After a 5 Month Break… I’m back With a Huge Success Story. I MANIFESTED REVERSING A REJECTION LETTER, TO ATTENDING MY DREAM SCHOOL IN A WEEK!
im back and im more motivated then ever. As you guys may know, my last post was 5 months ago as for I did NOT say I was taking a break. Welllll, I HAVE ONE OF MY BIGGEST SUCCESS STORIES YET. Before I left tumblr, I was super into “the void” and wanting to get in. Well no. Lol, Sammy Ingram snapped me right out of that. What I didn’t share was that I didn’t get into my dream school I been wanting to go for 3 years. Me and my sister was suppose to finally be going to the same school, walking on the same campus. Well let’s just say things didn’t go as planned. I didn’t get in, and when I saw my rejection letter my heart broke into a million pieces. I don’t remember how long I cried for. Until I remembered who I AM. I got myself together, and affirmed like a maniac. I affirmed through tears, hurt, through watching and hearing my friends get into their dream schools. I was depressed. I cried in school, at home, randomly throughout the day I was a mess. The 3D was slapped right in my face and even though I saw ZERO MOVEMENT. I had to practice what I preached right? I affirmed through the circumstances because I knew they weren’t permanent. Yes, and though I was sad, mad, it made me want to affirm more. I did 4 10 minute sessions everyday, with one 15 minute session. As well as robotically affirming throughout the day. I couldn’t stand me not going to the same school as my sister, especially since I HATED THE ONE I CURRENTLY WAS AT. If I didn’t get accepted I would have to return back which made me want to persist even more. I deserved this opportunity.
Of course, as the 3D is a mirror it has no choice to reflect your dominant beliefs. One day as I was in the going back home. My mom randomly said “I have exciting news for you.” Of course I asked what it was excitedly. Mind you I was still affirming even when I got in the car. She told me, that the dean of the school I wanted to get into said I still had a chance to get in, and what I need to do to get in. I needed another recommendation letter. WHATTTT? Now I affirmed that my recommendation letter was sooo good, and that my teacher KISSED MY FUCKING ASS in the recommendation letter. Literally this was my affirmations. “ I got into my dream school!” “Whatever teacher writes my recommendation letter kissed my ass, talking about how im such a good student!” Less then a week later my FINAL ACCEPTANCE LETTER COMES IN?? Now I don’t know why I didn’t get in the first time, nor do I care. THE HOW IS NOT OUR JOB TO WORRY ABOUT. WE HAVE ONE JOB. AFFIRM.

Here’s the acceptance letter, as for I manifested the rejection letter being turned into an acceptance letter! I did cross out, private information! By doing this and staying consistent, I manifested in 2 days. This just shows to stay consistent in your new assumption and stick with the new story! Your imagination is your only limit.

Easy wake up in the Void challenge (No BS version)

Yes, you can wake up in the Void without 3-hour meditations or robotic chanting for eternity…
But let’s be real: if you want results with minimal effort, you still need clarity, consistency, and release.
Here’s a simple challenge based on what worked in my second test group:
1. Holotropic breathing (20–30 min)
Put on headphones, use a dark room or an eye mask, and play deep ambient music (it's important!).

This YouTube channel makes really good videos for doing holotropic breathwork.
Focus your breath in a powerful, fast rhythm (look up the method if you're new it's on my blog and i'm linking to you the documents I sent to my group).
You don't need to read all of this, focus mainly on the first and some parts of the third document.
Before starting:
-> “I release what no longer serves me. I allow myself to wake up in the Void.”
2. Short guided meditation (optional but powerful)
Even 10–15 min is enough if you don't want “ass long meditations.”
Think of it like priming your brain, skipping this step won’t kill your chances, but it might lower them. You might even enter the void at this moment or maybe even during the breathwork.

3. Wake-up tricks for the Void
Use micro-awakenings.
When you naturally wake up in the middle of the night, don’t move. Repeat:
> “I’m already in the Void.” or “This is the Void.”
Affirm softly, like a truth,not a wish. And if you don't feel symptoms after a few minutes fall asleep again and wait the next micro awakening maybe you'll be in the void.
Hypnagogic edge = golden hour.
As you fall asleep and feel that fuzzy, floating state, drop affirmations like:
-> “I will wake up in the Void.” / “This is my reality now.”
It enters your mind deeper than during full consciousness.
Use the Zeigarnik effect.
Start your meditation but don’t finish it. Let your brain feel like it left something open.
Your mind loves to resolve unfinished things = more subconscious focus.

Cardiac Coherence (5-5-5)
Breathe in 5s, hold 5s, exhale 5s. Do it for a few minutes (or second if you're in a a micro awakening) to regulate your nervous system. A calm system = easier enter into the void.
Reality check:
Yes, some people shift or wake up in the Void just by deciding.
But for most, your resistance, cluttered nervous system, or overthinking will block it ,that’s why even 10–20 min of prep goes a long way.

Efficiency when manifesting 🤍 & epiphanies:
🧚🏻I don’t care but Sammy is always right so first of all the fastest way to impress the subconscious is to repeat one short affirmation over and over again - yet with some subjects I do prefer 2 because they imply more!
🧚🏻sooo daydreaming or thinking more favorable thoughts regarding the subjects are definetely very very good to keep a good mental diat and instead of spiraling or bad thoughts that’s definitely very very good - yet to be the absolute best manifestor - that is inefficient- the best choice is to always think in affirmations over and over again
🧚🏻other obvious thing - affirmations need to be affirmed in sections or when thinking about the subject and not 10 different subjects at once
🧚🏻a focused fool will outperform a distracted genius all the time
🧚🏻so when doing SATS 10 minute sessions - well I’m not quite sure if the amount of reps are that important in these sessions yet it is very important to keep it at the 1-2 affirmations and to think these very clearly repetively and no other thoughts in between that needs to be practiced and to be up to 60-120min maybe one day, I think for me it is helpful to really count the affirmations in these sessions - focus is so so important
🧚🏻though I call it focused robotic affirmations while walking, cleaning are also very important because that’s when the mind would wander
🧚🏻and last but not least even when doing tasks (not dangerous stuff where you need to be absolutely focused) but stuff with half focus affirming is also important to keep the mind and the good thoughts
🧚🏻the combination of these all is the perfect combination but each is important and SATS needs to be practiced as well, and since we think all day everyday learning how to use every minute is also very important
✨one subject all day everyday would be the most effective yet that made me too attached in the past (nothing bad with being too attached but it needs better willpower and of course I’m attached to my desires overall) - but me personally I have the perfect balance right now and I never ever ever change my affirmations
✨from now on I will count for every subject and I keep a perfect balance between 10minute method and robotic for each! subject
✨before bed visualizing and affirming with intensity is super effective
✨other things that help with efficiency are abilities and umbrella affirmations since they help cover more stuff, and help with mental diat
🤍the weirdest thing overall (yes though affirmations make me feel better, but they are powerful even when feeling bad if repeated enough) so in contrast if I’m in a good mood but affirm less intense and less repetitions and it makes me feel good sooner it may be still less effective - though the goal is not to affirm until feeling better it’s to affirm affirm affirm for it to impress - the feeling better is a perfect side effect
🤍all those lessons are very weird for me to realize because I was convinced daydreaming or rampaging manifest just fine - yet speaking of becoming a master manifestor it is not efficient but like I said everything better than spiraling
🤍another thing is subliminals and parrot app may be a cute thing it’s not efficient at all and sorry to say but for people that may be lazy
🚨also improvements for me I need to work on my focus! (Though if it is a busy day „sloppy“ affirming is still better than no affirming or if tired, but when there is full potential the focus needs to be perfect)

I used to babysit a cat who had biting issues and was no longer a kitten (she was a year old? Somewhere around there). None of the normal tips worked — spray bottle, “ow!” + stop playing, remove whatever might be overstimulating her … nope. Cats don’t understand that shit.
You know what cats understand?
Time-out.
Seriously. Cat acts up? Put them in the closest room and shut the door. Then walk away for about 5-10minutes (however long it takes for them to settle down).
Apparently cats don’t really understand being punished with things like spray bottles. But they do understand no longer getting to socialize as a consequence of their behavior.
Anyways don’t play with your kittens/cats with your hands. And if you adopted a cat with biting issues, try the time-out method.

hii ayukas!! I've got a question, but it's more serious than normal. What should I do if I'm burnt out? cause I've been doing a lot lately, and today is the first day I actually kinda slowed down, but I'm doing school work and I just don't have the energy to continue working, and I have so much stuff to do. Anyway, enough of my yapping, how have you been?

hii my tulip!!!! contrary to popular belief im actually a very serious person and i get burnt out alooooot so uve come to the right person (i hope) of course its okay to slow down after having worked so much the past few days, maybe take some small breaks in between while working! 5-10minute breaks after working for 30-45 minutes, i think this is also called the pomodoro method!!! and dont worry i always love talking to u and hearing u yap so please come to me whenever :3 ive been okay!!! started school this week so ive been really tired but seeing some of my classmates after months of break was fun hehe

Pesto Pasta Salad
Preparation time: 10minutes - 2 hours Cooking time: 5-15 minutes Makes/Serves: 6-20 people
Ingredients
500g pasta of choice
1 red onion, quartered and sliced
300g kalamata olives sliced
60g baby rocket (arugula)
Pesto
1 cup chives
1/2 cup fresh basil
1/2 cup olive oil
35g sunflower seeds & pepita mix
25g nutritional yeast
lemon juice to taste
Optional Extras
250g chicken breast, shredded
1 cup of cherry tomatoes, quartered
1-2 avocados, diced.
1/4 cup pine nuts
Method
Put a pot of water on to boil and cook pasta according to packet directions until al dente
Combine all pesto ingredients together in a blender or food processor and pulse until well combined. You may need to stop and gently scrape the sides of the container & stir the ingredients with a spatula to ensure all ingredients are well combined. Be sure not to over blend.
Once the pasta has been cooked, drain and return to pot. Before you add the pesto, you want the pasta to be cool. Here you can either refrigerate the pasta in a container with a little bit of water until cool, or if you're on a time crunch, keep running the pasta under cold water, tossing, until completely cool. You can also 'bathe' the cooked pasta in the pot with ice and water. Ensure the pasta is well drained before adding in pesto.
Stir in pesto, ensuring the pasta is well covered.
Add in remaining ingredients & serve or refrigerate for up to 3 days.
Authors Note
This recipe was born from being invited to a potluck dinner party that had a combined allergy list as long as my arm, but we made it work. The main point of this was to have something substantial, and fulfilling, while also being garlic free, dairy free, meat free, gluten free, nut free, and tomato free. Adding these optional ingredients negates these dietary requirements however it all depends on what the cook does or doesn't want on the day.
I'm not back on this blog in an official capacity but I'm going to try to be more engaged with keeping my recipes up to date here. The main reason I'm posting this here is because I just kept losing the slip of paper I had scribbled the recipe down on :D

So I usually just do this type of thing on twitter but I thought I might as well see who’s interested on #writeblr as well!
We’re on Day 2 of this 30 day writing sprint challenge. I’m doing this at 8pm UTC+10 (that’s Melbourne, Australia time) Sunday - Thursday and at 11pm on Friday and Saturday nights.
I’m following the pomodoro method for this one so we start at 8pm finish our first sprint at 8:25pm and then take a 10minute break before starting a second sprint at 8:35pm finishing everything up at 9pm.
Ideal for anyone else who’s writing muscle has gotten weak over a period of no-writing and wants to built it back up again!
Reminders will go out in the hour leading up to the sprint and I’ll let you all know when to stop and start.

Stop making imaginary scenarios in your head, or listening to music, watching TV. Instead affirm. Discipline gets you what you want. Turn off that music, drop the remote. Whenever you’re free you should be RAMPAGING YOUR AFFIRMATIONS. This is where we stop being lazy. You don’t need anymore motivation, stop stalling and just start. Affirm. It’s that easy. IP Rating is the abbreviation of Ingress Protection or International Protection rating, it is worldwide known standard to define the protection level of electrical enclosures against outside intrusion. The intrusion includes solid objects like body, tools, dirt, dust and Liquids.
This IP Code standard was published by IEC (International Electro Technical Commission) in year 2012, based on international stand of EN60529 (British BS EN60529:1992). This standard already well acceptable in most European countries.
What is IP rating for lights? Let’s start from here:
An IP Rating uses a two digit system to explain:

The first digit meaning protection level of electrical enclosures against solid objects, like tools fingers or dust.
The second digit meaning protection level of electrical enclosures against Liquids.
What does ip65 mean in lighting? For most lighting, the most popular IP Rating is: IP20, IP44, IP65 and IP68.

IP 1X Test Method:
Diameter 50mm solid objects should not ingress inside enclosures
Back of the hand should not touch inside electricity part or rotate part of enclosures
Test Method: 50N, Means use 50N strength should not broke its IP Protection rating.

IP 2X Test Method:
Diameter 12.5mm solid objects should not ingress inside of enclosures
Fingers or something like fingers, length less than 80mm, diameter less than 12mm, should not touch inside electricity part or rotate part of enclosures
Test Method: 30N, Means use 30N strength should not broke its IP Protection rating.

IP 3X Test Method:
Diameter and thickness more than 2.5mm solid objects should not ingress inside of enclosures
Test Method: 3N, Means use 3N strength should not broke its IP Protection rating.

IP 4X Test Method:
Diameter and thickness more than 1mm solid objects should not ingress inside of enclosures
Test Method: 1N, Means use 1N strength should not broke its IP Protection rating.

IP 5X Test Method:
Dust proof, diameter 1mm metal wire should not ingress inside of enclosures, but ingress dust should not caused enclosures keep safe work and running.

IP 6X Test Method:
Dust proof, diameter 1mm metal wire should not ingress inside of enclosures; also can 100% avoid dust ingress enclosures.

IP X1 Test Method:
Vertical drip should not cause any bad affect on enclosures.
Test Method: 1mm water flow per minute, test 10 minutes.

IP X2 Test Method:
Put vertical face of enclosures at 15°, Vertical drip should not cause any bad affect on enclosures.
Test Method: 3mm water flow per minute, test 4 position,each position test 2.5 minutes.

IP X3 Test Method:
Put vertical face of enclosures at 60°, Water falling as a spray at any angle up to 60° should not cause any bad affect on enclosures.
Test Method: Water falling from vertical face to two sides, less than 60°, 0.07L/Minute, and test 10minutes.

IP X4 Test Method:
Water splashing against the enclosure from any direction shall have no harmful effect.
Test Method: Waters splashing from any direction of enclosures, each sprinkler nozzle control water flow at 0.07L/Minute, and test 10minutes.

IP X5 Test Method:
Water projected by a nozzle (6.3mm) against enclosure from any direction shall have no harmful effects.
Test Method: Waters splashing from any direction of enclosures, each sprinkler nozzle (6.3mm) control water flow at 12.5L/Minute, distance 2.5-3m, and test 3 minutes.

IP X6 Test Method:
Water projected in powerful jets (12.5mm nozzle) against the enclosure from any direction shall have no harmful effects.
Test Method: Waters splashing from any direction of enclosures, each powerful nozzle (12.5mm) control water flow at 100L/Minute, distance 2.5-3m, and test 3 minutes.

IP X7 Test Method:
Ingress of water in harmful quantity shall not be possible when the enclosure is immersed in water under defined conditions of pressure and time (up to 1 m of submersion).

Prep day
I decided to stop trying to study today: It was not working I was too distracted and almost intentionally daydreaming/watching random YouTube/reading random AO3 to avoid studying.
Actually I started reading AO3/watching YouTube to try and cut down daydreaming - and figured this won’t work cuz I’m just switching between the two not actually doing anything productive.
Tomorrow’s plan:
Phone alarm: @5:30AM - put my phone away from bed with endless snooze so I have to get up to get it
Promised myself to go straight to bathroom - not back to bed where I will probably daydream again - and no morning music (daydream trigger)
I need to do something to prevent daydreaming or distraction before I start studying at 6:30AM and not YouTube/AO3 - something enjoyable but grounding in reality (can’t think of anything now, I’ll see tomorrow)
I’ll do Online live study group on discord (or other sites, whatever is available with real people at 6AM LMAO) starting 6:30AM WITH camera turned ON the whole day except breaks - so I’m not too comfortable (=start daydreaming): I think this will be one of the most effective methods, maybe I can start my own study room with you guys at some point, idk, we’ll see.
If all goes well - lunch break at 12:30 - I’ll try to push thru and not take breaks till then (the pomodoro technique DOES NOT WORK for me, 10minute breaks every hour are too distracting and are never actually just 10minutes)
I might nap but since lunch is free hour to do whatever I’ll probably be on phone or daydreaming, unless I’m with friends, but usually I try to escape friends to go back to room - so I now Promise that my lunch break will be 1-2 hours max (maybe I’ll try to stop distractions 15minutes before? We’ll see if that works, I’ll let you know)
Dinner break at 7:30 - I’ll write to you guys then (I’ll try to make it 1 hour - 1hr 30minutes - see if cutting off distractions 15minutes before I have to restart studying works)
Study for 2 more hours then call it a day - hopefully - these last 2 hours are easy reviews (not learning new concepts or solving questions - I’ll be talking to myself the whole time out loud - that I found works in stopping daydreaming if I can commit myself to it)

Homecookings [Apr. ed]
Hi friends~
Due to the home-cation during the 1st little bit of April, I actually had time to do more ‘extensive’ cooking/posts so the content in this post will be quite limited...
But here we go!

Good ol’ spaghetti + PC brand flatbread (the chicken one that I didn’t enjoy......)

This was an interesting snack. Have you tried shrimp crackers by Nongshim brand? This had similar vibes to that but thinner chips & a diff ‘taste’ bcos it’s fish-flavoured haha I got a bag for myself, & also gave a bag to the nieces so try. They did not like this! I thought it was okay; not my favourite but I finished it all anyway. It was my Penthouse snack :P

I don’t know why I thought this package of zucchinis was cute. ..

I have deonjang (Korean soy bean paste) soup with the zucchini, tofu, imitation lobster meat, & underneath that, there was also some napa cabbage. To add some extra flavour, I added gochu powder & some salted shrimp sauce.

Another zucchini in soup lunch.. . no, I’m not on a diet haha I actually had more of this soup in my pot; I just scooped out this much for the photo. For this soup, I had zucchini, tofu, imitation lobster meat as well as fish cake. I personally liked this one better than the previous. Some ppl may not like it bcos of the added fish cakes, making the soup “fishy” but I am a huge fan of the fish cakes! Paired it with some radish & injeolmi!

[where my injeolmi came from] This was from the small bakery section at the U of A location of Hmart. I haven’t had injeolmi for such a longgggg time.

Breakfast after a long stretch >.< I needed to reward myself haha

Jjajang-ddeokbokki. Instead of the traditional spicy version of ddeokbokki, I’ve been making this more often nowadays (aka the black bean sauce version). This has become one of my regular lunches bcos I’ve figured out a way to cook this so that when I microwave it the next day, the rice cakes are still chewy (not soaked/soggy). I have tried bringing the regular spicy ddeokbokki for lunch before & for some reason, it just. .. never worked out the way I wanted it to be. I’ve tried diff brands of rice cakes etc... I’ve experimented with it a handful of times. However, it seems to work with the black bean sauce o_O I’m not sure why. This is the day-off lunch version but basically if I’m making some for work lunch the next day, I actually undercook the rice cakes & save the extra sauce in a separate container. Before I head out to work, I pour the sauce into my rice cake-containing container (to prevent overnight soaking). & while I’m at work, I heat it up like.. . hardcore! For like 3mins... (bcos some microwaves at work are old & not very ‘strong’). The rice cakes are bouncy & while it’s being microwaved, they actually take up some of the liquid/sauce! SUCCESS!!!

Another drama snack~ This was my snack while I was watching the Kdrama “Cheat On Me, If You Can.” Not as good as Penthouse but I was also really into it & finished it in a few days. This snack was interesting- while the flavour was meh, I was actually in love with the shape/texture. It was rotini-shaped, & the texture was puffy!

Beef seasoning~

Yes, more zucchini. .. I legit ate all 3 by myself over the span of 4-5 days haha oh no, my mom used about half in a stir-fry one evening so I guess I ate 2.5 zucchinis. Anyway, I used the above beef seasoning for this soup that consisted of zucchini, napa cabbage, regular green cabbage, minute amount of onion. Yes, it was vegetarian.

Laksa vermicelli noodles. YES MORE ZUCCHINI! I swear this is the last one lol but I needed to use it up bcos prior to cracking open the saran wrap/packaging, it was actually sitting in the fridge for almost a week already so I needed to use it all up like fast! Anywho, I threw away the package of laksa soup base that I used here but it was by the Asian Home Gourmet brand. I used the entire package, diluted with half:half chicken broth & water for my soup. It was delicious! For toppings, I had my zucchini, napa cabbage, baby clams & a variety of fish balls.

This was interesting. I will likely make this again NOT bcos it was particularly “tasty”, but iuno. .. the combo of textures was just great! I had buttered toast, a single layer of yellow radish, mashed up imitation lobster meat (did not add anything to it), & then furikake. It was like crunchy & soft, & just, overall, a burst of diff flavours in one bite!

Korean fried chicken by MEEEEEEE~ I have gotten rid of the double-frying practice bcos it takes too long & too much effort. Now I do the wet-dry batter method, & the outcome is equally as crispy! ^^

If we buy these frozen lasagnas, it’s always the PC brand, but we have this Western Family brand this time.

I used microwave method, & . .. it turned out to be such a big mess =( it become so liquid-y & everything was just. .. melted down. I think it was bcos of the water content, plus the extra ice that dripped onto the pasta. Anyway, flavour was good but nothing crazy! Will be sticking to the PC brand :P

My version of mapo-tofu. I have satay sauce + bulgogi sauce, diced green cabbage, eggplant & tofu! Topped with a gochu powder~ YUM!

Okay, so my vaccine story.. .
1st of all, a little bit of background in regards to my province’s C*vid situation .. . long story short, it’s NOT good. To be fair, I’m in-and-out of tuning in to the daily updates; I look once every few days &. .. yeah, it’s just NOT good! We are hitting record numbers; surpassing the worst numbers in the 2nd wave.. . I don’t get it >.< I’m not sure why the numbers are so high despite ppl are getting vaccinated *shrugs* but I think everyone should go get vaccinated if you are eligible to!
Right now, in this province, there are 2 routes of getting vaccinated: select pharmacies & via provincial health services.
When I was eligible to book (I’m in health care but not front line so I just got the eligibility this month!), I went thru the pharmacy options that were closest to me. Why? Bcos it was convenient by location. I read into it a little more, & realized that I’ll be placed on a general waiting list. I ended up signing myself up for 1 pharmacy, where the location was TBD until they actually confirm my appointment, which they say, could be weeks to months down the line! O_O In any case, I just left it as is bcos there was no way to cancel being on the wait list.
In the meantime, immediately after I did the pharmacy registration, I went on the AHS website. Did the questionnaire & got the ‘final page’, where they gave a date/time option with a 10minute timer running so you have 10 minutes to finalize your booking. Except when I hit “confirm”, the next page said, “this time has been taken”. So I had to go thru the whole process again. And again. I clicked the “confirm” 3 times, & finally got a date/time for my vaccination! YAY!
Went to my vaccination appointment ~10mins before my scheduled time. There was a "greeting” table, where I was required to change into a new (provided) medical mask. Then I was instructed to line up for the sign-in table, where the staff at the desk asked for my 2 pieces of ID. I was also given the vaccination record form. After that, I went into another line to actually enter the vaccination room. At my location, it was a small-ish room with about 10 vaccine administrators. There was a girl who was monitoring the “ppl flow” from the line to the vaccination station. A little more info was given by my administrator, & a final “do you want to get the vaccine today?”. The shot itself was short, & to me, painless. Then everyone had to move to a waiting room, where we had to wait around for 15mins to make sure we don’t get an allergic reaction. This room was the PROBLEM! It was SO small & spaces between chairs was only about a meter! It was stuffy in the mask AND in the room. I could FEEL it. It was very bad! & worse of all, the number of ppl who got their vaccines exceeded the number of ppl exiting the room, so when I was there in a chair, there were ppl standing along the wall & the room got even more crowded. This part was the worse part of the experience =/ 15mins done, & I was able to leave!
So yeah, glad to have the privilege to be vaccinated (about time!), but I don’t know why our numbers keep climbing >.< Cooperate, ppl!!!

Onion Compote
Hey everyone, I’m in here again to share with you another gastronomic story. I guess it is save to say that onion and garlic are one of the most important ingredients in the kitchen. Well, at least it is true for me and my family which always have these 2 ingredients at home and, along with salt and pepper, onions and garlic are the most common seasoning ingredients we use in our food.
As you can imagine based on the introduction, today I want to share with you a recipe where the protagonists are Onions and Garlic. I will teach you a recipe that I learned from my grandmother that allows you to preserve these 2 ingredients in a very versatile and delicious way.
As I mentioned before, my family and I always have onions and garlic at home because we simply love the flavours they give to a variety of dishes and we enjoy getting creative in the kitchen and using these 2 ingredients in almost everything we do. You probably know by now that I am Brazilian, and as a good Brazilian, I love barbecue. It is part of my culture to get together with family and friends and have a good, old fashion barbecue, where each attendee brings something to share. My grandmother, for instance, always brings her famous Onion Compote, which we put on top of the roast beef (barbecue) and gives the perfect combination of flavors; You have the salty of the meat combined with the bittersweet taste of the onion compote.
To be honest, I am not a huge fan of meat in general but my family’s barbecue with my grandmother’s onion compote is so yummy that I just can’t help myself and eat it all. Today I decided to share with you my grandmother’s onion compote so you can also have the perfect barbecue this summer! But even if you are not a meat lover like myself, this compote is so versatile that you can eat in different ways like on top of your favourite cheese (my personal preference is on top of Brie cheese), or even just with crackers or a toasted bread.
Just a side note, onion and garlic are not only responsible for making your food taste better but also they are very important for our diet and overall health. Specialists say that these vegetables are rich in nutrients and vitamins. Some studies even suggest that the consumption of onion and garlic regularly can help you to reduce inflammation and lower high blood pressure, so go ahead and add Onions and Garlic to your favourite food!
Before jumping into the recipe and the method of making it, I just want to explain that this method of cooking onions is also a way to preserve them. This compote can be stored in a cold dark place (fridge) for up to 6 months, and the taste just gets better with time. This recipe is very easy to make and does not require many ingredients.
Onion Compote
Ingredients:
- 4 pcs, Onions (I used 1 red onion and 3 white ones)
- 3 cloves, Garlic
- 3 springs, Fresh thyme
- 10ml, Olive oil
- 50ml, Lemon juice (half lemon)
- 60ml, Red wine vinegar
- 124ml, Red wine
- 95g, Sugar
- 1 tsp, Honey
- 1 pinch, Salt and back pepper
Method:
- Peel the onions and then cut then into half. After cut then into horizontal slices of 0.5 cm. Peel the garlic and cut into slices.
- Preheat a frypan in a medium heat. When the pan is hot add the olive oil and the garlic and onions with a pinch of salt. Cook the onions for about 10minutes or until them start getting softer and having a gold color.
- Add the red wine and let it reduce; make sure to stir it with a wooden spoon to incorporate the wine reduction in the onions. Then add the sugar, honey, lemon juice, red wine vinegar and a pinch of salt and black pepper to taste. Add the little leaves of the fresh thyme as well. Mix everything together and wait until start simmering.
- Lower the heat to the low and let it cook for about 15-20minutes. Stir occasionally. The onions needs to be very soft and you will have a glazed liquid on the pan as well. Let it cool down a little bit before you transfer it to the jars.
- Use a glass jar that have been cleaned in boiling water (to kill spoilage bacteria) and put your onion compote in it. After putting the compote in the glass jar let it get the room temperature and then put the lid on and make sure that the jar is well sealed. Put it in the fridge and let it develop the flavors for at least a day before you eat it. (I usually eat the compote after 2 days or more)
- Serve the onion compote as an accompaniment to cheeses, grills, crackers, roast beef, salad and so on.
I am including some pictures of the whole process of making this recipe and also the final result. The flavor is bittersweet with notes of caramelized onion sweetened with the sugar and honey, but specially the deglaze of red wine, the freshness of the lemon and thyme, a little spiciness from the black pepper (by the way, I used the coarse grind black pepper instead of the ground black pepper just because I wanted to add some crunchiness to it). So if you are an onion’s lover you should try this recipe and enjoy a new way to eat it.

Creme caramel

My mum’s recipe to one of my all time childhood favourite “Creme caramel”, or as we fondly call it “Caramel custard” at my home! This is my first attempt at both, the creme caramel, and my mum’s recipe without her guidance, and it turned out just as she said, melt in mouth, yum, and perfect balance of sweet and creaminess!
You could make it in a pressure cooker too.. See at the end of recipe!
All you need:
Ingredients:
2cups milk
2eggs (slightly whisked)
1tsp vanilla essence
1/4cup sugar + more to sprinkle on the base for caramel
Few sliced almonds
Method:
Preheat oven to 180ºC
Heat milk in a bowl, add 1/2 cup sugar, do not boil, just heat it enough to melt sugar in, and then add vanilla essence. Once it reaches room temperature, add in the whisked eggs, and whisk in well to incorporate everything.
In a cake mould (9inch or smaller, I used an aluminium cake mould), sprinkle sugar to cover the base well, and keep it over low flame to allow caramelisation. Keep moving the mould for uniform caramelisation.
Once caramel is ready, you will see it turns to toffee colour, and a smoke rises up, take it off flame immediately, sprinkle with almonds, wait for a minute.
Pour in the milk mix slowly into the mould, to avoid bubbles.
Place the mould in the oven, and bake for 45minutes, or until the top starts to turn brown, and it is almost set yet a little wobbly. If you do not have an oven, you could bake this the same way you bake a cake in a pressure cooker for 45minutes.
Remember do not over-bake it, as it will not have a melt in mouth, light texture. Once it is baked, keep it on cooling rack to let it come to room temperature. After that place in refrigerator for a minimum 2-4hours for it to set completely.
With a knife, move around sides of the mould to release the pudding. Place a plate on top, and flip without moving plate from the mould. Place them on table, remove the mould slowly, and voila! Your creme caramel sits there pretty! :)
In case you don't have an oven, you could use a wide pressure cooker or idly steamer, put one cup water in it. Then place a stand in the water, place the aluminium mould in preferably not touching the water, and cover the mould with a foil so that water doesn't get in. PRessure cook for 25-30minutes on low flame without the whistle. Remember to check if water evaporates, then you might have to add a little more water.. :)
It is cooked when it is wobbly in center but set otherwise.. if it is very wobbly steam it for 5-10minutes more..
I didn't have a big pressure cooker so couldn't show in the video..
