I'm loving small batch baking recipes. @kingarthurbaking posted this one for brownies and then I had to be extra and used #pistachionutspread. It didn't really add much flavor, probably should have used more or added some pistachios to the batter instead of just doing a swirl. Next time because there will be a next time!!

banana beer bread? WHAT? of course it's a Tosi recipe! I think I should have used regular Guiness instead of extra stout because these are beer forward. (The second loaf less so because I threw some caramel chips in that loaf.)
There are some other riffs I want to try so expect more of these experiments!

was looking for ways to use up the #satsumamarmalade and found a #fortumandmason scone recipe (link on my #fuckyeahthisfoodrawks tumblr)
1. before baking
2. after baking
3. the marmalade
4. the proper way to eat these
I had to use about 20 ml more milk than in the recipe. Maybe my marmalade was less juicy than theirs? Also had to bake at a higher temp.
Will make these again once I happen upon another bag of reasonably priced satsumas.

I bought a bag of #satsumas so I could make an orange cake but when I looked at the recipe I could have sworn it was an orange olive oil cake but nope.
So I read a bunch of olive oil cake recipes and came up with this
3 eggs
200 grams sugar
210 grams AP Flour
2 1/2 tsp baking powder
1/4 cup olive oil
75 grams whole milk Greek yogurt
300 grams Satusumas
Grease and line the bottom of an 8 or 9 inch springform pan.
Whisk eggs and sugar together then add flour and baking powder. Add olive oil, then yogurt. Process the oranges (including the peels) then add to cake mixture.
Pro tip: if you have any #fioridisiciliaextract
add to taste (I used 1/2 tsp but if my oranges weren't great then I'd add more)
Bake at 350 degrees for 50-60 minutes.

Christmas Eve baking! I don't usually try a new recipe this late in my baking cycle but Seven Layer Cookies were too good to pass up. Though these were actually 5 layers because I skipped the cocoa nibs and sugar balls. No matter, these are delicious. The "layers" are potato chips + frosted flakes + mini marshmallows + butterscotch chips + chocolate chips.

my sister and I have this thing where she sends me recipes so I will bake them but I probably only bake one or two of them a year. Mostly because baking outside of my own kitchen can be challenging. But I didn't need a mixer for this one, so I gave it a go.
this one started vegan but I used real butter and milk and doubled the recipe (because why would I just make 8 cookies during the holidays?)
2/3 cup (132 grams) sugar
6 tbsp melted butter
4 tbsp milk
2 tsp vanilla
4 tsp baking powder
11/3 cups (160 grams) AP flour
2 cups mix ins (we used peppermint jo-joes + Ghirardelli white chocolate chips + potato chips + jimmies)
mix sugar + butter + milk + vanilla until creamed then add baking powder and flour. add mix ins. scoop then flatten, add crushed cookies on top.
bake for 10 minutes at 350 degrees
this made about 20 cookies using a tbsp scoop
(I wrote this out and am posting because I don't want to do this recipe math again)

Brown Butter Brownie Cookies
Because my feed always has new baking inspiration, I made these brown butter brownie cookies. I love the #100cookies recipe and interestingly enough, it was her insta of another cookbook author's recipe that made me want to try these.
I don't know if browning the butter is worth the extra effort but these are really good. Only second to the 100 cookies recipe.

My first attempt at a tarte tatin (with pear). It's not that pretty because I had a hard time arranging the pears. I also splattered the hot caramel on my thumb and it immediately blistered. Ouch. I'll try this again but will do better at prepping the pears beforehand so they are a more uniform shape for better arranging. Recipe is from Jamie Oliver, link below.

Brown butter chocolate chip cookies with heath bar candy!
Trying to get through some bookmarked recipes while I am not traveling for the next few weeks. This Bon Appetit recipe comes together pretty quickly. I am not usually a fan of crispy cookies but this was the perfect texture. It reminded me of the Tate brand of cookies (in the green package). These also have a little salty thing going on which I love. Definitely going to make these again!

Welcome to Dutch Baby season! I had a pint of blueberries to use and saw this recipe so voila! This recipe had more eggs than usual, so the texture was more custardy. NOT A BAD THING.

I've been chasing a homemade tortilla recipe that uses masa and flour and today I got it right.
1. With butter and salsa
(Eating one this way brings me back to the first time I ever had a homemade tortilla so this is how I do my taste test.)
2. Recipe math (with a mistake in division! It's correct in the recipe below.)
3. Dry ingredients plus bacon fat mixed together with a dough whisk
4. After adding Greek yogurt and kneading until just combined
5. Tortilla press results
6. Cooked tortilla
Based this off the #recipeclub yogurt tortilla recipe.
92 grams masa
118 grams flour
1 tsp salt
1/4 cup fat (I used bacon fat)
2/3 cup yogurt
Masa+flour+salt+bacon whisked together so it is in rice sized pieces. Add the yogurt (you may need more to get it to come together). Knead a few times (the recipe says to flour the surface, I did not do this.) Let rest for 10 minutes covered with a wet towel (it needs this step for hydrating, especially the masa). Pinch off golf sized balls and go at it with the tortilla press. Cook on a non stick or cast iron skillet.
Pro tips: salt is totally up to you. The original recipe definitely did not have enough salt, I tried to find a happy medium. You'll get to the point where you can feel whether the dough is hydrated enough.

Those crazy kids at @kingarthurbaking just dropped a bunch of variations on their #coffeecake #recipeoftheyear. I was very intrigued by the sweet corn blueberry version that uses #masa in the crumb and the cake. So I made it and it's delicious. Next time I'll use a 9 inch round instead of an 8×8 pan and maybe play with the crumb by adding walnuts. #recipe #baking #organicbaking

INGREDIENTS
3/4 cup unsalted butter, softened
1/4 cup granulated sugar
1/2 cup ube flavored sweetened condensed milk
1 teaspoon ube flavoring (I used Butterfly brand)
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup white chocolate chips
PREPARATION
Preheat oven to 350°F and line a baking sheet with parchment paper. Set aside.
In a large bowl, beat together the butter and sugar with an electric mixer until light and fluffy. Add the sweetened condensed milk and vanilla and mix until combined.
In a separate bowl, mix together the flour, baking powder, and salt. Add dry ingredients to butter mixture and mix just until combined. Stir in chocolate chips.
Roll dough into 1-inch balls and place 1 1/2 inches apart on prepared baking sheet. Flatten balls slightly with your hand.
Bake until edges are slightly golden, about 10 minutes. Enjoy!
