I recomend reading Coyote’s Guid to Connecting with nature by Jon Young, Ellen Hass & Evan McGown. Although this book is geared towards mentoring older children, there is still a lot of great information that can be tweaked towards a younger crowd, or even a great guide for oneself!

"Now, adults seem to have a prevalently restrictive attitude towards kids, from every "Don't do that, don't do this" in the school handbook, to restrictions on school Internet use. As history points out, regimes become oppressive when they're fearful about keeping control. And although adults may not be quite at the level of totalitarian regimes, kids have no or very little say in making the rules, when really, the attitude should be reciprocal, meaning that the adult population should learn and take into account the wishes of the younger population... Now, what's even worse than restriction, is that adults often underestimate kids' abilities. We love challenges, but when expectations are low, trust me, we will sink to them."

Culture and Power in the Classroom: Educational Foundations for the Schooling of Bicultural Students by Antonia Darder.
This is a wonderful read about teaching with culture in mind. Darder does a beautiful job of connecting the ideas of authors such as Freire and Giroux and expanding on their ideas.

Contemplative observation asks the teacher to first look within. What sort of mind set are we bringing into the observation?
“In contemplative observation, we observe not only what is happening in the environment, but also what is simultaneously occurring within ourselves, the observer”- Richard C. Brown.
