Broccoli and Rice Casserole
Ingredients | 1 Cup of Cooked Rice 8oz Thawed Chopped Broccoli 2 Cans of Cream of Mushroom Idahoan 4oz Bag, Cheddar & Sour Cream Mashed Potatoes (Leave as the Powder) Your favorite Cheese or one of my recommendations. (Cheddar, American, or Fiesta/Mexican.) 30-36 Buttery Crackers (Ritz) Crushed 1/2 cup Margarine
Prep | Cook rice as directed. ( I usually add a dash of salt and 1-tbsp of Margarine. ) Thaw broccoli with hot water in a bowl, drain the water and chop it into small chunks and fine bits.
Mix 1 can Cream of Mushroom with Rice and Broccoli in a large bowl. Add in the 4oz bag of Potatoes and the other can of Cream of Mushroom. Mix until everything is pretty even.
Pour the mixture into bake-ware of your choice that is Oven Safe. Flatten the mixture and add your choice of cheese until covered or your crazy self has had enough. Sprinkle your cracker crumbs all over the cheese til it is covered all over. Melt your margarine and drizzle it on top.

1/2 Cup of Milk Chocolate or Semi-Sweet Baking Morsels 1/2 TSP of Coconut Oil (Optional) Peanut Butter of your choice, preferably smooth. 1 Coffee Filter [Normal Size, Paper]
Preparation | Measure the Morsels and Coconut Oil(Optional) into a Small Microwave-Safe Bowl. Melt in Microwave for about 15 Seconds, then stir, then repeat two more times. ^ Time may vary, you just need it to be melted without burning. Add HALF of chocolate into the coffee filter, gently shaking until its covering the bottom. Add about 2-3 TBS of Peanut Butter to the center and spread gently around the middle. Once smoothed, add the rest of the chocolate on top until Peanut Butter is covered. (You may once again shake gently for it to smooth and even out.) Let this set in the freeze for about 30 minutes, more or less. This isn't perfect but when you are craving, it hits the spot. <3

Southwest Curry

2 TBS Canola Oil Half of an Onion; chopped 1 TBS Minced Garlic > 1/4 TSP Cajun Seasoning 2 TSP Ground Cumin 1/4 TSP Crushed Red Pepper Flakes 1 TSP Ground Turmeric Tip; Salt for seasoning, about a dash or 1/4 TSP. > 1 Can of Diced Tomatoes 2 TBS of Milk 1 Can of Corn 1 Can of Cream of Chicken or Mushroom Preparation | Mix Spices in a small bowl and set aside. In a skillet heat oil over medium heat; add onions and sauté, cook for 6 minutes stirring every 2 minutes or less. Add the minced Garlic and cook for 1-2 more minutes. Tip; Do not Burn the mixture, watch carefully. Stir your spices into garlic/onions until a consistent mixture. Add diced tomatoes and cook occasionally stirring for 1 minute. Add about 2 TBs of Milk and stir. Add corn and cook occasionally stirring for 1 minute. Add 1 Can of Cream of Chicken or Mushroom, stir until mixed consistently. Enjoy on top of rice, buttered toast, or eat as a soup. Also pairs well with crock-pot BBQ Chicken as a side with rice.
