📍Howies, Waterloo Place, Edinburgh ▪️ Smoked Mackerel Pate ▪️ Venison & Mushroom Casserole ▪️ Howies Famous Banoffee Pie (I added ice cream) We started with bread & olives which were delicious. Overall the food was great, really tasty and good portions. Disappointed in the Banoffee pie (it being my favourite), way too much cream and way too little Banoffee. I tried some of the Sticky Toffee Pudding and that was miles better. Service and ambience was also great, we weren’t rushed for our table. Good location, 5 minute walk from Waverley. Playing in the powdery snow plus reading a book set in the South and watching Top Chef New Orleans last night reminded me of the sugar-covered, pillowy goodness of beignets. So, of course, I had to make some. I truly love them with a hot cup of tea - coffee for my hubby. Here’s a recipe so you can make your own: Dough - made two hours before frying: - Add 7 g fast action yeast, 1 teaspoon sugar and 3/4 cup lukewarm water to a bowl and stir to dissolve the sugar. Leave for 10 minutes. (I know that you can add this yeast directly to the flour but believe me that mixing it this way first is much better for these beignets. I’ve tried it both ways). - In another bowl, mix 1 egg, 1/2 cup evaporated milk, 1/2 teaspoon salt and 3 tablespoons of softened butter. - Sift 3.5 cups bread flour into a large bowl. - Add the egg mixture to the yeast mixture and then add this to the flour. Bring it together in the bowl with your hands until it forms a dough. - Turn the dough out onto an un-floured surface and knead until smooth and elastic - approximately 5 to 10 minutes. - Place the dough in a lightly oiled bowl that’s large enough to hold double the dough’s size. Cover with lightly oiled cling film. Leave to rise to double it’s size - for about 2 hours. - Once it’s risen sufficiently, take it out of the bowl and roll it to about a 1.5 cm thickness. Cut into equal sized blocks - about 5 cm. - Fry in a deep fryer or pot in hot oil (about 160 degrees Celsius). First on one side then the other. The dough will puff up into little pillows when frying. - Drain on kitchen towel then, while still warm, transfer to a plate and dust liberally with icing sugar. Serve with Café au lait (milky coffee), hot chocolate or tea. This past week was a pretty fun one at school. On Wednesday, we got to play with our food and got free reign to plate. On Thursday, we had a food photographer come and shoot our dishes we developed ourselves, Friday was a shellfish kind of day and a gorgeous bouillabaisse was one of the dishes. We also got to refine our recipes that we developed, make macarons etc. A busy but fun week. I’m waiting for the pics from the photographer and will then post them. Practicing for my recipe development and food photo shoot assignment. We had to come up with 3 ideas for complete plates of a course of our own choice. I chose dessert. The school principal chose the idea we had to develop into recipes… my idea that she chose was an East to West trio of desserts showing my culinary influences. It’s still a work in progress but the mini desserts are…. Pandan chiffon cake layered with raspberry and lime frosting (signifying SE Asia) Choux pastry filled with chantilly cream and topped with raspberry and rose glaze then sprinkled with pistachios (representing my Middle Eastern food influence) Panna cotta flavoured with honey and single malt (@lyresspiritco non-alcoholic bourbon, which I was told today by someone was spot on as bourbon in the dessert), with raspberry compote and mini oat shortbread (representing my current foodie influence in the UK It’s a work in progress and a first attempt. It was a privilege to get feedback today from the principal, Fiona Burrell, who has trained thousands of chefs at Leith’s in London and at @ent_cookeryschool , who is a recipe developer herself. There are some minor tweaks but all in all, I’m happy….
