Black Forest Oreo Cheesecake Pie
NOTE: This recipe will make approximately 3 pies.
INGREDIENTS:
1 container of Oreo's, crushed
1 container Philadelphia No Bake Cheesecake Filling
2 sm. Pkgs. Chocolate Pudding
3 cups Milk
2 cans Cherry Pie Filling
1 sm. Container Cool Whip
Maraschino Cherries
3 Oreo Pie Crust
Optional: Chocolate Syrup
DIRECTIONS
In a lg. mixing bowl mix both boxes of pudding with 3 cups of milk until set. Set aside.
Layer as follows in each pie crust:
1. Pudding
2. Cherry Pie Filling
3. Philadelphia Cheesecake Filling
4. Oreo's
5. Cool Whip
Garnish with Maraschino Cherries and Chipped Pecans
Optional: Drizzle Chocolate Syrup on top of pie
Place in refrigerator to chill for 2 hours before serving.

Cowboy Corn Dip
INGREDIENTS
2 cans Southwest Corn 15.25 ounces
each
1 cup mayonnaise, adjust accordingly
1 cup sour cream, adjust accordingly
10 ounces of Rotel Tomatoes, 1 can
7 ounces green chiles
/2 red bell pepper, diced
/2 green bell pepper, diced
2 jalapeno peppers seeded and diced
1 1/2 cups of Mexican Cheese
shredded
1 cup Pepper Jack Cheese, shredded
8 green onions, chopped
INSTRUCTIONS
Combine all ingredients in a large bowl
and stir.
Serve chilled and enjoy

Sweet and Sour Sauce
(Chinese Style)
Ingredients
▢ 1 cup pineapple juice
▢ 1/2 cup packed light brown sugar
▢ 1/2 cup rice vinegar
▢ 1/4 cup ketchup
▢ 1 tablespoon low-sodium soy sauce
▢ 3 drops red food coloring , optional
▢ 1 tablespoon cornstarch
▢ 2 tablespoons water
Instructions
Add the pineapple juice, light brown sugar, rice vinegar, ketchup, soy sauce, and food coloring to a saucepan on medium heat.
Stir well until it comes to a boil.
Mix the water and cornstarch and add it to the saucepan.
Whisk well until the cornstarch is fully incorporated and the sauce has thickened.
Allow to cool slightly before serving

Rice Pudding
Ora Ellen Rudd (Grandmother)
1/2 cup uncooked rice
3 cups low-fat (2%) milk
2 tablespoons butter
3 large eggs
1/2 cup sugar
1/2 tsp. salt
1/8 tsp. nutmeg
1 tsp. vanilla
Top with Cinnamon sugar
¾ raisins (optional)**
Cook rice, rinse slightly, mix in raisins** and spoon into buttered 6 cup casserole dish.
Scald milk with butter in a small saucepan.  Beat eggs slightly with sugar, salt, nutmeg, and vanilla in a mixing bowl. Add to milk and butter mixture.
Pour mixture over rice.  Pour slowly!!! Place casserole in center of oven shelf. Bake  325 degrees for 50 to 60 minutes or until almost set but soft in center.  Custard will set as it cools. Top with Cinnamon sugar. 
Note:  Serve warm or chilled.  Yummy!!!
( I waited until mine was completely cooled and refrigerated until I served mine). It's hard to wait but the custard sets so much better when you let it cool.
Serves about 4;
Recipe can be doubled or even tripled for large gatherings.

HAMBURGER MACARONI AND CHEESE
Ingredients:
1½ to 2 lbs. Ground Chuck Burger
½ to ¾ Box of Macaroni Noodles, your choice; Shells or Elbows
8 Slices Kraft cheese
1 ½ to 2 cups shredded Mexican Cheese, according to your liking. More can always be added if it's not cheesy enough for you.
1¼ cup Milk, *You may need to add a little more milk. Enough to make it creamy.*
Optional Ingredients:
½ to ¾ cup diced onion
½ to ¾ cup diced bell pepper
Use more or less to your liking.
Directions:
Brown burger, if you're going to use any other ingredients such as onions or peppers, put them in with your burger and cook them with it until they are fork tender. Drain grease from burger and veggies and set aside. Cook noodles and drain. Add noodles, burger, milk, and cheese together in a large skillet and cook on low to medium heat until the cheese is completely melted and the mixture is creamy. Add seasonings of your choice. And mix well to fully incorporate into mixture.
Serves about 6
Recipe can be adjusted to serve more

Mike's Juicy Lucy's
(Stuffed Burgers)
For 1 burger:
2 -¼ pound hamburger patties
½ slice Flavored cheese, folded into a small square. We use pepper jack.
Layer together as follows:
1 - Burger
2 - Cheese square
3 - Burger
Working with both hands work the burger together on the edges to make one burger.
Place on griddle and cook slowly until burger is completely done. Turning often.
Repeat for as many burgers as needed.
Garnish as you would any hamburger and enjoy.

Chicken Cordon Blue Casserole
________________________
4 boneless chicken breasts boiled, then cut into small bite-size pieces or shredded your choice.
2 boxes Stove Top chicken flavor Stuffing
1½ cups diced Ham
2 cans cream of Mushroom soup
3 cans of water
½ cup Blue cheese crumbles
2 tsp. Grey Poupon mustard
½ stick butter sliced into pats
Opt... ½ cup chopped onion
Mix all ingredients in a large mixing bowl and transfer to a 9x13 casserole dish.
Place butter pats on top of the mixture.
Bake in a preheated 400°F oven for 35 to 45 min or until the top is slightly browned. 
Opt... sprinkle top with shredded cheese of your choice and return to oven for approximately 10 min. before serving.

PASTA SALAD
1 box of tricolor rigatoni noodles, cooked
2 cucumbers diced without seeds
1 green bell pepper seeded and diced
1 red bell pepper seeded and diced
1 small pkg. Diced ham
Mix all ingredients in a large mixing bowl. Add the following dressing.
4 to 6 heaping tablespoons Dukes mayonnaise
3 to 4 tablespoons sugar (according to your taste)
Salt to taste
Pepper to taste
Creole seasoning to taste
2 tablespoons white vinegar
Just enough milk to make it creamy. Do not overdo the milk. It will turn out too runny. Adjust sugar and seasonings accordingly. (Add more if you need to or like)
***If you add too much milk, add more mayonnaise to thicken and mix until fully incorporated.***

8oz. Creamy Peanut Butter
1 Graham Cracker Crust
Chocolate Syrup **
Mix Cheesecake Filling and Peanut Butter until well incorporated.
Spread in Graham Cracker Crust.
Drizzle with Chocolate Syrup if desired.
Refrigerate to chill.

The Bible According To A Child
A child was asked to write a book report on the entire Bible. This is amazing and brought tears of laughter to my eyes.
In the beginning, which occurred near the start, there was nothing but God, darkness, and some gas. The Bible says, the Lord thy God is one, but I think He must be a lot older than that.
Anyway, God said, 'Give me a light!' and someone did. Then God made the world.
He split the Adam and made Eve. Adam and Eve were naked, but they weren't embarrassed because mirrors hadn't been invented yet.
Adam and Eve disobeyed God by eating one bad apple, so they were driven from the Garden of Eden. Not sure what they were driven in though, because they didn't have cars.
Adam and Eve had a son, Cain, who hated his brother as long as he was Abel.
Pretty soon all of the early people died off, except for Methuselah, who lived to be like a million or something.
One of the next important people was Noah, who was a good guy, but one of his kids was kind of a Ham. Noah built a large boat and put his family and some animals on it. He asked some other people to join him, but they said they would have to take a rain check.
After Noah came Abraham, Isaac, and Jacob. Jacob was more famous than his brother, Esau, because Esau sold Jacob his birthmark in exchange for some pot roast. Jacob had a son named Joseph who wore a really loud sports coat.
Another important Bible guy is Moses, whose real name was Charlton Heston. Moses led the Israel Lights out of Egypt and away from the evil Pharaoh after God sent ten plagues on Pharaoh's people. These plagues included frogs, mice, lice, bowels, and no cable.
God fed the Israel Lights every day with manicotti. Then he gave them His Top Ten Commandments.
These include: don't lie, cheat, smoke, dance, or covet your neighbor's stuff.
Oh, yeah, I just thought of one more: Humor thy father and thy mother.
One of Moses' best helpers was Joshua who was the first Bible guy to use spies. Joshua fought the battle of Geritol and the fence fell over on the town.
After Joshua came David. He got to be king by killing a giant with a slingshot. He had a son named Solomon who had about 300 wives and 500 porcupines. My teacher says he was wise, but that doesn't sound very wise to me.
After Solomon there were a bunch of major league prophets.
One of these was Jonah, who was swallowed by a big whale and then barfed up on the shore. There were also some minor league prophets, but I guess we don't have to worry about them.
After the Old Testament came the New Testament. Jesus is the star of The New. He was born in Bethlehem in a barn. (I wish I had been born in a barn too, because my mom is always saying to me, 'Close the door! Were you born in a barn?' It would be nice to say, 'As a matter of fact, I was.')
During His life, Jesus had many arguments with sinners like the Pharisees and the Democrats.
Jesus also had twelve opossums. The worst one was Judas Asparagus. Judas was so evil that they named a terrible vegetable after him.
Jesus was a great man. He healed many leopards and even preached to some Germans on the Mount.
But the Democrats and all those guys put Jesus on trial before Pontius the Pilot. Pilot didn't stick up for Jesus. He just washed his hands instead.
Anyways, Jesus died for our sins, then came back to life again.
He went up to Heaven but will be back at the end of the Aluminum. His return is foretold in the book of Revolution.

Banana Split Pie
Note: This recipe makes 3 pies
Ingredients:
3 graham cracker crust
1 container Philadelphia No Bake Cheesecake Pie Filling
2 sm. Boxes Banana Cream Pudding
3 Cups Milk
Bananas
1 8oz container Cool Whip
Chipped Pecans for garnishing
Maraschino Cherries for garnishing
Chocolate Syrup
Caramel Syrup**
Mix:
Mix both boxes of Banana Cream Pudding with ONLY 3 cups of milk and mix until set.
Step 1
Layer Accordingly:
1: Cheesecake Filling
2: Sliced Bananas
3: Banana Cream Pudding
4: Sliced Bananas
5: Cool Whip
Step 2
Garnish as follows:
1: Maraschino Cherries
2: Chipped Pecans
3: Drizzle Chocolate Syrup
4: Drizzle Caramel Syrup**
** This is optional **
Repeat steps 1 and 2 until all 3 pies are complete.
Refrigerate pies to chill before serving.

Famous Fudge
INGREDIENTS:
1 1/2 cups granulated sugar
2/3 cup (5 fl.-oz. can) NESTLÉ® CARNATION® Evaporated Milk
2 tablespoons butter or margarine
1/4 teaspoon salt
2 cups miniature marshmallows
1 1/2 cups (9 oz.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1/2 cup chopped pecans or walnuts (optional)
1 teaspoon vanilla extract
INSTRUCTIONS:
LINE 8-inch-square baking pan with foil.
COMBINE sugar, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes.
Remove from heat.
STIR in marshmallows, morsels, nuts and vanilla extract. Stir vigorously for 1 minute or until marshmallows are melted. Pour into prepared baking pan; refrigerate for 2 hours or until firm. Lift from pan; remove foil. Cut into 48 pieces.

Peach Fluff
This peach fluff is a potluck staple featuring a mixture of juicy peaches, pecans, and marshmallows, all coated in a creamy peach-flavored dressing.
Ingredients
8 ounces cream cheese, softened
1¼ cups powdered sugar
8 ounces whipped topping, thawed
3 ounces peach-flavored gelatin
30.5 ounces canned sliced peaches, drained and diced (or 5 to 6 fresh peeled, pitted, and diced)
2½ cups mini marshmallows
½ cup finely chopped pecans
Instructions
Using a medium-sized mixing bowl and a handheld mixer on medium-high speed, beat together the softened cream cheese and powdered sugar for 1½ to 2 minutes, until smooth.
Whisk in the thawed whipped topping and peach-flavored gelatin.
Fold in the drained and diced peaches and mini marshmallows. Tightly cover and chill in the refrigerator for 2 hours.
Just before serving, fold in the chopped pecans. Serve chilled.
Notes
If you are using fresh peaches, toss the peaches in 1 tablespoon of lemon juice beforehand.
Make sure the cream cheese is at room temperature so that you don’t have lumps in the creamy dressing.
Stir all the ingredients together carefully as you don’t want to break apart the fruit pieces.
For best results, make sure you give your salad at least 1 hour of chilling time. It allows all of the yummy flavors to blend together.

Betty's Chocolate Fudge
Ingredients:
3 cups sugar
4 Tablespoons chocolate milk mix
1 stick of salted butter
1 can of Evaporated Milk
1 teaspoon of vanilla
2 or 3 heaping tablespoons peanut butter
nuts (optional)
How To Make Betty's Chocolate Fudge:
Step 1: Mix sugar and chocolate milk mix in a saucepan, then add a stick of butter, vanilla and the can of evaporated milk and stir until the mixture starts boiling.
Step 2: Stir continuously, let cook until mixture is at softball stage,  remove from heat.  Working quickly because mixture will set up, add peanut butter and nuts and stir until all incorporated.  Pour into a buttered dish and allow to set.
Step 3: Voilà! There you have it, delicious fudge in less than 20 minutes! Enjoy!!!
