CINNAMON BAKED APPLE CHIPS✅: 2 golden delicious apples* 1/8 tsp ground cinnamon 1 tsp sugar Directions: Preheat the oven to 225 degrees F. Stir together the cinnamon and sugar to combine. Set aside. Decide whether or not to core your apples, then slice them thinly with a mandolin slicer. Line two sheet pans with parchment paper, and place the apple slices side by side on the parchment, in a single layer. Make sure not to overlap the apple slices or place them on top of each other, otherwise they won't crisp up. Sprinkle the apple slices with the cinnamon sugar, and note that if you sprinkle from high above, the cinnamon sugar will disperse more evenly. Bake the apple slices for 1 hour, then remove them from the oven and flip them over. The apples will be floppy, but they will crisp up later. Return the apple slices to the oven for another hour, then turn the oven off. Let the apple chips cool completely in the oven, this is when they will crisp up. Once they've cooled, enjoy! Minestrone Soup Ingredients: 2 quarts beef stock 2 T olive oil 1 clove of garlic, peeled and mashed [TNC: I added more, we love garlic] 1 large onion, chopped [TNC: Not in the NT recipe] 2 carrots, peeled and chopped 2 tomatoes, peeled, seeded and chopped [TNC: I used 1 15 ounce can of diced tomatoes and their juice] 2 cups cooked kidney beans [TNC: I used whole pintos that I had in the freezer even though they’re not an italian bean] 1 cup buckwheat or brown rice pasta, broken in bits [TNC: I used cooked elbow macaroni. Add this to each portion, not the pot] 1 cup fresh spinach or chard, finely chopped [TNC: I used some veggies I had on hand: peas and cauliflower] parmesan cheese for topping Preparation: Cook onions & carrots in oil until onions are soft, then add chopped garlic. Add tomatoes, beans and the rest of your cooked vegetables and simmer about 10 minutes. Ladle into bowls and add hot pasta or rice to each serving, top with parmesan cheese. TURKEY CESAR SANDWICH✅: 1 tablespoon grated Parmesan cheese 2 tablespoons light mayonnaise 2 teaspoons freshly squeezed lemon juice 1 dash Worcestershire sauce Salt and ground pepper 2 slices multigrain bread 2 or 3 leaves romaine lettuce 3 ounces thinly sliced smoked turkey DIRECTIONS In a small bowl, combine Parmesan, mayonnaise, lemon juice, and Worcestershire; season with salt and pepper. Spread on both bread slices. Break lettuce into large pieces; layer half on 1 slice of bread. Top with turkey, remaining lettuce, and bread. #foodie #food #sandwich #eatclean #bilwielite

GRILLED CHICKEN AND FRUIT SALAD✅: INGREDIENTS 1 chicken breast, grilled and thinly sliced 6 cups spinach & arugula salad greens 1/3 cup raspberries 1/3 cup blackberries 1/3 cup blueberries 1/3 cup strawberries, sliced 1 cup walnuts 1/4 cup brown sugar 1 tablespoon water 1/4 teaspoon garlic salt 1/4 teaspoon pepper 3 tablespoons sugar 3 limes, freshly squeezed 1 teaspoon salt 1 teaspoon ground mustard 1/4 small red onion 1/3 cup light olive oil 1 tablespoon poppy seeds 2 tablespoons mayonnaise DIRECTIONS In a large bowl, toss together the salad, chicken, and berries. Set aside. In a small saucepan, combine the walnuts, brown sugar, water, garlic salt, and pepper. Cook, stirring constantly, over medium heat until the sugar bubbles and begins to caramelize. Transfer walnuts to a piece of parchment paper, allow to cool. Place the remaining ingredients in a blender of food processor. Puree together until well mixed.
