Get into the Halloween spirit with these adorable mummy cookies! A buttery sugar cookie base decorated with royal icing bandages and spooky candy eyes.
Ingredients: 2 1/2 cups all-purpose flour. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 3/4 cup unsalted butter, softened. 1 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. Royal icing white and black. Edible candy eyes.
Instructions: In a bowl, whisk together flour, baking powder, and salt. In another bowl, cream together softened butter and granulated sugar until smooth. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms. Divide the dough in half, flatten each half into a disk, wrap in plastic wrap, and chill for at least 1 hour. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Roll out one disk of dough on a floured surface to about 1/4 inch thickness. Use a mummy-shaped cookie cutter to cut out shapes and transfer them to the prepared baking sheet. Bake for 10-12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Once the cookies are completely cool, use white royal icing to pipe mummy bandages onto each cookie. Attach edible candy eyes onto the bandages using a small dab of royal icing. Use black royal icing to pipe small dots for the mummy's eyes and mouth. Allow the icing to set before serving or storing the cookies.

Ingredients: 1 lb boneless, skinless chicken breasts, diced. 1 onion, diced. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 2 cloves garlic, minced. 1 can 14 oz diced tomatoes. 1 can 15 oz black beans, drained and rinsed. 1 cup frozen corn kernels. 4 cups low-sodium chicken broth. 1 teaspoon chili powder. 1 teaspoon cumin. 1/2 teaspoon smoked paprika. Salt and pepper to taste. Juice of 1 lime. Fresh cilantro, chopped, for garnish. Optional toppings: sliced avocado, low-fat Greek yogurt.
Instructions: Diced chicken should be cooked through and browned in a large pot. Cut up some onions, bell peppers, and garlic and add them to the pan. Cook the vegetables until they get soft. Tomato dice, black beans, frozen corn, and chicken broth should all be added. Add salt, pepper, chili powder, cumin, and smoked paprika to taste. Bring to a low boil. Allow the flavors to blend by letting the soup simmer for 15 to 20 minutes. Add the lime juice right before you serve. Serve hot with chopped cilantro on top. These black bean falafels are vegan and crispy. They are full of flavor and protein. They are a tasty and healthy alternative to regular falafel, and they are simple to make!
Ingredients: 1 can black beans, drained and rinsed. 1/2 cup chopped cilantro. 1/2 cup chopped parsley. 1 small onion, chopped. 3 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1/2 teaspoon paprika. Salt and pepper to taste. 1/4 cup chickpea flour or other flour of choice. 2 tablespoons olive oil.
Instructions: Warm the oven up to 190C 375F. Black beans, cilantro, parsley, onion, garlic, cumin, coriander, paprika, salt, and pepper should all be put in a food processor. Pulse until everything is well mixed but still has some chunks. Put the mixture in a bowl and add chickpea flour. Mix the two together until the mixture sticks together. Put the mixture on a baking sheet that has been lined with parchment paper. Then, roll your balls or patties out of it. Cover the falafel in olive oil. Bake for 20 to 25 minutes, turning the falafel over once, until it is golden brown and crispy. Warm it up and serve it with your favorite sauce or in a pita with some vegetables.

Salt and pepper to taste. Fresh parsley, chopped, for garnish.
Instructions: Preheat oven to 350F 175C. In a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant. Add shredded chicken to the skillet and season with salt and pepper. Cook for 2-3 minutes. In a mixing bowl, combine the cooked chicken, ricotta cheese, 1/2 cup mozzarella cheese, and 2 tablespoons Parmesan cheese. Mix well. Ingredients: 8 oz pasta of your choice. 2 tablespoons olive oil. 3 cloves garlic, minced. 1 small onion, finely chopped. 8 oz wild mushrooms, sliced such as shiitake, oyster, or cremini. 4 cups chopped bok choy. 1/4 cup vegetable broth. 1 tablespoon soy sauce. 1 teaspoon sesame oil. Salt and pepper to taste. Red pepper flakes for garnish optional. Fresh parsley, chopped, for garnish optional.
Instructions: Cook pasta according to package instructions. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped onion.
