Does Doc's assistant guy from your video have a name/moniker or any relevant lore? (I know who he and Doc's designs are based on and it pleases me immensely heheh, I just figure going off your established lore that these characters are meant to be their own entities beyond their sources of inspiration)

That's correct, while the characters are based on real people, they should be seen more as roles they've been sort of cast as, as opposed to accurate representations of the real them!
In the assistant's case, his name is Ernest and he's way out of his depth here. Doc dedicated years of their life to studying the occult, and Ernest did not. He kind of doesn't even assume that this reanimation stuff will work at all, he'll believe it when he sees it. Plus, Doc is being all mad-scientist like about it and that doesn't make him feel any better about the whole ordeal.
HOWEVER he is one of two people Doc has ever made a connection with (the other being Laa) and is determined to stick around to help them (and to help Laa?). I assume they were like, college roommates and they just thought of him and called him back after a few years of silence to help sjnsjsjs. He was probably having a normal career in film school before this event and will try to get back to it afterwards. Unless you believe the rumors of him having training as a combat exorcist from an internship at the Vatican, and if that were the case, he probably cleaned up after some of Doc's occult ritual malpractice. But, these are simply rumors and we just can't say.
His way of getting into the cemetery undisturbed was by bribing the night keeper with shady record label money.

Doc's family portraits from my Lifetime Achievement Award music video. Their lineage goes way back, and they're slowly collecting these. 4/5 of them are NKOTR references and the fifth is the only easter egg of unrelated media: Nosramus Fear & Hunger being related to Doc (by their vibes matching so perfectly) is a personal in-joke I can't let go of
These are quite rough because they're not meant to be looked at in full size but I do really like them :)

Does Doc have any specific preferences for fashion? Like certain styles of clothing, certain types of fabric, types of fit, etc.
I don't know a lot of fashion-related words but I can say Doc's looks are very fluid.
When they were younger they used to dress up more stereotypically goth with a lot of black and studded accessories but nowadays they almost never go for that archetype, and have become completely unpredictable. There's like an entire spectrum. On one hand you have a "classy vampire" look, both masc and femme options are valid, from classic Dracula to Lady Dimitrescu, though they will typically add dashes of color to that style with some tacky feathered boa or shiny boots. They dress this way for important occasions but some of these items can randomly appear in their day to day outfits too.
The labcoat is part of their casual wear and they'll sometimes even wear it on the beach and similar odd places if I find it funny \:) On the other end of the spectrum you have a more rustic, dishevelled look with weathered boots, pants with many pockets, sweaters and a trench coat. They famously dressed this way while they were running their first revival experiments out of a shed in the woods. They don't often go for this style anymore but the trenchcoat and big boots get to stay.
Boots (be they leather stilettos or military style) and a varyingly long bell-shaped top that can flare out below the waist (be it a trenchcoat, a dress or their labcoat) are the two fundamental parts of most classic doc outfits now that I think about it.

How tall is Doc? (if you can't tell us their exact height, how tall are they compared to LAA?)
Doc is shorter than Laa :) (a lot of people are) Laa is like 6 ft tall and they're roughly 2-3in shorter! They sometimes appear taller than that because they wear high heels frequently. [edit I had said that Doc was a head shorter than Laa originally, but that was way too short]

What is the EAMGSA?
The EAMGSA (Evil-and-Morally-Grey-Scientists-Association, better name forever pending) is a powerful underground council of evil and morally grey scientists that build monsters, undead armies, absurd diseases, death rays and everything else evil and morally grey to their hearts' content. It is made out of ridiculous cheesy cartoon villains, a definition that includes not just mad scientists but also among other things, necromancers, alchemists, the occasional alien, and any kind of occult dabblers. At the same time it also acts as a research fund. They appear to have infinite money between the lot of them and if you need funding for your death beam project, you can submit a proposal to them. There's also a huge roster of willing interns, junior researchers and aspiring minions just waiting for their chance to take part to some big evil breakthrough.
The meta rule for the EAMGSA is that their villainy is ALWAYS toony and somewhat ineffectual. They have so many monsters and calamities ready to wreak havoc but outside the walls of their council they are always heroically stopped in the end, or just build things for the sake of it and call themselves "evil" but have no desire to take any lives. They're more about advancing mad science than actually applying it. Anyone Realistically Evil such as an oil tycoon would raise eyebrows within the EAMGSA and they would not be accepted. Doc was not EAMGSA-funded but their successful revival of Laa made them a (sometimes begrudgingly) respected member of theirs and this allows them to get pretty much continuous funding from them as well as direct support on Laa-related matters. Laa, while not necessarily respected by EAMGSAists as a person, is a zombie that retained a lot of his old self and this makes him an interesting case study that they're invested in keeping alive.
