This huuuuuge book by Tom Stevenson and National Geographic is now my new favorite reference book. I'm not even exaggerating a little bit here. I plan to grab this thing first when I need to look something up. And it's not just because I just want an excuse to smell it, because my goodness it does have a GREAT "new book smell" to it. The whole thing is well written, loaded with great information, and has easy to read maps. It looks like not one subregion is left untouched, and it's done in such a way that you feel like you aren't being overloaded with information. Even with all those things, being a history nerd my favorite section is the Chronology of wine. Ten pages of a straight-up timeline focusing on important events in wine from all over the world. I still haven't sat down and just read the whole chronology through, but I intend to and can't wait. This book is awesome, man. It's going to claim the spot for my go-to reference book by my desk for awhile. Go get it, wine geeks! Poor pairings
In the name of all that is holy, please stop serving big bold red wines such as Cabernet with dishes with shellfish, such as Blue Crab.  Great wine pairings exist when both ingredients elevate each other.

“Regardless of the true definition, if any of the previous soil types also include a good number of rocks or stones then it has the benefit of extra soil drainage and heat retention. Take a bunch of clay and water it down and it just absorbs all that water. Do the same thing but with rocks in the clay and the water will use the sides of rocks and the openings they make to drain better. Let it sit out in the sun and the rocks on the surface will suck in solar heat and blast it back up to the vines, warming them nice and cozily. Also, with more space in the soil being taken up by big clunky things, the less nutrients are in the land. Blame It On The Pyrazine!

I may have mentioned this already, but I have a hard time with Cabernet Sauvignons. As a California wine lover, who loves visiting Napa, this can be a bit frustrating. Even in blends, when it's not the dominate grape, I can easily detect its presence.
The reason? I'm not a fan of green bell peppers, and whenever that flavor is present, it leaves behind a terrible bitter taste. No matter how lush the fruit and other flavors that may waft from the glass, just a tiny taste turns the entire experience sour for me. 
Fortunately, there have been a few exceptions. I recently had a glass of Stag's Leap Hands of Time Napa Valley Red Blend, which I gladly accepted a second glass of; and I've been able to tolerate some Cabernets when paired well with food.
But it turns out, there's a name for this flavor -- and a reason it's detected in certain wines. More importantly, I may not be the only one who's sensitive to it (see this 2010 blog post on the subject). It's a chemical compound called Pyrazine.
The chemical often appears in Sauvignon Blancs, too. But I'm much more likely to tolerate it there. In fact, I'll actively order SBs and love the crisp mix of high acidity with citrus flavors and some light herbaceousness.  Given my choice, I've always enjoyed California SBs to those from New Zealand. And wouldn't you know it: Pyrazine is more apparent in Sauvignon Blancs from Marlborough than those from California (So why can't winemakers do the same with their Cabernets?).
I'm guessing there are probably additional chemical reactions that happen in red wine, which make it less approachable for me. I hope to research this further and learn more about it. For now, however, I'm glad I can put a name to it.
