THE PEPPERCORN SAUCE HAMBURGER --- A 100 percent ground chuck 3.5oz beef ball smashed thin for lacy caramelized bits. @bakedwithtasha provided the Japanese Milk Bread Buns. Gooey American Cheese. Mayonnaise and Peppercorn Sauce from last night. Three dill pickles for acidity. NOTES - The Peppercorn Sauce had a lot more pepper kick last night. It really mellowed out over the last 20 hours - but in a great way. I think I would replace the pickles for Tennessee Chow Chow to keep the acidity but add a little missing lettuce crunch. Best Food Mayonnaise isn't great. It's fine. Looking to make my own mayonnaise for future experiments. Move mayonnaise to the heel. I've been feeling down for the last few months. Parsnip and Carrot Fries..(question mark) --- "Rough" julienne carrots and parsnips. Cooked inside the oven at 425 with a cast iron skillet. Seasoned with salt, black pepper, oil and glaze. Glaze - Dejian Mustard, molasses, oil, Za'atar, minced garlic, and soy sauce. NOTES - I cut the vegetables too thick. Too much oil when mixed with additional oil of the glaze. I was searching for pomegranate molasses but could not acquire it. All in all a good first try. THE PATTY CRISTO --- This has been a hamburger I have been thinking about for a few weeks. With the Holiday season being my busiest time of the year at the day job, it was nice to finally find a few hours to figure this hamburger out - my Northwest inspired patty melt. An 80/20 4oz ground chuck patty smashed and seasoned with salt. Heal sourdough bread with a layer of Marionberry jam, a layer of shredded white sharp cheese, hamburger patty, layer of shredded white sharp cheese, a layer of grilled onions and the crown Sourdough bread. I used Mayonnaise instead of butter on the outside with the addition of a few of the leftover shredded sharp cheese bits to the Mayonnaise for a little more bite. NOTES - I cut the Sourdough bread a little too thick, hindering the desired gooeyness of the white sharp cheese. I need to reduce the patty from 4oz to 3(ish)oz and smash thinner to create a better outer patty crust. I wanted more beef crunch. The onions are good but looking to deepen their flavor. The white sharp cheese and the Marionberry were the biggest win. I'm Considering adding a little touch of yellow cheddar. Generally a positive first attempt. HAMBURGER EXPERIMENTATION (PART II) --- 1. Tweaked the Baltimore Sauce. Shifted to two parts Mayonnaises to one part Horseradish. Increased Sour Cream by 3 tablespoons. Added more Dill Pickle Relish and ground mustard. Definitive improvement towards a smooth flavor with a nice after bite. 2. Discontented Animal Style. Seasoned the 3oz beef ball with Kosher Salt before smashing and rolling outward. 3. Incorporated diced raw onions into the Baltimore Sauce. Removed the carmelized onions from the previous attempt. 4. THE WHITE CASTLE SLIDER (A Historical Context to the Original Regional Franchise) --- Please checkout my hamburger page - @paperhathamburger The slider is the oldest and most resembling of our current hamburger and has existed for over 100 years. Today, sliders are considered a small hamburger. But, in the early days of hamburgers all hamburgers were this size. The term slider comes from either their ability to slide quickly down your throat or, how cooks' slid paper plates full of hamburgers along the front counter. The slider being born out of the need to cook more hamburgers in a shorter amount of time. Typically being 1.5 to 2oz, this allowed the patties to cook incredibly fast thus producing more patties for the lines of workers standing outside during lunch hour. White Castle steams their square patties on top of a layer of diced onions spread across the griddle. A white squish bun placed on top of the hamburger meat in order to soak up the aroma of that beef/onion mixture before being plated on a paper plate. White Castle began in the city of Wichita, Kansa (1921) and is the world's first chained hamburger restaurant. At this time the 4 to 12 stooled hamburger stands were considered "dirty food" for "wage earners" partially as a result from Upton Sinclair's book "The Jungle" and its portrayal of the harsh exploitative conditions of the American meat packing industry. The founders of White Castle Billy Ingram and Walter Anderson attempted to rebrand the faltering Hamburger restaurant industry. They choose the word "White" to convey cleanliness and "Castle" for strength. The First White Castle was a porcelain fortress with the staff wearing all white. As White Castle helped change the direction of hamburgers, hundreds, maybe thousands, of imitations grew out of dirt overnight - White Tower, White Diamond, White Clock, ect -  blanketed the Midwest. Today there is nearly zero other "White" burger stands who have survived. White Castle is still privately owned and many hamburger restaurants continue to imitate the original hamburger chain. Experimenting With Oklahoma Onion Hamburgers --- Normally I use Sweet Walla Walla onions cut into thin ribbon strips. Changed out to a red onion. I also dehydrated them with salt for two hours and squeezed out as much water as I could. Placed a 2.7oz 80/20 beef ball onto griddle with high heat. Salted. Placed handful of red onions on top of loosely packed beef ball. Smashed thin. American Cheese on the flip. Placed Brioche Crown bun on patty as cheese melted to soak up Onion Steam. Toasted heel. Small dalup of yellow mustard on toasted heel. Placed Patty, red onion ribbons, and crown bun on heel. This could be a solid 5 dollar hamburger. Seven dollar double hamburger. Would you order? The Jersey Hamburger --- We are traveling to the East Coast Jersey Dinners for this one. Very similar to the Oklahoma Fried Onion Hamburger. 3oz patty.
