For years, Karla Cruz has searched New York City for dishes reminiscent of her childhood in Panama, like sancocho, tamales and carimañolas, but there was nothing that emulated those foods she loved. So she promised herself that if there was ever an opportunity, she’d open her own Panamanian restaurant.
In New York City, where the national dishes of so many countries are available, Panamanians living here have been surprised at the scarcity of restaurants serving their cuisine. This challenge has inspired restaurateurs to fill that gap in recent years.
“I wanted something that would transport me back to Panama,” said Ms. Cruz, 45, in Spanish. She opened KC Gourmet Empanadas on the Lower East Side in 2019 and El Carnaval next door in 2021.
There are about 210,000 Panamanians living in the United States, according to the Pew Research Center, and about 35,000 of them call the state of New York home. Despite this, it’s been a struggle to find restaurants serving their cuisine, especially after the renowned Panamanian Kelso Bistro and Bar in Crown Heights, Brooklyn, closed in 2017 after 55 years.

Mario E. Castrellón, the chef and owner of Maito in Panama City and several other restaurants in Panama said that Panamanian food is still relatively unknown in the United States.
There are a few upscale restaurants pushing the boundaries of the cuisine, Mr. Castrellón said, but chefs are still defining what Panamanian food means.
Panamanian dishes can share similar names and techniques with other Latin American ones, but their flavors and use of ingredients can vary, and can include the influences from Chinese, Arab, African and Caribbean cuisines that made their way into the country with the workforces that built the Panama Canal. “We’re a melting pot of flavors,” he said.
For Ms. Cruz, who found some familiar flavors at Kelso Bistro, decided to put the food that she grew up with as a child on the menu at her restaurants.

At KC Gourmet, she initially served empanadas made with corn dough and fillings like spicy cheese or ground beef with raisins. After her mother and children later suggested other flavors, like mushroom or pulled pork, Ms. Cruz expanded the menu to include more than 50 types of empanadas. But her traditional Panamanian menu has not changed, with dishes like carimañolas, a stuffed yuca dish. She’s worked with distributors to find the herb culantro and the root vegetable named ñame, she said, for her Panamanian sancocho, a traditional chicken soup.
One of her most popular items is her mother’s corn tamales steamed in banana leaves. It can take up to five days to make about 100 of them. (Her mother is such a perfectionist that she and Ms. Cruz have argued with each other while making them.)
Three months after Ms. Cruz opened her first restaurant, Ronaldo Nimbley and his wife, Fatima Barrios De Nimbley, opened Nimbley Bakery in Richmond Hill, Queens. The couple spent eight months in their apartment kitchen testing at least 30 versions of a recipe for their best-selling rosca, a wreath-shaped Panamanian bread.

Mrs. Nimbley developed a passion for the bread when she tried hunting down an authentic rosca for Christmas when she and Mr. Nimbley first moved to New York City in 2013. She couldn’t find one and settled on a Mexican-style version instead.
“It’s sad that there was no Panamanian bread,” Mr. Nimbley, 42, said in Spanish. “It wasn’t what we wanted, but that’s what there was.”

Her dedication to perfecting the recipe got serious in 2019 when Mr. Nimbley began culinary school. (He’s now a chef at the Aman New York hotel in addition to baking at Nimbley.) In a notebook, the couple cataloged tweaks to ingredients like the flour and water until they landed on something that was sweet and would stay soft for days, especially for shipping the bread.
During the holidays and Panamanian Mother’s Day in December, they have been inundated with hundreds of orders in New York and 35 other states.
Mr. Nimbley said that when Panamanians find the bakery they’re often in disbelief and have cried when they taste the bread, excited that finally, they have something that reminds them of home.
“This bakery came from the sacrifices and the sadness we had of not having our bread from Panama,” he said in Spanish.

A Meal Full of Tears
She burst into tears as I pick up my order. The restaurant is struggling to survive and like many others, they are on the verge of bankruptcy. And as the pandemic gets worst, our government continues to impose more restrictions on them. Surely this lady is having a breakdown.
It all started with a discussion about how my friend and I missed hanging out together for lunch, discovering nearby restaurants that we’ve never been in towns of Markham and Richmond Hill. We usually go for simple Asian cuisines, like Hong Kong style cafes for their wonton noodles or lunch specials. Right before all this chaos, we found a place that specializes in a chicken dish braising in a traditional Chinese ceramic pot. Yang’s Braised Chicken Rice was the name and it was busy during lunchtime. Those succulent chicken bones full of juicy flavour just couldn’t stop my friend and I indulging our meal. My friend loved it so much that she purchased their VIP membership card for a 10% discount every time we go there. We went there once a week for the first month and then COVID-19 hit us. We haven’t been there since.
One night during the first lockdown, I was craving for those birds. I usually do a pick up order using Ritual, but Yang’s wasn’t available on the platform. I’ve been resistant using delivery apps like Uber Eats and Skip The Dishes, hearing negative news about how they charge restaurants up to 30% fees. Luckily, Yang’s has their own online ordering system that I can pay at the restaurant. I ordered my braised chicken with potatoes and added sliced beef and ox tongue as a side for a total of $22.57. Have I order thru the delivery apps, my dinner would have cost $34.54 plus a $6 tip by default, totalling a price of $40. I’ve done the math and these apps don’t seem to support restaurant businesses.
When I got there to pick up my order, chairs were flipped on top of tables, barricading the path like a labyrinth to ensure a six feet social distancing. I squeezed the bottle to sanitize my hand as the lady brings out my order with the bill. There was only one order on the table and I was the only customer. She brought out the payment machine assuming I’m paying by card as I usually do, but I stopped her from keying the amount as I pull out from my pocket two $20 bills. I told her to keep the change and as I walked out, she smiled with tears.

I’ve been wearing your shirt for something like the last three days now. It’s really comfortable, like all the clothes you’ve left me. I don’t know if it’s the clothes you wear or if it’s something you did to them.
I’m very comfortable in it. But then, it’s a slightly oversized t-shirt.
It’s a balmy day out today. I realise that my desire to go outside, explore, sit in cafes, etc., has fizzled a great deal. I thought my twenties was to be a time of great celebration, dressing up while I was young, etc. I realise that it’s all begun to feel almost pointless, although it’s not. I thought I was going to go out, sing more, dance more, make friends, etc. I could do that, but it all comes back to - it’s so much effort, and so much money.
I remember being surprised that K never went out much while I was in London, feeling like it was stifling to only stay in the neighbourhood most of the time. Ooft. He had a life that consisted of work and I was a visitor, so our objectives were entirely different. Now I live somewhere and I go out even less than he did, even though I have arguably more free time and less time or physical-presence at work/school commitments. There were many things I took for granted, or at least didn’t understand completely or had forgotten about, swept away by the time I spent only on what Tyrone Power’s character in The Razor’s Edge called ‘loafing’.
I mean, I’ve always been something of a homebody, but then a defining characteristic was a love for aesthetic pleasures and what the bourgeoisie called ‘the finer things in life’, the life something like of a writer, often going out to cafes and sitting and drinking coffee. And now, well, eh. I forget to look for beauty, or it passes over me like someone who’s forgotten the language.
There has to be something to go outside for. Some impetus, some reason. There’s little I want enough to move for, not close enough to go easily without too much work.
What I really miss is a landmark, something I was always glad to see or pass, even if I was on my way toward something else. When I lived in Norway I enjoyed the tram rides, but more than that I also enjoyed alighting at Nationaltheatret and crossing the square to go to my favourite cafe. I’m missing both the equivalent of National and the cafe here.
There’s a boredom to modern city centres. What I liked most, even if touristy, were the Old Towns. Or maybe it was the enthusiasm of the other people moving in that space. City centres in Australia are business places; in Sydney the city is almost empty after working hours, and similarly, in Melbourne, life really is often a neighbourhood affair for the locals. Mostly Asians stay late in the city, the way we do in Singapore, although heartland expansion in the form of shopping centres proliferates more now. There is an enclave of Chinese people in Box Hill here too, but the city is filled with East Asian foods, employees, students, people catering to this.
What I really liked about Vilnius was how even the locals frequented the Lithuanian restaurants and cafes and shops in the Old Town and other such places; they weren’t only touristy spots. Here, to my left is a declining shopping street occupied mostly with outlet shops, dress boutiques, a sprinkling of cafes, and what M described as a mostly commercial or business clientele. To my right the city. East Melbourne is a quiet, small suburb, mostly houses. I realise now that K would find this stifling, definitely not gritty enough.
I’m reluctant to move mostly because of how close I am to the city and thus to school, but effectively, I realise, it’s rather an isolating suburb. No one really stops here unless it’s to go to the MCG. Drive down Wellington Parade on your way to Bridge Road or Richmond and through to Kew, Hawthorn, etc., it’s barely a five-minute passing-through. The only other thing that abounds in East Melbourne are hospitals.
I don’t even like airport trips any more. Everyone seems to have gone out of the country at least once elsewhere on an actual holiday. It’s often that you go away from home before coming to realise you love it as much as you do. I think I need a trip somewhere that’s not Sg. Man, I wish doctors still prescribed this as a remedy, the way they used to recommend a trip to Italy, or the South of France, breathe good sea air or mountain rest, or something like that.

Holy Ground at 109 W Broadway, New York City – The next time you need a meat-heavy dinner in a refreshing-space, but didn’t plan far enough ahead of time to grab a table at 4 Charles or Minetta Tavern, visit Holy Ground. It’s an underground spot in Tribeca where you can envision Duke Ellington relaxing in a red leather booth having an old-fashioned and porterhouse. This place isn’t a customary steakhouse though – the Old Fashioneds are prepared with mezcal and tequila, and the menu concentrates on slow-smoked meats such as pork shoulder and wagyu brisket.
Dragon Beaux, San Francisco – A blend of classic and modern dim sum is on the menu at this always-packed Richmond District restaurant from the team behind Bay Area Stalwart Koi Palace. Everyone enjoys taking Instagram worthy pictures of the soup dumplings with coloured skins, but those in the know fill their tables with the type of inventive, accurately executed dim sum specialties you’ll come across at forward-thinking places in Hong Kong: blood-red rice rolls packed with fried fish, the city’s top sugar-crusted baked pork buns, and, for good measure, destination-worthy crackle-skinned roast pork belly. Try the winter melon hot pot with roasted squab during the night, when Dragon Beaux moves over and turns into a hot pot restaurant.
Pearl 6101, San Francisco – This restaurant has gained the hearts of metropolitan diners far past its warm, suburban Richmond neighbourhood location. In an exquisitely-tiled corner dining room, chef-partners Mel Lopez and Joyce Conway, offer customers handmade pasta and hefty wood-fired pork chops, accompanied by drinks such as the not to be missed Pearl Martini from partner/bar manager Nahiel Nazzal (it’s Oakland-distilled “sea gin” with Italian vermouth and pickled sea bean).
Olivetta, Los Angeles – There may not be a trendier restaurant in Los Angeles than Olivetta at the moment. The attractive space has four separate rooms with diverse auras, but the chief dining room with its luxurious sitting area, extravagant design, and modest noise level is the ideal spot to experience Michael Fiorelli’s welcoming but refined take on California Italian food. Try the grilled branzino, rye macaroni, and kale salad.
Found Oyster, Los Angeles – LA can always use more seafood restaurants, and this jewel of an oyster bar in East Hollywood has a compact menu from chef Ari Kolender that pulls from his East Coast upbringing. Find everything from steamers and shucked oysters to an enormous lobster roll.
Jing, Las Vegas – Downtown Summerlin’s new Japanese restaurant focusses on sushi, shareable wagyu hot rocks, and wok dishes with a menu from Joseph Elevado, the previous executive chef at Social House at Treasure Island and Andrea’s at Encore Las Vegas. Fire and water features equip the space that comprises of a courtyard and live entertainment.
Pepper Lunch, Las Vegas – A anticipated inclusion to Shanghai Plaza, the self-described “DIY Teppan” restaurant is already attracting crowds who are excited to cook their own dishes on the Japanese fast-casual chain’s signature iron hot plates, which go up to 500 degrees Fahrenheit. After ordering at the counter or through an app, the iron plates are filled up — with the chain’s signature pepper rice, Hamburg sizzling curry, dry-aged steak, or pasta, to name a couple of choices — and brought to the table, where customers could decide the final temperature of their meal.

Coronavirus Pandemic
Whole of UK was under lockdown. Matt and I worked from home. After two week working from home Matt was let go of his contract work. I continued to work at home. During the lockdown we were allowed an hour of exercise a day. Matt and I would explore and walk around our neighbourhood. There were a few small parks in our area that we went to. We also walked to China town a few times to get Chinese take away and bubble tea. We walked Hyde Park, St Jame’s Park, Regent’s Park, Richmond Park and Primrose Hill Park.
As May approached we came to accept that our summer holiday has to be cancelled. Luckily, we have not booked our flights for a summer holiday yet. However, the trips that we booked from March were all cancelled. The trips included Malta, Stockholm, Ibiza and Morocco. We were quite devastated by this we planned this trip two years before we moved to London. We wanted to travel around Europe and Asia for around 2 months before heading back home. By the time we were back it would be spring. The reality was that we were heading home when our visa ended. We weren’t be able to do things in London either. We had to cancel dinner restaurant reservations to a number of popular restaurants. We had to cancel shows such as the opera, La Traviatra and Les Miserable, musical. Many people were in the same situation as us.

Dragon Beer Garden in Franklin Square Opens May 1st The Dragon Beer Garden pops up during the Philadelphia Chinese Lantern Festival in Franklin Square every evening from Wednesday, May 1st through Sunday, June 30th. The festival and the beer garden are ticketed — timed passes, which you can get here, are $18 to $20 for adults — but you get more than just beer: there are 28 lantern-inspired sculptures, Chinese folk artists and their wares, performances by acrobats, and kids’ activities. Uptown Beer Garden Opens the second weekend in May It’s the fifth year that Uptown Beer Garden has posted up in the courtyard of the BNY Mellon Building, and they’re celebrating with five new collaboration drafts and a new cider you can’t get anywhere else (plus their mainstay Uptown IPA). Three years have passed. Three years since we were sitting down in that Chinese restaurant in Richmond Hill where we last hung out. He said many things that night, but one thing I think of again today. I came across the word 缘分, and I immediately thought of him. He used that word to describe us, our situation... he tried to explain it in English, but used only the words “fate” and “destiny”. But 19-year-old me rolled her eyes at this, sure that the guy in front of her was just talking sweet nothings.
But today I ran into this word. I finally understand what he meant. And he was right, it was 缘分.
The way we were always running into each other was too much to be just a simple coincidence. We were there at the right place and the right time. We both came into each other’s lives at a time when we really needed something to stir up our souls and stimulate our minds. And we fit each other’s minds like a silk glove... and it was short and sweet and deep and beautiful. 
Three years later I finally see him call it for what it was: an “unexpected romance”. Our souls are connected in an inexplicable way, and they will probably remain that way forever. A platonic romance, a relationship that never was and never will be.
And I know that no matter what, I’ll keep coming back to him throughout my life, because our 缘分 will always make sure we keep finding each other in the small moments of our dull daily lives, ready to stir up our souls a little bit one more time.

Growing up Chinese-Canadian, I had some sweet and sour pork in my day. But I wanted something different. So I went to Gourmet Vegetarian Restaurant in Richmond Hill, Ontario to experience a vegetarian take on sweet and sour pork.

This restaurant specializes in vegetarian Chinese food. This is where I found this “Sweet and Sour Pork”. Although, on the menu it’s labelled “ Veggie Meatball with Sweet and Sour Sauce”

Doesn’t it look just like sweet and sour pork? In it’s name this savoury dish is sweet and mildly sour from vinegar. Giving you the aroma of the typical greasy Chinese food without feeling fatigue after because it’s 100% veggie based!
Visually looking at it you can see the chef added pineapple chunks, sweet green and red peppers to contrast with all the redness in the dish.  
Grabbing a piece with my chopsticks it’s firm to touch. But as you bite in to it, you can hear this soft crunch from being previously fried before it was coated with the sauce. 
That first bite is not what you would expect. It literally bounces back at you as you chew. Like a sponge reforming its shape. 
I would most definitely eat this again! I might even prefer this over the original dish with pork. Moreover, the feeling of fullness after eating, but not from the greasiness that animal fats give. I literally just put one in my mouth, and I couldn’t stop experiencing the textures that it gives. I was munching on it like was a bag of chips. 
With this experience, I would like to explore more of how different textures of food brings to the palate of the mouth with my cooking. Food is not just about the taste, but how it appeals to all of our senses.
