The ultimate classic soup

Hellooooo my dear little friends! I hope you’re doing great!
If you’ve been following this blog for a while you might remember the post I did about my go to breakfast and biggest obsession: the choc-banana breakfast custard (click here to see that post) 🙏🏻.
So basically after having the same breakfast for days I realized I never got bored of it (and trust me I had A LOT of them) and it did an amazing job at keeping me full throughout the morning so I decided to try a bunch of variations of it and out of them all those were my two favourites (after the choc-banana one obviously. Nothing beats choc banana). And those are Blueberry/cinnamon and apple pie flavoured custards! 😋
So I’m back today to share those two yummy recipes that are going to light up your breakfasts! Oh and did I mention that both of them were 100% healthy, vegan, gluten free, dairy free and refined sugar free! It’s super fricking yummy AND good for you which is just straight perfection I guess 😉
Without further do lets jump into this! (Both recipe will serve one)
Lets’s start with the applepie one!
To realise this warming and delicious apple pie flavoured custard you’ll need to gather the following ingredients:
50 g oat flour (just process 50g of rolled oats until they turn into a flour if you can’t find pre made oat flour)
200 ml unsweetened almond milk
50 g soy yoghurt
1 soft apple (Boskoop, Mcintosh and cortland apples work great for this recipe and really any baking apple will do just don’t use firm fleshed ones they won’t cook as easily)
1 tsp raw organic honey (or agave syrup depending on how strict you are with your vegan diet 😊)
1/2 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp nutmeg
1/4 tsp ground cloves
lemon juice
Once you’ve gathered these ingredients on your counter you can finally put on your most brautiful apron for the occasion and follow the instructions!:
If you couldn’t get a hand on pre-made oat flour just process your oats in a food processor until they turn into a flour. It won’t take more than a few seconds and it will work just as fine.
Add the spices into the blender and give it one more quick pulse just to combine the dry ingredients then set them aside.
Peel the apple and cut in into small cubes (the smaller the cubes are the quicker it will cook so chop it up boy/girl!) then put it all into a microwave-safe bowl along with a squeeze of lemon juice.
Put the apple mixture into the microwave for about one and a half to two minutes. If the apple chunks aren’t soft and super easy to mash then put it back into the microwave checking it every 30 seconds.
Mash the apple cubes until they turn into a smooth apple sauce with almost no chunks in it.
Add the yoghurt and honey to the apple sauce and combine well.
Combine the dry and the wet mixture together in a microwave safe bowl then slowly add in the almond milk.
Once everything is well combined and there’s no more lumps in the batter, put it in the microwave for 1 minute then give it a mix and put it back in for one more minute and repeat it until you’ve got your desired concistency. It usually takes 2 minutes and 30 seconds for mine to be perfect 😊
And tadahhh! Your super healthy break fast is ready!
  Now for the second recipe we’re making a blueberry/cinnamon custard!
To make this super comforting bowl of happiness you’ll proceed in a really similar way we did for the choc-banana one except you’ll switch the cacao powder for some frozen blueberries ✨
So for the ingredients you’ll need:
50 g of oat flour
50 g soy yoghurt
1 small ripe banana
150 ml almond milk
100 g frozen blueberries
1 tsp honey
1/2 tsp cinnamon
1 tsp chia seeds (optional)
And once everything’s gathered on your counter and you’ve protected your clothes from food stains (I’ll let you guess what the protection is) follow the instructions!:
Combine the oat flour with the cinnamon and chia seeds.
Warm up the blueberries into the microwave for about 1 1/2 minute.
Mash the banana until smooth then add in the honey, yoghurt and blueberries and combine well.
Combine the dry and the wet mixture in a microwave safe bowl then slowly add in the almond milk until you’re left with a smooth batter with no big lumps in it.
Like in the previous recipe, throw it in the microwave for one minute then stir well and put it back for one more minute then check the consistency and repeat this until you achieve the perfect custard consistency! (For me it usually takes about 2 1/2 minute for this one as well)
