Sometimes you just need to make chili to feel better. Recipe follows: 3lbs ground turkey 1 pound ground beef 1/4 measure of chorizo browned 2 cans fire roasted tomatoes 1 can of tomato paste 1 bell pepper of each color 1 yellow onion 2 jalapeños (seeded and deveined), all chopped minced garlic Seasonings are: cumin, chili powder, red chili flakes, onion and garlic powder, smoked paprika, 2 bay leaves, celery salt, pepper. 2 cups of water. Instant pot for 11 minutes after browning meat in skillet. My intention was always to start back up on my Keto life today. I stopped for a while with intention to try and still keep an eye on any weight gain that may come. In 3 months I managed to gain back 15 pounds of the 60 I lost. I’m actually okay with that. It could easily have spiraled into more. I still meal prepped Keto the entire time, I had several days where I was Keto throughout, but around special events like birthdays and holidays I purposely did not have any intention to stay Keto. The last 2 weeks of the year I enjoyed the holidays and time with family and vacation and I regret none of it. Jan will set me right where I was before, and my long term goal is to hit my 100 pounds lost goal. That’s the end of the year goal. (It’s only 55 pounds). My Keto buddy and I have a calendar we are going to use to track goals together. Our ketoversary is Jan 23rd which will be 2 years of Keto! I will stay away from artificial sweeteners and make sure to stay strict Keto until then. When memories show up on FB and you realize how terrible you allowed yourself to become health wise. This was the November just before keto and this past Aug after being on Keto for a year and a half. Sometimes you are your own motivation. To see where you were means acknowledging how far you’ve come, and remembering that you did this and you can keep doing this! Preserve and keep on keeping on. I’m not good at Keto by any means. I fuck up a lot and I go off track but I always get back on track. Do I consider that a failure? No. I only fail if I gain everything back and I will never let that happen. Have been struggling with being busy the last few weeks and have t done much meal prepping and eating like a jerk. Whatever. Life happens. Sometimes you just have to let it. Sometimes you just need to eat like a jerk and be done with it. Not letting it take over is what’s important. Not letting yourself spiral out of control after not eating ‘on plan’ is progress in and of itself. If you can get back on track and not feel guilty because you didn’t stick to plan for a while that’s how you know you have grown and changed your relationship with food. No one will be perfect 100% of the time and not beating yourself up for veering off a bit is a huge change in mindset that I’ve learned over the last 2.5 years. (Also yes I know my salad has corn. So what. I forgot to tell them to take it off. Whatever. Deal with it.
