My Cheese Steak sandwich with tempeh and vegan cheese may look a mess but it was delicious. My ego is a little hurt though because this continues the narrative that I’m the worst at cooking my own vegan dishes. So far nothing I’ve tried (tofu, jackfruit, tempeh, etc.) has even slightly resembled (let alone taste) meals I’ve eaten out. It baffles me as to why I would have chosen a certain course of action or another, except that I seemingly must have had blinders on and been only concerned with my own self-interests and not bothered to even consider the ripples my actions would generate upon others. Of course nowadays I believe that Karma has moved in to find ways to even the scales of my ledger --- one single relentless cut at a time. ⠀ ...⠀ As I've grown and matured (re: gotten older), I strive to keep open my eyes and widen my view to consider that my actions do not happen in a vacuum - others are affected either directly or indirectly.
