When Sophie meets Fitz and she thinks, "since when do I notice cute boys?" it isn't because she's being all like "I'm not like other girls hehe." In Shannon's lore, Elves and Humans aren't biologically wired to be attracted to each other. So of course Sophie hasn't been into any cute boys before. But then Fitz shows up, and he's basically the first Elven boy she's ever seen, and he seems to be considered attractive even by his Elven peers. So of course Sophie is like, "Wait, what? Cute boys.... are a thing I notice now??"
