This is THE best banana bread you'll ever have! In the last six days, my family has devoured eight loaves! The best thing about it for me and my oldest is that it's gluten free. Yes, gluten free CAN taste amazing! I'm going to try making it sugar free too....stay tuned. Recipe by www.onegoodthingbyjillee.com cut and pasted below. (Only dif in mine and this one is, I mixed the vanilla in with the wet ingredients. Also, I stacked mine together to make a cake with homemade buttery creamcheese icing between layers and on top). Gluten Free Banana Bread 1/2 cup butter 1 1/2 cups sugar 2 cups gluten-free flour 1/2 tsp salt 1 cup sour cream 2 eggs, beaten 3 mashed bananas 1 tsp baking soda 1 tsp vanilla Preheat oven to 300 degrees. Grease and flour 2 bread pans. Cream butter and sugar together. Add eggs and bananas. Mix well. Sift flour, salt, and baking soda together and add to the mixture. Mix until well combined and then add vanilla. Finally, fold in the sour cream. (I just added it to the mixing bowl and gently mixed it until just combined.)
