These Copycat Hostess Cupcakes are a delicious homemade version of the classic treat. Moist chocolate cupcakes filled with creamy chocolate ganache and topped with a sweet glaze and chocolate sprinkles. Perfect for satisfying your sweet tooth!
Ingredients: 1 box of chocolate cake mix. 1 cup of water. 1/3 cup of vegetable oil. 3 large eggs. 1/2 cup of sour cream. 1/2 cup of hot water. 1/4 cup of unsweetened cocoa powder. 1 cup of semisweet chocolate chips. 1/2 cup of heavy cream. 1/4 cup of unsalted butter. 1 teaspoon of vanilla extract. 1 1/2 cups of powdered sugar. 1/4 cup of milk. 1/4 cup of corn syrup. 1 teaspoon of vanilla extract. 1/2 cup of chocolate sprinkles.
Instructions: Turn the oven on to 350 degrees Fahrenheit 175 degrees Celsius and line a cupcake tin with paper liners. Mix the eggs, sour cream, vegetable oil, water, and chocolate cake mix together in a sizable mixing bowl. Blend until thoroughly blended. Fill each cup of the cupcake tin about two thirds full with batter as you pour the mixture in. A toothpick inserted into the center of a cupcake should come out clean after baking for 18 to 20 minutes. Make the chocolate ganache while the cupcakes are baking. Place the hot water and unsweetened cocoa powder in a bowl that is safe to use in the microwave. Blend until a smooth consistency is achieved. When the chocolate has completely melted and the mixture is smooth, add the semisweet chocolate chips and microwave in 30-second increments, stirring. Allow it to cool a little. Heat the unsalted butter and heavy cream in a separate saucepan over low heat until the butter melts. After taking off the heat, whisk in one teaspoon of vanilla extract. Mixing until smooth, combine the cream mixture and chocolate mixture. Allow the chocolate to reach room temperature. After the cupcakes are done baking and cooling, pierce the center of each cupcake with a small knife or cupcake corer. Spoon the chocolate ganache into each hole. Beat the powdered sugar, milk, corn syrup, and 1 tsp vanilla extract together in a separate bowl until glossy and smooth. Add additional milk as necessary to get the right consistency. Drizzle the glaze over every cupcake, letting it run down the sides. Add chocolate sprinkles to the glaze right away. Before serving, let the glaze settle for a few minutes. Add a slice of cheese to each patty and cover it to melt in the last minute of cooking. You can grill or toast the hamburger buns until they are lightly browned. Ingredients: 2 ripe avocados, peeled, pitted, and diced. 1 cup sun-dried tomatoes, finely chopped. 1/2 cup red onion, finely diced. 2 cloves garlic, minced. 1/4 cup fresh cilantro, chopped. 1/4 cup fresh lime juice. 1 tsp ground cumin. 1 tsp chili powder. Salt and pepper to taste. 12 egg roll wrappers. 1 cup shredded Monterey Jack cheese. Vegetable oil for frying.
Instructions: In a large mixing bowl, combine diced avocados, sun-dried tomatoes, red onion, minced garlic, cilantro, lime juice, ground cumin, chili powder, salt, and pepper. Mix well to make the guacamole filling. Lay out one egg roll wrapper with a corner pointed toward you. Place 2 tablespoons of the guacamole filling in the center of the wrapper.
