Enjoy this vegan take on a classic comfort food. Ziti pasta is covered in a creamy butternut squash sauce and topped with crunchy breadcrumbs, which makes for a great contrast of textures. Any night of the week, this dish is great for a cozy dinner!
Ingredients: 1 butternut squash, peeled, seeded, and diced. 12 ounces of ziti pasta. 1 cup of raw cashews, soaked in water for 4 hours or overnight, then drained. 1 cup of vegetable broth. 1/2 cup of nutritional yeast. 1/4 cup of lemon juice. 2 cloves of garlic, minced. 1 teaspoon of onion powder. 1 teaspoon of smoked paprika. Salt and pepper to taste. 2 tablespoons of olive oil. 1/2 cup of breadcrumbs. Fresh parsley, chopped, for garnish.
Instructions: Preheat the oven to 375F 190C. In a large pot of salted boiling water, cook the diced butternut squash until fork-tender, about 10-12 minutes. Drain and set aside. Cook the ziti pasta according to the package instructions until al dente. Drain and set aside. In a blender, combine the soaked cashews, cooked butternut squash, vegetable broth, nutritional yeast, lemon juice, minced garlic, onion powder, smoked paprika, salt, and pepper. Blend until smooth and creamy. In a large mixing bowl, toss the cooked ziti pasta with the creamy butternut squash sauce until well coated. Transfer the pasta mixture to a greased baking dish. In a small bowl, mix together the olive oil and breadcrumbs. Sprinkle the breadcrumb mixture evenly over the top of the pasta. Bake in the preheated oven for 20-25 minutes, or until the breadcrumbs are golden brown and the sauce is bubbly. Garnish with chopped fresh parsley before serving. Serve hot and enjoy!

Breakup Pasta: Sammy's Version Part One
Good morning, afternoon, or evening to anyone reading my post! Thank you for taking the time out of your day to read my blog.
This evening, I made dinner for my family, and tried a new recipe: Breakup Taco Pasta(TLC)!
First, what is Breakup Taco Pasta(TLC)? First and foremost, it is "a tasty meal" that had "the opposite effect of 'Marry Me Chicken'", according to TLC. It is not Big Ed's original creation, but it is a popular weeknight dinner, as it is easy to make, tasty, filling, and relatively inexpensive. Many chefs, food bloggers, and home cooks have created and written recipes for their versions of it, as has Big Ed.
Next, why did TLC call it "Breakup Taco Pasta"(TLC)? According to Food Network, "In episode six[of 90 Day Fiance: Happily Ever After?] (“The Itsy Bitsy Liar”), Ed reveals that at a dinner with his family, Liz and her daughter Ryleigh, Liz “blew up” because Ed had made Ryleigh’s taco pasta “too spicy.” Days after the fight, Ed tells his sister that he has decided to cancel the wedding, but has not yet told Liz, days before their would-be ceremony. Liz learns of this news from a text message from their officiant, saying “how sorry he was that the wedding was called off.”(Wong).
Third, why was it so spicy? To start off, the formula for Taco Pasta: Big Ed's Version is 1.5 pounds of ground beef, seasoned with taco seasoning, 1 onion, 1 bell pepper of any color, 3 Roma tomatoes, 1 clove of minced garlic, a pinch of salt, a dash of pepper, 1 packet of spicy ranch seasoning, 2 cartons of beef broth, an unspecified amount of cheese, and an unspecified amount of any pasta(though there are rumors that Big Ed used Top Ramen noodles). (TLC)
Lastly, how do you make it? According to TLC, you first heat up a large skillet, then add the beef, vegetables, and seasonings, and cook until browned. Once you have browned the beef and vegetables, add the beef broth, pasta, and cheese, and let everything simmer, stirring regularly, until the pasta is fully cooked. Once everything is fully cooked, serve.(TLC)

I have reached a new level in cooking and/or adulting!
40 minutes ago, I had no plan for dinner. It seemed like a nice day for a light, summer-y pasta. And I wanted protein. I was pretty sure I had chickpeas. I usually have chickpeas.
So I googled "chickpea and pasta recipe" and found one that gave me a vague idea of quantities and combinations. And then I went wild. I didn't use a single measuring tool. I added an entirely new ingredient to the dish (tomatoes).

I cooked with my heart, and I ended up with a tasty, balanced meal in 30 minutes. With lunches set for the rest of the work week.

This Vegan Pad Thai is made with brown rice noodles and loaded with colorful vegetables. The Thai Peanut Sauce adds a deliciously creamy and spicy flavor. It's a healthy and satisfying meal that's perfect for a quick weeknight dinner!
Ingredients: 8 ounces brown rice noodles. 2 tablespoons sesame oil. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 cup shredded carrots. 1 cup snow peas. 1/2 cup green onions, chopped. 1/2 cup chopped peanuts. 1/4 cup fresh cilantro, chopped. Lime wedges, for serving.
Instructions: Follow the directions on the package to cook the brown rice noodles. Remove the water and set it aside. Set the sesame oil on medium heat in a large pan. Chopped carrots, snow peas, and red and yellow bell peppers should be added. Cook the vegetables for 5 to 7 minutes, or until they are soft but still crisp. Put the green onions and cooked noodles in the pan. Add the Thai Peanut Sauce to the vegetables and noodles. Mix everything together well, and cook for another two to three minutes, or until everything is hot. Take it off the heat and add the chopped peanuts and fresh cilantro. Vegan Pad Thai should be served with lime wedges to squeeze over the top.

This Tomato Basil Chicken is a simple but tasty dish that is full of flavor. The chicken breasts are cooked just right and then topped with a colorful mix of fresh basil, garlic, and cherry tomatoes. It's an easy and quick meal that works great on busy weeknights.
Ingredients: 4 boneless, skinless chicken breasts. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 cup cherry tomatoes, halved. 1/4 cup fresh basil leaves, chopped. Salt and pepper to taste.
Instructions: On both sides, salt and pepper the chicken breasts. In a pan, heat the olive oil over medium-high heat. The chicken breasts should be cooked through and browned after being added to the pan. This should take about 6-7 minutes per side. Take the chicken out of the pan and set it aside. Put minced garlic in the same pan and cook for one minute. Just add the cherry tomatoes and cook for two to three minutes, until they start to get soft. Put the chicken breasts back in the pan and top them with some of the tomato mixture. Add chopped basil to the tomatoes and chicken. Add two to three more minutes of cooking to let the flavors blend. Serve hot, and if you want, top with more basil leaves.

Ingredients: 1 pound large shrimp, peeled and deveined. 1 bunch asparagus, trimmed. 4 tablespoons butter, melted. 4 cloves garlic, minced. 2 tablespoons fresh lemon juice. Salt and pepper to taste. 1 teaspoon dried parsley flakes. Aluminum foil.
Instructions: Start by heating the oven to 400F 200C. Make four pieces of aluminum foil that are big enough to fit around each piece of shrimp and asparagus. Put the shrimp and asparagus on each foil sheet in an even way. Melt the butter and add the garlic, lemon juice, salt, pepper, and parsley flakes. Mix them together in a small bowl. Add the garlic lemon butter sauce to each foil pack and pour it over the shrimp and asparagus. Cover the shrimp and asparagus with foil. Fold the sides over and seal the foil completely to make packets. On a baking sheet, put the foil packets. Bake for 15 to 20 minutes, or until the shrimp is pink and cooked all the way through. Open the foil packets slowly, watching out for the steam, and serve hot.

Cover and cook for 20-25 minutes, stirring occasionally, until noodles are tender. Sprinkle mozzarella and Parmesan cheeses over the top. Cover and cook for an additional 2-3 minutes, or until cheese is melted and bubbly. Sprinkle with chopped parsley before serving.
