Cinnamon roll cake - recipe from The Country Cook.

This was another big hit and wonderful for a sweet breakfast treat or an after dinner dessert. Pour on the glaze while the cake is still warm so it soaks in and creates an amazing texture and flavor... especially those corners!

Cake mix cookies. SO simple and SO delicious. Grab your favorite cake mix flavor, add two eggs, 1/2 cup melted butter or oil, any fun mix ins and bake! Seriously, how could I get any easier!?

S'mores whoopie pies!

Well I tried another variant of a whoopie pie and had much more success this time around. These have a graham cracker cookie with a chocolate ganache (well supposedly, mine was more like cement) and a light and fluffy marshmallow cream. I highly recommend you try out this recipe from eazypeazymealz.

I tried to make cake box whoopie pies and I will be honest, the two pictured here....are the only two that survived the massacre. And not in a good way. The cakes were so soft and the filling was so stiff that they just kept ripping and tearing. So I mostly ended up with some strawberry flavored, very cake like, cookies. They were tasty and my guinea pigs didn't mind but I was a bit disappointed. I am looking for a new whoopie pie recipe to try if anyone has one!

I made two different versions of a cookies and cream cookie over the weekend.

The first try was with instant chocolate pudding (because I couldn't find cookies and cream pudding), white and milk chocolate chips and oreo cookies. They weren't bad but I didn't love them.

Second try included cookies and cream chocolate bars and oreo cookies.

They were awesome! My boyfriend was so disappointed that we had to share them and has already asked me to make more.

These blueberry lemon cookies were a HUGE hit. The flavors are amazing together and they are so soft and light. I couldn't find lemon extract anywhere so I increased the fresh lemon juice to 4 Tbls. Also, make sure you zest your lemon before cutting it in half to squeeze it....oops! Find the recipe at infinetaste.com and tell me what you think!

Welp....I forgot the salt. You could absolutely tell and even a nice slather of salted butter couldn't help it out. This was probably the easiest recipe for biscuits that I have ever seen so check it out...and don't forget the salt! You'll love the texture and ease of this biscuits!

Tried my hand at some nontraditional airfryer eggrolls. One is filled with taco goodness (ground turkey, cheese, corn, peppers and onions) as well as a steak one with peppers and onions.

The shell did not get as crispy as if you would fry them in oil but they did conquer a craving.

Do you have any airfryer tips or tricks?

The shortbread was a bit dry for me but I was told over and over how good these bars were! Easy and delicious is always a win!

Snacking can be simple, easy and delicious. Tonight I topped some Ritz Crackers with a light spread of cream cheese and a small drop of pepper jelly.

The pepper jelly I had in my fridge was unopened and from well over a year ago (A time when my boyfriend could drunkenly buy things at festivals if that tells you anything 🤣).

Cream cheese cookies tonight for a pretty simple, sweet treat! They do not look like the recipe at all but I'm pleased with how they turned out. Dont skip refrigerating the dough as it does get sticky fast while working with it.

Irish Coffee Stout cupcakes with Irish Cream frosting. I will be honest, it wasn't my favorite. The beer was expectedly on the bitter side which took away sweetness from the cake though they were moist and light. The frosting...that was just a disaster. I've never made buttercream before and quite frankly, after that, I don't want to try again. It was SO bad. Does anyone have any tips and tricks for a nice buttercream for beginners?

Sometimes you just throw things together and it turns out alright. Unfortunately I don't measure much.

Boneless skinless chicken breast

8 Oz cream cheese

1 cup chicken broth

1/3 cup pesto

Salt and pepper to taste

Frozen veggies

Cook up the chicken until the exterior is white and add chicken broth. Continue cooking until broth is warm. Add cream cheese in cubes. It will act as if it doesn't want to incorporate at first. Be patient and don't stress. This will take some time. While this is cooking down, steam the vegetables (I chose peas and broccoli) and cook your pasta. Once the cream cheese is fully incorporated add the pesto and stir in. Your sauce should be thicker at this point, if it is not, cook down a but more. Enjoy hot!

I know that everyday can't be a gourmet meal. I know that some weeks seem to drag on FOREVER. Don't be discouraged and don't beat yourself. Enjoy yourself some Mac & Cheese with the powdered cheese sauce like you were a kid and relax. You deserve it!
