Good morning ❤️What are you cooking tonight👇👇here is an idea Chicken mixed with covo This dish is normally cooked with beef and it’s very popular in Zimbabwe named haifiridzi which simply mean beef mixed with green veggies, here is my version with chicken. #tendyculinaryfocus *What is needed* 7-8 pieces clean Chicken cuts One Bundle of Covo washed & chopped One big tomato chopped One onion chopped Salt to taste ¼ cup Oil less or more 500ml water Saucepan Wooden spoon *How it is done* In a saucepan add chicken and water then boil on the stove for about 10minutes on medium-high heat, if they is water(broth) left drain don’t discard leave if for later. In the same saucepan, heat oil add chicken pieces Brown on each side for about 5minutes Then add onions, tomatoes and cook until soft lastly add vegetables&broth and season with salt simmer on low heat for about 5-10minutes or until done This recipe serves 4. Let's bake❤️⬇️ Lemon Sponge cake with chocolate frosting📝 ⬇️ Author: Tendy Culinary Focus What is needed 2cups selfraising flour 125g butter/margarine 1/2- 3/4 cup sugar(or more) 3 large eggs Zest and Juice of a lemon 1cup milk/water . Lemon crud/filling of choice 1-2 cups chocolate fresh cream How its done. Grease and line 2×7inch tins Preheat oven to 180degrees Sift flour in a bowl and set aside In another bowl beat the butter until softened. Add the sugar and beat until pale and fluffy Add eggs one at a time beating well after each addition. Add half of the flour and mix well(do not over beat) Add all of the milk and mix well Add the rest of the flour, zest and juice of the lemon. -Bake for 20-30minutes Let it cool down a bit in the tin, then transfer onto a cooling rack to cool completely. -Then for frosting whip 1cup of chocolate fresh cream until firm. - Then take your cake spread lemon curb /filling then frost cream between layers using a spatula or palette knife do the same on the outside of the cake. -Decorate the top with anything desired e.g chocolates, fruits e.t.c Enjoy😘. . . . . . #tendyculinaryfocus #cakesrecipes #zimbloggersnetwork #zimbocakes #zimboBakers (at Harare, Zimbabwe) https://www.instagram.com/p/CReGQyjje3T/?utm_medium=tumblr

Happy Monday:Maswera sei, Litshonile, Kunjhani dinner is served peanut butter rice, beef stew and dried covo pleasant evening. ■Beef Stew recipe📝 Very popular in most households in Zimbabwe mainly served with Sadza or rice Author: Tendy Culinary Focus Servings : from 5 Prep time:10minutes Cooking time: 20minutes Total: 30minutes ●What is needed 500g Beef of choice 1 teaspoon salt or more 2 teaspoon of any thickener you have flour, mealie meal, royco etc. I large pot 1 large onion chopped, 1 tomato finely diced Fresh pepper and garlic Icup( 250ml) water+ 1/2cup water ●How its done Cut beef in cubes, then place in your pot and add 1 cup of water& bring to a boil for about 10-20 minutes depending with the type of beef After the water has finished, fry your beef until well done or golden brown. Then add your onions, garlic and tomatoes mix everything then cook for 5 minutes on medium-high heat to allow the tomatoes, garlic & onions to cook through Now add thickener, pepper together with 1/2cup water &lastly simmer for 5-10minutes until the soup is no longer runny and its thick. Happy Sunday. My all time favorites breakfast with childhood memories Feti kuku🇿🇼(Fat cooks). Check easy recipe of my Feti Kuku. Mafeti Kuku(Fat cooks) Servings: 12 Prep time: 5 mins Cook time:10 mins Total: 15- 20mins *What is needed * 2cups sifted self raising flour ⬆️If using plain flour/cake flour add(1 teaspoon baking powder+pinch of salt) 1 and 1/2 cup water 2 tablespoons sugar (optional) Oil as needed (use 1/2 tablespoons each as you go) *How it is done* Heat oil in a pan Mix flour, sugar and water a running consistency is good Then use a tablespoon at a time to take the batter and cook for 1-2 minutes on each side. Add oil in the pan as you go repeat the process until you finish all the batter and your fat cooks are cooked. These fat cooks won't be greased try it and thank me later Serve and enjoy. Happy Monday❤️ *Beef liver with onions* *What is needed* Beef liver I big chopped onion 2 big garlic cloves minced 1cup milk (dairy or non dairy) 2 tablespoons butter Spices of choice a teaspoon each 1 teaspoon brown sugar 1 teaspoon flour 1/2 teaspoon chillie sauce 1/4 teaspoon fresh chillies 1/8cup water or more Salt to taste *How it is done* Cut clean liver in pieces Soak liver in milk for at least 30-60minutes, (soaking helps to remove the strong smell, softens flavour, tenderises the liver neutralizes any residual urine) After soaking heat butter in a dip pan, pat dry your liver Fry liver in butter for 5-10 minutes on medium high heat add flour then your spices turning each side, add your chillies, sugar,lastly add onions and garlic and cook for 2 minutes. Good afternoon: Star this recipe or write it down for future purposes sharing is caring❤️⬇️ *Chocolate cake recipe* #tendyculinaryfocus *What is needed*⬇️ 2 1/2 cups plain flour 1/4cup cocoa powder 1 tsp baking powder 1/4 tsp baking soda 4 large eggs 1 and 1/2 cup brown sugar 1 tsp chocolate essence/vanilla essence 1/2cup oil 1/2 cup milk 1cup hot coffee/ 1 cup boiling water 1tsp vinegar *How it is done*⬇️ Preheat oven to 180degrees,line and grease 8inch × 2 round pans Sift flour, cocoa powder, baking soda, baking powder and lastly add sugar Mix the wet ingridents together except for the hot coffee Add the dry ingredients in the wet ingredients mix together then add the hot coffee/water last and mix. Recipes📝 as promised➡️ Sadza Remhunga, Nyawuthi( Millet meal)📝 How it is done⬇️ Take your Kango pot , put Mhunga Add just enough cold water to make a paste then add the boiling water and stir whilst on the stove top and bring it to the boil. If it seems too thick you may add more boiling water, mhunga thickens quickly. If it seems too thin, make a paste again in a separate small bowl then pour it into the pot.As soon as it starts boiling, close pot, reduce heat and let it simmer for about 20-25minutes. After 25 minutes, add Mhunga a bit at a time, mixing well after each addition. In shona we call this kumona sadza. Close the pot and let it simmer again (kushinyira) for about 10 minutes and your sadza is ready. N.B For a perfect Mhunga let it simmer on a medium to high heat with lid closed Mix (kumona) for 100times try this method your sadza will be delicious its a tip l got on one of the cooking whatsapp groups l used to be. Mowa in Shona🇿🇼 then Calloloo in English This is how l cooked my Mowa see recipe below⬇️. Mufushwa weMowa(Dried Calloloo) How it is done⬇️ Take your Mowa put in your Kango Pot with water then boil for 5-10minutes on medium to high heat. After 10minutes rinse under running water to remove any sand or tiny stones and then add more water and simmer again for another 5minutes after the water is finished I rinse again one more last time to make sure they are no sand remaining, add oil and salt and fry for 5 minutes then add onion and tomatoes and simmer for 2minutes. Serve and enjoy. 😊. *Chicken Gizzards Stew/Zvikangamwa-hama*📝 Try these Scrumptious gizzards cooked the traditional Zimbabwean way *What is needed*⬇️ Cleaned gizzards Salt Royco Onions and tomatoes Cooking oil *How it's done*⬇️ In your Black Kango pot add water and gizzards parboil gizzards on the stove for 5-10minutes Drain and set aside heat oil in the same pot Fry gizzards until golden brown season with salt then add onions sauté until soft add tomatoes until cooked lastly Mix one tablespoon royco with 1cup of water and simmer for about 5minutes. Happy Holidays I prepared this meal for pure Vegans here is how l cooked it check the recipe➡️ Vegan 2 course meal check recipe below⬇️ Vegan Mashed Potatoes Creamy, tasty, garlic flavour, delicious. "What is needed" 4 large potatoes 2 tbs Vegan butter 1/4 cup Coconut cream 1/8cup water 4 cloves Fresh Garlic Salt and pepper 2 tsp Turmeric powder *How it is done* Peel potatoes, wash and cut into cubes Bring a pot of water to boil on the stove on high heat. Boil for 5-10minutes or until  the potatoes are well done, add the garlic, turmeric powder , butter, salt&pepper mash them using a fork or a masher after that add your coconut cream and water let it simmer for 2 minutes on the stove, on low heat it's done isn't that easy😋. *Vegan Mushroom Stroganoff* Meaty, full of flavor, tasty best vegan stroganoff. *What is needed* 750g cleaned mushrooms l used oysters 2large carrots Bell pepper Fresh Garlic 250ml Plant based milk Corn starch Salt and pepper Dried herb spices Vegetable oil 1/2cup Vegetable stock or water *How it is done * Heat oil Sauté /Fry onions for 3 minutes on high heat Add mushrooms cook until wilted then add carrots, bell peppers, garlic,spices, salt&pepper corn starch mix together. Lastly add your milk and vegetable stock/water and simmer for 5minutes. Serve and enjoy. *Vegetable tasty salad* Lettuce, bell peppers, cherry tomatoes, red onions, carrots and cucumber wash, drain, cut and mix everything together.
