Last Friday, at this hour, Jules and I were having cocktails by the water, enjoying the sea breeze and the live Jazz music at our hotel in Saint-Cyprien. After which, we had room service --an excellent tuna tartare-- which felt the height of luxury! It was only a week ago, but seems quite far already; so I’m enjoying the best of both tonight, with a chill and potent Daiquiri --which is what I ordered then-- in bed! Also quite luxurious! Happy Friday!
Ingredients (serves 1):
8 ice cubes
1 ripe lime
22.5 millilitres/3/4 fluid ounce (1 1/2 tablespoon) Simple Syrup
60 millilitres/2 fluid ounces (4 tablespoons) good quality white rum, like Guadeloupe’s Damoiseau
Fill a shaker with ice cubes.
Thoroughly squeeze the juice of the lime, and pour over the ice. Add Simple Syrup and white rum. Close shaker tightly and shake energetically, until chilled through.
Strain in a coupe or cocktail glass.
Enjoy Daiquiri immediately.

Red, White, Blue Daiquiri !
Ingredients:
1 ½ cups rum (divided into ½ cup for each daiquiri)
¼ cup blue curaçao
¼ cup strawberry puree
¾ cup lime juice (divided into ¼ cup for each daiquiri)
3 cups ice (divided into 1 cup for each daiquiri)
¼ cup simple syrup
Directions:
We will be making 3 daiquiris and layering them. To begin, pour ½ cup rum, ¼ cup strawberry puree, and ¼ cup lime juice into a blender with 1 cup of ice.
Blend until smooth and pour into a pitcher or measuring cup.
Pour ½ cup rum, ¼ cup blue curaçao, and ¼ cup lime juice into a blender with 1 cup of ice.
Blend until smooth and pour into a pitcher or measuring cup.
Pour ½ cup rum, ¼ cup simple syrup, and ¼ cup lime juice into a blender with 1 cup of ice.
Blend until smooth and pour into a pitcher or measuring cup.
Start layering your drink by pouring the red, white, and blue drinks into each glass.
Garnish with your flag, straw, and lime wedge. 
Drink up and salute the flag!

1/4 oz 1804 Grand Imperial orange liqueur

PORTSIDE DAIQUIRI !
This fig-infused fall cocktail gets a shot of sweetness from brown sugar syrup and rich port, making it an ideal dessert drink.
Fill a cocktail shaker with ice and add 1 ounce fig-infused rum, 1 ounce tawny port, 1/2 ounce Hoodoo Chicory liqueur, 1/4 ounce brown sugar syrup (equal parts brown sugar and hot water), and 1 ounce fresh lime juice, and shake vigorously. Strain the drink into a coupe glass. Garnish with a lime wheel and a slice of fig.
To make fig-infused rum: Add 2 cups sliced dried figs to 1 liter rum. Let the mixture macerate for 1 to 2 weeks, then strain off the solids. Refrigerate until ready to use (up to 3 weeks). Pro tip: The infused figs can be used as a spread for crusty bread with some Brie.
