When I’m sick, I want curry. Maybe it’s because my mom made the best curry ever and I always used to ask her for lamb curry when I was sick. For my kids, it’s chicken soup. In this past pic, I made lamb and potato curry with veg couscous and roasted cauliflower. Today, I want this curry old school style with sambals (tamatie en uie (tomato and onion) or carrot, date and apple) and a pile of buttery roti. Let’s not forget the blatjang (chutney) or Mrs Ball’s chutney. And delivery just isn’t the same. For comfort to me, nothing beats a pot of slow-cooked, homemade curry. Salted caramel and bourbon tart in a sablée crust, served with banana and passion fruit sorbet. Gosh, this came out so much better than I expected. So good. I’ve been trying to up my tart game. I’m just steadily working on getting that pastry exactly how I want it to be. As with everything, I make it and I take away learnings from it. The sablée pastry is from Michel Roux’s desserts book and is my fave sablée recipe thus far. I used a technique for creating the case so it doesn’t need blind-baking, which I saw @nicolaalamb @thedessertlab.co and @spatuladesserts use. Then, the filling is an adaptation of a recipe by Colin McGurran on @gbchefs and so is the banana and passion fruit sorbet. **Recipe Alert** my grandfather’s 60 year old pannekoek recipe. Happy pancake day! I made American style pancakes with Nutella and raspberries and South African pannekoek (pancakes) with cinnamon sugar. Check the post caption for the recipe. I grew up on pannekoek - a fluffy, spongey and slightly thicker version of a crepe. It’s served at fairs, markets, made at home when baby first cuts its teeth (for everyone else but baby to eat it 😜) and is made anytime of the day to serve with tea or coffee. Traditionally, they’re served with cinnamon sugar rolled inside and a squeeze of a lemon or orange wedge for that acidity but you can fill them with sweet or savory fillings of your choice (Cape Malay curry veg or chicken, mushroom and spinach, spiced apples, caramel and banana, etc). Like with most things, I like it the old school way. Here’s a 60 year old recipe for PANNEKOEK that my grandfather shared with my mom and then with me. In a blender, add: 1 egg 2 Tbl spoon melted butter 2 cups milk Pinch salt 1 cup all purpose flour 1 1/2 tsp baking powder Leave for 30 minutes before frying. Place pan on medium to high heat. Add a tsp butter to a non stick pan. Add a ladle of mixture to the pan and swirl to coat the bottom. When bubbles appear on top of the pancake, flip it over in the pan with a spatula. Let it cook for 2 minutes or r until lightly browned. Sprinkle pancakes with a mixture of 1 1/2 tsp ground cinnamon with 1/2 cup caster sugar, then roll up. Serve with a squeeze of fresh lemon or orange. It’s pancake day next week… I’m sharing my family’s pannekoek recipe with you. Panne = pan + koek = cake. The Dutch brought it to South Africa centuries ago when the colonised us. (I like to think that we perfected the recipe. 😉) It’s like a crepe but slightly thicker and spongier. It’s something you can find at every market where the stall is run by a group of women, standing at gas stoves and wielding pans like experts as they flip one pannekoek after the next. They’re traditionally served with cinnamon sugar and a good squeeze of lemon (yeah - I hear yah “salt, fat, acid, heat @ciaosamin ) It’s a simple recipe but in my humble opinion, sometimes simple things give the greatest pleasure. Here’s the recipe to try out: In a blender, add: 1 egg 2 Tbl spoon melted butter 2 cups milk Pinch salt 1 cup flour 1 1/2 tsp baking powder Leave for 30 minutes before frying. Fancy plated churros… churros, miso chocolate ganache, chocolate crumb and burnt sugar ice cream. Omg people - that ice cream 🔥 is it! I’ve been offline the past few weeks because our little pom had an op, I’ve been doing some stuff around the house and also figuring out where I want to go with my career change now that I’ve graduated from culinary school. It’s a super exciting new chapter but I want to get it right. Apply the same drive I had in corporate with my passion for food and newly acquired skills from the past two years. Today, my Valentine’s act of self-love / self-care was to spend a few hours in the kitchen playing with toys and machines and making my slight adaptation of this dessert by @thedessertlab.co using @callebautchocolate It’s a fancy churro and so so so darn good.
