Gluten-free vanilla cake 🍰
Ingredients
-2 cups of gluten-free flour (oat, corn, rice)
-1 cup of almond/peanut flour
-1 1/2 cup of sugar
-1/2 scoop of vanilla protein powder
-2 eggs
-1 mashed banana
-1 cup softened margarine(coconut, sunflower oil)
-3/4 cup of vanilla soy yogurt + 1/4 cup of water
-1 tsp of vanilla scent
-1 1/2 tsp of baking powder
Preparation
1) Mash the banana and add two eggs, mix well. Start adding the sugar slowly alongside with the margarine, until the mixture is creamy enough. Mix the dry ingredients separately.
2) Preheat the oven at 180 Celsius degrees, grease two small baking bowls.
3) Combine the dry ingredients with the wet, (slowly) alternating it with the yogurt+water. At the end, add the vanilla scent. The final mixture should be not too thick and pretty much uniform.
4) Bake at 180 C for 30-35 minutes, until the edges are golden brown and a toothpick comes out clean.
*For a vegan 🌱 version, try substituting the 2 eggs with another whole banana or flax eggs and the protein powder with a plant-based one.
