Everything was fully vegan (I'm not vegan, but some friends are) AND homemade! I couldn't have done it without the help of my partner. All the food was gone and it was really nice to have my friends over!

Ingredients
Keto Zucchini Bread
1/2 cup Unsalted butter (or coconut oil for dairy-free; softened)
2/3 cup Besti Monk Fruit Allulose Blend
3 large Eggs
1 tbsp Lemon juice
1 tbsp Lemon zest (optional)
1 tsp Vanilla extract
2 cups Wholesome Yum Blanched Almond Flour
2 tsp Baking powder
1/4 tsp Sea salt
1 1/2 cups Zucchini (grated)
1 cup Blueberries
Lemon Glaze
1/4 cup Besti Monk Fruit Allulose Blend
1 tbsp Lemon juice
Instructions
Grate the zucchini first and set over the sink to drain while preparing other ingredients.
Preheat the oven to 325 degrees F (163 degrees C). Line a 9x5 in (23x13 cm) loaf pan with parchment paper. (You can use foil, but grease well.)
In a large bowl, use a hand mixer to beat together the butter and Besti, until fluffy.
Beat in the eggs, lemon juice, lemon zest (if using), and vanilla extract.
Beat in the almond flour, baking powder, and sea salt.
Wrap the grated zucchini in cheesecloth or several layers of sturdy paper towels. Squeeze over the sink to release as much moisture as possible. Stir the grated zucchini into the bowl, and mix well.
Fold the blueberries into the batter.
Transfer the batter to the prepared pan. Smooth the top with the back of a spoon, rounding the top slightly. Bake for 60-70 minutes, until an inserted toothpick comes out clean. Cool completely in the pan.
To make the glaze, whisk together the lemon juice and Besti. (Unlike most, Besti will dissolve easily, even if it's not powdered.) Drizzle the glaze over the bread.

Nimrah is back, which means I have an excuse to do a lot more baking, and I thought a nice light loaf like this would be a perfect, welcoming pick.
I made about 2/3 of this, skipping the optional macadamia nuts and using frozen blueberries, a must (in my opinion) for them to maintain their sweetness. As far as instructions go, this was a pretty straightforward baking venture — dry, wet, and then into the loaf tin we went.
From now on I really am going to have to just automatically top with tinfoil any kind of baked item with serious surface area before it goes into our oven. True to form, the top cooked far faster than the rest of the loaf did, taking I think almost an hour and a half before I felt it was finally baked enough to pull.
And after all of that, I have to admit that I was pretty disappointed with this recipe. I should have known that by using almond flour, I was never quite going to get the texture I truly wanted, but this was pretty dry and not at all sweet. I definitely could have doubled the amount of honey (had it not an effect on the consistency of the batter) and would certainly recommend serving with additional honey and/or plenty of butter.
I have so many other blueberry/coconut/lemon loaves saved that I don't think I'll ever feel the need to return to this one. It was pretty unremarkable and borderline tasteless, overall a disappointment.

Recipe below (page 23 in the book Snackable Bakes) :
Blackberry Lemon Yogurt Loaf Cake
MAKES ONE 8%-BY-4½-INCH LOAF CAKE
ACTIVE TIME: 10 MINUTES
BAKE TIME: 60 TO 70 MINUTES
Ingredients:
Cooking spray or softened unsalted butter for pan
2 tablespoons lemon zest, from about 2 lemons
1 cup (200 g) granulated sugar
½ cup (118 ml) vegetable oil
3/4 teaspoon vanilla extract
2 large eggs, at room temperature
2 tablespoons freshly squeezed lemon juice
½ cup (120 g) whole-milk yogurt, at room temperature
2 teaspoons baking powder
¼ teaspoon kosher salt
1½ cups (195 g) all-purpose flour
1½ cups (195 g) blackberries, fresh or frozen, roughly chopped
Turbinado sugar for sprinkling
Variations: For Blueberry Lemon Yogurt Loaf Cake, substitute blueberries for the blackberries-no need to chop them. For Cherry Almond Yogurt Loaf Cake, substitute quartered cherries-sour or sweet-for the blackberries. Omit the zest and juice; reduce the vanilla to ½ teaspoon and add ¾ teaspoon of almond extract.
Directions:
Heat the oven to 350°F. Grease an 8½2-by-4½-inch loaf pan with cooking spray or softened butter. Line the bottom with a long sheet of parchment paper that extends up and over the long sides of the pan (like a cradle for your cake).
Rub the lemon zest into the granulated sugar with your fingers in a large bowl until fragrant. Whisk in the oil and vanilla for 30 seconds. Whisk in the eggs, one at a time, and then the lemon juice and yogurt. Sprinkle the baking powder and salt into the bowl, one at a time, vigorously whisking after each. Gently fold in the flour just until a few streaks remain. Fold in 1 cup (130 g) of the berries. The batter will be lumpy.
Scrape the batter into the prepared pan, smooth the top, and arrange the remaining ½ cup of berries over the top of the loaf. Lightly sprinkle with turbinado sugar and bake for 60 to 70 minutes, rotating at the halfway point. The cake is done when a wooden skewer inserted into the center comes out with a moist crumb or two. Remove from the oven and let cool in the pan for about 20 minutes, or until you can safely lift the cake out by the parchment overhang without burning yourself. Run a butter knife around the edges of it resists. let cool to room temperature before slicing and serving. Keep the cake, wrapped, on the counter for up to 3 days.
For mine (below) I used table salt since I couldn’t find kosher salt. I also went with the Blueberry variation of the recipe.
