These Easy Shortbread Cookies are a classic favorite that everyone will love. With just a few simple ingredients, you can create buttery, melt-in-your-mouth cookies that are perfect for any occasion. This recipe is brought to you by This Mom's Confessions.
Ingredients: 1 cup 2 sticks unsalted butter, softened. 1/2 cup granulated sugar. 2 cups all-purpose flour. 1/4 teaspoon salt. 1 teaspoon pure vanilla extract.
Instructions: Preheat your oven to 325F 160C and line a baking sheet with parchment paper. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the vanilla extract and mix until well combined. Gradually add the all-purpose flour and salt to the mixture, stirring until a dough forms. Be careful not to overmix; stop as soon as the dough comes together. Transfer the dough to a lightly floured surface and gently knead it a few times to bring it together. Roll out the dough to about 1/2 inch 1.25 cm thickness. You can use a rolling pin for this step. Use cookie cutters to cut out your desired shapes and place them on the prepared baking sheet. Alternatively, you can shape the dough into rounds or squares using your hands. Prick the tops of the cookies with a fork to create a decorative pattern. Bake in the preheated oven for 12-15 minutes or until the edges of the cookies are lightly golden. Keep a close eye on them as shortbread cookies can quickly go from golden to overbaked. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once the cookies are completely cooled, store them in an airtight container. They will keep well for several days. Enjoy your homemade Easy Shortbread Cookies!

This recipe for buttermilk fried chicken makes chicken that is perfectly crispy, flavorful, and tender on the inside. The buttermilk marinade makes sure the meat is juicy and tender, and the seasoned flour coating makes the crust deliciously crunchy.
Ingredients: 1 whole chicken, cut into pieces. 2 cups buttermilk. 1 cup all-purpose flour. 1 teaspoon salt. 1 teaspoon black pepper. 1 teaspoon paprika. 1 teaspoon garlic powder. 1 teaspoon onion powder. Vegetable oil for frying.
Instructions: Place chicken pieces in a large bowl, pour buttermilk over them, cover, and refrigerate for at least 4 hours or overnight. In a shallow dish, mix together flour, salt, pepper, paprika, garlic powder, and onion powder. Remove chicken from buttermilk and dredge each piece in the flour mixture, shaking off excess. Heat vegetable oil in a large skillet or Dutch oven over medium-high heat until it reaches 350F 175C. Carefully place chicken pieces in the hot oil, making sure not to overcrowd the pan. Fry chicken in batches, turning occasionally, until golden brown and cooked through, about 15-20 minutes per batch. Transfer fried chicken to a paper towel-lined plate to drain excess oil before serving.

Make your own creamy and dairy-free coconut yogurt with just two simple ingredients. This yogurt is perfect for those who are lactose intolerant or vegan. It's incredibly easy to prepare and tastes amazing!
Ingredients: 2 cups of coconut milk. 2 tablespoons of yogurt starter culture.
Instructions: In a saucepan, heat the coconut milk slowly until it reaches 110F 43C. Take the pan off the heat and let it cool down until it reaches about 105F 40C. To make a smooth paste, put 2 tablespoons of the yogurt starter culture and 2 tablespoons of the warmed coconut milk in a small bowl. Mix the paste back into the rest of the coconut milk really well. Put the mix into a glass jar with a lid that is clean and germ-free. For 6 to 8 hours, leave the jar in a warm, dark place with a lid or a cloth on top of it. It will get more sour as it ferments for longer. Once the fermentation time is up, put the coconut yogurt in the fridge for at least 4 hours to cool down and get thick. You can top your tasty coconut yogurt with fresh fruit, honey, nuts, or anything else you like. Have fun!
