibly delicious chicken, potato and vegetable filling!  Make these for dinner and have the leftovers for lunch!  Makes approximately 9 burritos.  
Chicken Burritos - 9 servings
4 chicken thighs (cut in 1 in. pieces)
4 cups potatoes (finely chopped)
1 onion (chopped) 1 bell pepper (any color) 3 garlic gloves (chopped) 2 eggs (beaten) 1 tsp pepper 1/2 tsp salt (or to taste) 1 tbsp vegetable oil 1/2 cup grated cheddar cheese
Salsa (to taste)
9 tortillas
In a large skillet, heat oil on medium-high.  Add chicken and brown.  Add onion, bell pepper, potatoes and garlic.  Add salt and pepper.  Cook 10 minutes or until potatoes are tender. 
Reduce heat to medium, spread filling out to sides of skillet, leaving a space in the middle for the eggs.  Add the eggs and scramble until cooked.  Once cooked, mix into filling.  
Place filling on top of tortilla, add cheese and salsa, wrap.

Simple Baked Chicken Thighs  
Want a quick, easy way to make baked chicken thighs?  Here is a no fuss recipe that's ready in less than an hour!  We had ours with potato salad.  Try with any side dish.  
INGREDIENTS:
3-6 chicken thighs
2 tbsp olive oil
2-3 tsp poultry seasoning
salt and pepper to taste Preheat oven to 425*F.  Line  baking pan with foil, place a rack on top. Dab chicken dry with a paper towel Drizzle chicken with olive oil
In a small bowl, combine poultry seasoning, salt and pepper.  Sprinkle onto and rub into the thighs.   Place on rack and bake 35-40 minutes or until chicken reaches 165*F.   Broil  2-3 minutes to crisp if desired I baked mine for 40 minutes and then broiled for 2 minutes.  they cam t nice and juicy and crisp!

When You Don't Have Evaporated Milk  What do you do when you don't have evaporated milk for a recipe? Or, in my case, you open it and it has gone bad? I was right in the middle of making my pumpkin pie for Thanksgiving when I opened my evaporated milk and it was chunky and smelled funky! Oh no! What to do, what to do! I know, I will google it!
 If you don't have any, make your own: To produce 1 cup of evaporated milk, simmer 2 1/4 cups of regular milk down until it becomes 1 cup. In many recipes, evaporated milk may also be replaced with a combination of whole milk and half-and-half. Substitute 1 ½ cups of cream or half and half (or a combination of the two) for the evaporated milk. You can also use milk (any kind from whole to skim). When doing it this way, add 1 tablespoon cornstarch in with the sugar and spices to help the pie set up.  Watch for more tips as I run into more dilemmas! Until next time...........

Oven Roasted Brussel Sprouts
 Ingredients 1 1/2 lb brussel sprouts, trimmed and halved2 tbsp olive oil1 tsp garlic powder1/2 tsp salt1/4 tsp pepperDirectionsHeat oven to 425.  Lightly coat cookie sheet with cooking spray.  Combine everything in a bowl.  Toss to coat.Spread in a single layer on cookie sheet.  Cook 16-20 minutes.

Creamy Parmesan Pork Chops -  made in ONE PAN, making it an  easy recipe with little clean up!  This pork chops recipe is the ultimate comfort food! If your looking for another way to make pork chops, you have to try this!  If you’re like me, you get sick of the same old, same old.  I am always looking for more ways to make pork chops!  I don’t like pepper so, I made mine without.   Ingredients 4-5 pork chops (3-4 ounces each) salt and pepper to taste  1 1/2 tbsp. salted butter 3 cloves  garlic, minced or 2 tbsp minced 1 1/2 cups heavy cream 2 tbsp all purpose flour 3/4 cup grated parmesan 1 tbsp  fresh, minced parsley or 1 tsp dried Instructions Heat a large skillet over medium heat.  Add butter, melt, coat pan Sprinkle each pork chop with salt and pepper on both sides Add pork to skillet, cook on each side 4-5 minutes or until golden brown on both sides.  Turn off heat, cover with lid.  Let sit 8-10 minutes or until cooked through.  Set aside on foil tented plate to keep warm. Scrape the pan to deglaze Heat pan to medium high heat.  Toss garlic in pan and allow to caramelize; 1-2 minutes or until fragrant Add flour and cream stirring quickly to combine.  Bring to a boil, reduce to simmer.  Simmer for 2 minutes. Stove Top Easy Cheesy Chicken Bake This recipe calls for Stove Top stuffing but you can use any brand.  Also, I substituted the broccoli florets for a broccoli, cauliflower, carrot blend because I didn't have broccoli florets.  While I was eating this, I thought it would also taste good with corn mixed in.  Creamy and cheesy comfort food.   Easy and quick to make!  Prep:  10 minutes  Total: 40 minutes Stove Top Easy Cheesy Chicken Bake 6 oz. Stove Top Stuffing Mix for Chicken1 1/2 lb. Boneless, skinless chicken breasts, cut into bite sized pieces1 pkg. (14oz) frozen broccoli florets, thawed, drained1 can cream of chicken soup1/2 cup milk1 1/2 cups shredded cheddar cheese Heat oven to 400. Prepare stuffing as directed on package. Combine chicken and broccoli in 13x9 baking dish. Stir in soup, milk and cheese; top with stuffing. Bake 30 minutes or until chicken is done and casserole is heated through.

Tuna Noodle Casserole

Another wonderful Autumn and winter dish.  Also one from my childhood. When I whip up my own concoctions, I don't measure anything.  Keep this is mind when you see a recipe that I am sharing.  The following "recipe"  is how my mother used to make Tuna Noodle Casserole.   I use this recipe when I am in a hurry or have forgotten to take meat out to thaw.    I have a different recipe with a lot more and different ingredients than this one.   I make it when I have plenty of time.  
There are many variations of how I make my casserole but this is how I did it this time.  For the soup, I usually do a combo of 2 soups.  This time, I used 2 cans of mushroom soup.  
Pre-heat oven to 350 Cook noodles and soups according to package directions 1 - 1lb bag noodles 2 - 10 oz cans soup (cream of mushroom, cream  of celery, or cream of chicken) 2 - 5 oz cans tuna fish 1 cup Frozen Peas  (optional) Bread Crumbs (I use seasoned). Season to taste.
Add frozen peas to soup while cooking.  Drain tuna and add to soup. Once soup and noodles are cooked and drained, combine - soup, noodles, peas, tuna in a pot or bowl and mix. Sprinkle in some bread crumbs. Pour mixture into baking dish. Cover with more bread crumbs. Bake in oven 15-25 minutes or until top layer is a little crispy. This is a great, easy dish because you usually have these items in your cupboards or pantry.  The night I made this I was going to make another dish in the crockpot when I realized the crockpot dish was already in use.  So, I looked through my freezer for something else, couldn't find anything, and thought HMMM....tuna noodle casserole.  And of course, I had everything I needed! Egg Cooking Tips  Do you cook eggs?  I do.  I never time them.  Whether I am frying, boiling, or scrambling the eggs, I just kind of guess how long I should cook them for.  I am usually right or pretty close.  Not sure how long to cook that egg for? Here are some tips.  Scrambled Eggs and Omelettes - The scrambled eggs are done when they are thickened and no visible liquid egg remains.  Scramble your eggs on low-heat. Take them off the heat when they still look wet but not runny.   Fried Eggs  - To cook both sides and increase the temperature the eggs reach, cook slowly and  cover the pan with a lid or turn the eggs. Cook until the whites are completely set and the yolks begin to thicken but are not hard.  Heat matters. If heat is too high, eggs will become tough and rubbery. Poached Eggs - For classic poached eggs cooked gently in simmering water, cook until the whites are completely set and the yolks begin to thicken but are not hard, about 5 minutes. For steamed eggs cooked in ‘poaching’ inserts set above simmering water, cook until the whites are completely set and the yolks begin to thicken but are not hard, about 6 to 9 minutes. Avoid precooking and reheating poached eggs.      Points to remember           Add a small dash of vinegar to a pan of steadily simmering water.       Crack eggs individually into a ramekin or cup.                                                        Create a gentle whirlpool in the water to help the egg white wrap around the    yolk.       Slowly tip the egg into the water, white first. Leave to cook for three minutes.      Remove with a slotted spoon, cutting off any wispy edges using the edge of      the spoon.       Drain onto kitchen paper.     TIPS     The water should not be boiling, but more than simmering so that the movement  in the water can be seen     Use the freshest egg you can find Never season the water with salt because this will cause the white of the eggs to break up and go wispy. Hard Boiled Eggs - These will easily reach internal  temperatures of 100 degrees F when they are done. Hasselback Potatoes My husband usually cooks on Sundays.  On one of those Sundays, he took  ham out.  I said "You can make the Hasselback Potatoes."  He found the recipe on Facebook the  night before and I printed it off.  Well, we ended up doing it together. In the article the recipe was from, it said to place the potato on a serving spoon and cut until you hit the spoon.

We didn't have fresh herbs but, we used salt, pepper, Italian seasoning, and taco blend cheese.  My husband then added sour cream to his after they came out of the oven.
The article also said you could add your extras during the second part of the baking time during the last 5-10 minutes.  I, unfortunately, didn't see this the part about adding the extras in the last 5-10 minutes.  The  shredded cheese was done just a little too much after being put on in the last 40 minutes.   We also ended up having to bake them 10 minutes longer.  Be sure to adjust cooking time according to size of potatoes.
Before we get to the recipe, let me tell you about Hasselback Potatoes.  They originated in Sweden and are that countries version of a baked potato. Also known as the  Accordion Potato.  This potato dish was first introduced in the 1940s, Hasselbacken in Stockholm, Sweden.  
Now, for the recipe as we found at http://www.thekitchn.com/:
Ingredients
4 large potatoes, Yukon Gold, Russet, or Red Bliss
4 tablespoons melted butter, olive oil, duck fat, bacon fat, coconut oil, or a mix
Salt
Pepper
Optional extras: minced fresh herbs, spices, grated cheese, bread crumbs, panko crumbs
Instructions
Heat the oven to 425°F with a rack in the lower-middle position.
Wash and dry the potatoes: Scrub the potatoes clean and pat them dry. You can also  peel the potatoes.
Cut slits in the potatoes, leaving the bottom intact: Cut slits into the potato, stopping just before you cut through so that the slices stay connected at the bottom of the potato. Space the slices 1/8-inch to 1/4-inch apart. You can rest the potato in a large serving spoon and use that as a guide for when to stop slicing — slice straight down and when your knife hits the edge of the spoon, stop slicing.
Brush the potatoes with half the fat: Arrange the potatoes in a baking dish. Brush the potatoes all over with butter or other fat, including the bottoms.
Sprinkle with salt and pepper: Sprinkle the potatoes generously with salt and pepper.
Bake 30 minutes, then brush with butter: Bake the potatoes for 30 minutes. At this point, the layers will start separating. Remove the pan from the oven and brush the potatoes again with fat — you can nudge the layers apart if they're still sticking together. Make sure some of the fat drips down into the space between the slices.
Bake another 30 to 40 minutes: Bake for another 30 to 40 minutes, until the potatoes are crispy on the edges and easily pieced in the middles with a paring knife. If you're adding any extras, stuff those into the slits and sprinkle over the top 5 to 10 minutes before the end of cooking. (Total baking time is 60 to 70 minutes for average potatoes; if your potatoes are on the small side or are larger, adjust cooking time accordingly.)
