What is special about the Travancore chicken biryani?

Travancore chicken biryani is a unique biryani dish that originated in southern Kerala. It is made with various spices, including cinnamon, cloves, cardamom, fennel seed, garam masala, and turmeric. Other ingredients include onions, tomatoes, green chili,  ginger-garlic paste, bay leaves, coriander, raisins, and cashews. 

Rice: Travancore chicken biryani is an aromatic dish made with high-quality basmati rice.

Garnish: The dish is often garnished with fried cashews, raisins, coriander leaves, mint leaves, and boiled egg.  

Serving: Travancore biryani is served with salad, coconut chutney, lime pickle or  dates pickle, and pappadam, the aromatic biryani. It can also be eaten with coconut oil. 

Preparation: The dish is made with onions, tomatoes, green chili, ginger-garlic paste, and spices in a large cauldron, then added coconut oil and ghee. Then, basmati rice is washed and put in salted boiling water with lime juice. The rice is strained when it is half cooked, and then the chicken and masala are added. 

The majority of Trivandrum's eateries, including those in Thiruvananthapuram, Kollam, Alappuzha, and Kottayam, used to provide Travancore chicken biryani.The tradition continued even after Trivandrum became Thiruvananthapuram. Moreover other types of biryani which use the same rice and preparation methods but vary a little bit because of the addition of some ingredients are Kannur biryani, Malappuram biryani, Calicut biryani, Ponnani biryani, Kochi mint biryani, and Alappuzha biryani.
