This smoothie is packed with potassium…really helpful for those low energy days…
Blend:
2 cups rice milk
2 tablespoons crunchy peanut butter (choose natural peanut butter…that contains only peanuts and salt)
1 pinch bourbon vanilla
1 banana
6 ice cubes
…top with cacao nibs and salty blended almonds…💕

Raw Vegan Blueberry & Maqui Cheesecake 💖

Base
3 cups of activated Walnuts
½ cup hemp seeds or any other nut you love 💕
12 juicy dates
Pinch salt
Process until the mixture holds together when pushed against the side of the bowl. Press into a springform pan and chill.
Filling
3 cups cashews soaked for at least 4 hours drained and rinsed.
4 cups fresh or completely defrosted blueberries
1 tsp Maqui powder
Juice I lime or lemon
Pinch salt
1 cup coconut oil melted
¼ cup coconut nectar or more if you have a sweet tooth
Blend all ingredients till creamy smooth, you’ll need a high speed blender for this 👌
Pour on to base & chill whilst you make a batch of raw chocolate, decorate to your liking and chill well. This cake freezes well, I slice mine and just defrost when I have a ‘NEED, 😜

Vegan Food Lovers Features
One Pasta Pot à l’Arrabbiata 💛

Makes 1 large serving, Cooking time: 7-10 minutes (depends on pasta)
2 large shallots, finely chopped
big handful of fresh basil
½ red onion, chopped
½ pepper, chopped
smash tamari sauce
1 red chili, chopped
2 garlic cloves, chopped
handful rocket (add this after the pasta is cooked)
2 heaping tbsp nutritional yeast
1 tbsp sundried tomatoes
a couple cherry tomatoes
½ can chopped tomatoes
about 2 cups water (+½ tsp veggie stock)
spices: pepper, 1 tsp oregano, 1 tsp parsley, 1 tsp basil – all dried, salt
pasta of choice (I used brown rice)
optional: vegan cream/quark
Instructions
1. Chuck EVERYTHING (except salt + rocket) into a large pot.
2. Bring to a boil, then turn down to a simmer until pasta is cooked properly. Don’t forget to stir from time to time to keep pasta from sticking to the bottom.
3. Add salt + rocket last.
(The water should have cooked down to a creamy consistency. Make sure to not use too much water, you can always add more in the end, if you need. But this is crucial! Maximum 2 cups per serving.)
