HUNGARIAN BEAN GOULASH AND CREAMY POTATO MASH

This recipe was adapted from VEGIEHEAD for an oncology patient case study I did today! People receiving radiotherapy to the head and neck region often have a hard time swallowing, a lack of appetite and a dry mouth leading too poor nutrient intake. Therefore I needed a soft and saucy nutrient dense recipe for my patient. This is a bean goulash, high in fibre, protein and vitamin C with cheesy mash potato high in energy and fat!!! Because patients may only eat one meal a day it's important to make it as energy dense as possible by adding extra cream and cheese. Thank you VEGIEHEAD your recipes are not only a life savour for vegetarians like me but can also be used in my medical nutrition case studies

Heres the Recipe - Serves 1!!!

Ingredients 

Bean Goulash

1 tbs Olive Oil

¼ Onion Diced

¼ Zucchini Diced

½ tbs minced garlic

½ tsp smokey paprika

100ml crushed tomatoes

1 tsp tomato paste

1/4 cup passata sauce

150g mixed legumes (canned and drained)

  Creamy Mash

1 medium sized potato diced

1 tsp butter

1 1/2 tbs regular sour cream

A pinch of salt and pepper

¼ cup grated cheddar cheese

 1 extra dollop of sour cream and extra cheese (optional)

  Method

Bean Goulash

Dice onion and zucchini into small 0.5cm pieces.

In a large pot sauté the onions and zucchini in the oil until soft.

Add garlic and paprika and stir well to coat.

Pour in crushed tomatoes, passata sauce and tomato paste and bring to a gentle, rolling boil.

Add the mixed beans and reduce to a simmer.

Simmer gently for 15 - 20 minutes allowing the beans to soften and flavours to develop. Ensure beans are fully cooked by testing with a fork. Mash beans slightly if needed.

Creamy Mash Potatoes  

Dice potatoes into small 0.5cm pieces.

Place in saucepan and bring to boil over high heat. Then, reduce heat to medium and boil until potatoes are tender and soft.

Drain potatoes and mash with a fork or potato masher.

Stir in butter, sour cream, salt and pepper.

Stir in cheese just until mixed.

Serve goulash over mash with a dollop of sour cream and an extra sprinkle of cheese 

Remember this recipe has been adapted for someone who is undergoing radiotherapy to the head and neck region. Therefore you can slice vegetables any size you like. Also if you are concerned with the fat content of the mash simply swop out the full fat cream, butter and cheese, and make mash with a tablespoon of Nuttlex and a tiny bit of milk (soy, almond, whatever you like)!!! You can even choose to make a sweet potato mash!!

MENSWEAR LOVE - HUF 

So too often I get caught up in all the things in the world of womens fashion, but I do have a great love for menswear also, especially mens street-wear fashion. I admire the way these brands encompass all that has inspired them like skating, surfing or just a love for sneakers. They manage to make looking rad easy and when ever I see a guy wearing HUF I think yup, he knows whats going on. HUF was founded by Keith Hufnagel who grew up skating the streets of New York during the late 80's. This was an era where skating was rarely accepted. It was a counterculture for misunderstood outcasts - a way of life which ultimately shaped Hufnagels outlook on life! It was a brand he created for skateboarders but also any individual inspired by the vast array of counter cultures that parallel skateboard mentality. HUF says - "Go out and create you own future - do it yourself and do it style" and I like the sound of that, which is why this week with the chilly weather beginning to set in here in Brisbane, QLD i'm starting to wear socks a lot more so I bought these HUF PLANTLIFE socks at Laced on Albert Street in Brisbane's city.

MBFWA DAY 3

LISO HO  - This year Lisa Ho presented a very wearable collection and not just day wear and evening wear. This year she showcased swim wear!! With a palette of metallic blue, white, black a red this collection had serious sex appeal. 

Alice McCall - Talk about extravaganza this collection featured puffy sleeves and ruffed details. FUN AND FLIRTY! GO ALICE! 

Serpent and the Swan - Inspired by the love of the Animal Kingdom this was one of my favourite labels to come across! An easy flowing collection of T shirts combined with leather harnesses to toughen up some girly dresses - they had me at leather, and harness... 

WE ARE HANDSOME - The label thats never afraid to flex their creative muscles this year killed it again. Teaming up with Monster Headphones the show was colourful, fun and energetic featuring minuscule bikinis to one piece bustiers and retro inspired high waisted two pieces. Decking in the usual painterly landscapes and wildlife WAH sure know the way to a girls heart. 

Camilla -  Lead by supermodel rock royal Georgia Jagger this collection put the party back into fashion and simply made me feel like running away into the wild to living off coconuts and sunshine. 

Raffles - Gabriel Lee  - Each year a handful of designers from the Raffles International College of Design and Commerce get to showcase their work at MBFWA and this year the most talked about collection was by Gabriel Lee. Lee says he likes to create fashion that tells a story...

Bronx and Banco - Not my favourite collection to scroll through as I feel like I've seen a lot of the pieces done before..BUT I LOVE THIS JACKET 

Watson X Watson - With the X meaning a kiss, a cross of faith and a spot where hard work and inspiration take over to create something... effortlessly cool. 

HAN - Didn't anyone tell you?? WHITE ON WHITE IS THE NEW BLACK ON BLACK...Cambodian born Brisbane designer Khim Hang is all over this...Kanye take note.

Michael Lo Sordo - Who says a girl cant wear the pants, seems a lot of labels are squashing this rule as man style blazers and pants take over.

Eastern Pearson -  As I look at the photos from this collection I begin to hear the voice of Michael Jackson - "You Rock My World you know You DO". Brisbane REPRESENT!!! Pamela Easton and Lydia Pearson established this label in Brisbane in 1989. In 2009 they were awarded the Australian Fashion Laureate and this year their show was a special dedication to their work titled - "Mercedes Benz presents Eastern Pearson." 

And so to end I leave you with this lovely message from the ladies - "We dont stand away from trends but we interpret these trends a little differently, a little idiosyncratically, based on our own interests. The sensuality of fabric against skin is important to us and we believe in intimate attention to all aspects of the making process."

MINI BUNS!!! BRINGING THE 90's to the 2000's. 

On a recent trip to Sydney there was one hairstyle I noticed standing out the most!!! And that was mini buns, wether but a small low bun tied to low to the back or 5 randomly placed buns all over the head mini buns were everywhere. The most common combination was two low and to the back like your general piggy tails. I tried this look today and I have to say I liked it! It was easy, fast and I didn't have to whip out my straightener! It reminded all too much of Gwen Stefani in her no doubt days, and what can be bad about that!! Plus Gwen still rocks the look to this day!!!

FASHION WEEK DAY 2 RECAP

Karla Spetic  - Kicking off day two of Fashion week was Karla Spetic - named 1 of 3 designers to watch this year along with Christopher Esber and Michael Lo Sordo. The designers collection was intrinsically cool and effortlessly laid back with explosions of colour! 

Ginger and Smart - Chic and modern - this year Australian Label Ginger and Smart celebrated its 10th year at Fashion week with shapeshifting silhouettes that exploded with colours and geometric prints. 

Flannel - This year Kristy Lawrence, the brain behind Flannel bought us a show of antique cream lace, sand and pool side luxury. The relaxed looks where punctuated with washed silks, leather and sequins and for the first time showcased mens looks. 

Talulah - All hail the BRISBANE BASED label Talhula. Confident, Feminine and Romatic are the words to describe this label. The show featured a display of edible looking pastels and a cut-out back trend throughout.

Ellery - As a last minute addition to the MBFWA schedule the Ellery Renegade collection was still one of the most anticipated of MBFWA. Oversized fur gillettes, long stream line skirts, structured shoulders and a palette of gold, black and cream broken by a pair of floral flares made for one 'helluva' collection and my favourite so far at fashion week. 

Jayson Brundson  - Also celebrating his 10th anniversary this years "Obsession" collection explored shapes and volumes of mid century couture, with exaggerated shapes and tunics worn over slim crystalline pants. 

Toni Maticevski - Holding off the start of the show for half an hour for Jennifer Hawkins to show up didn't phase the packed out front row as Maticevski skilfully draped and twisted neoprene, the fabric used in wetsuits, to create modern, sculpted dresses with intricate necklines 

Manning Cartel - Founded in Sydney Australia the show by Manning Cartel was nothing less of, modern, independent and strong with mutually defining opposites: extravagant and restrained, masculine and feminine light and dark, dream and reality. 

KAHLO - This collection titled "A Crowded House" is said to be their best yet. Enriched with signature leather pieces in fresh innovative cuts and styles coupled with classic capes and sleek trousers. This range is totally wearable which probably comes from the fact that the designer - Rachelle started in styling, not design. 

AJE - Titled "The Garden of Yesterday" the show was reminiscent of an Australia childhood summer. The duo Edwina Robinson and Adrian Norris took inspiration from their own yesteryears for this breathtakingly, stunning collection. 

Kate Sylvester  - Topping the day off was New Zealand designer Kate Sylvester. Seamlessly stitching sportswear with couture, pop culture history, high art with punk funk she is known for having the BEST playlist during her runway shows and last night was no different. The earthy collection is unpredictable yet elegant.
