Oaty banana and blueberry muffins for breakfasts this week! Had to taste-test this one of course 😇
Recipe if interested:
2-4 bananas
1 punnet blueberries
4 eggs (or apple sauce or chia egg if vegan)
2 cups oats
1 cup plain flour
1 cup milk of choice (I prefer plant milks)
1 tsp baking powder
Pinch salt
Honey (as much as you like)
Cinammon
Nutmeg
Bake at 175C until golden and bursting with juice. 🤤

🍝VEGAN LOW CAL FETTUCINE ALFREDO🌱

1 package shiritaki angel hair pasta (20)
1 cup frozen broccoli (31)
2 tbsp unsweetened cashew milk (3)
¼ cup Daiya mozzarella style shreds (90)
¼ tsp Salt to taste (0)
¼ tsp Pepper (1)
¼ tsp garlic powder (2)
¼ tsp oregano (1)
1. In a pot, put some water to boil over the stove.
2. While waiting for the water to boil, microwave the broccoli 4-5 minutes per package instructions.
3. Once the water is boiling, Place shirataki in a strainer and drain the excess liquid. Rinse them thoroughly until the odor is gone, and place in the pot. Let it cook 1-2 minutes per package instructions.
4. In a pan over medium heat, place the cheese style shreds. Add the cashew milk and spices. Stir mixture occasionally and let them cook until they melt.
5. Add the shirataki and broccoli into the pan and stir them into the sauce.
