CHEF ILONA: Panettone & Egg Nog Baked French Toast

Christmas morning should be a low effort mealtime; it’s the perfect day to savour a hot drink and the twinkling lights on the tree.Several years ago, I was visiting the homestead for the holidays, which meant I got to enjoy watching my mom putter around the kitchen cooking up all of our favourite foods. My dad has a penchant for the Italian Christmas bread, panettone, and there is almost always one on the counter for the entire month of December.
Panettone is a sweet Christmas bread originating in Milan. This rich dough is studded with citron, raisins, and other candied fruits. It is baked in a cylindrical shape and has a domed top. In some ways, I can see a bit of a flavour profile similarity to Easter’s hot cross buns, but panettone is much fluffier.

Now from time to time, the panettone gets a little stale or dries out a bit, as it did this particular year. My mom decided to use the bread for French toast. It tasted amazing, but I was still thinking there had to be an even easier way to make this French toast so Mom didn’t have to stay at the stove. 
We decided to make a bake out of it, and it worked like a charm.It is the kind of dish that is a hybrid of bread pudding and French toast. I started adding in egg-nog in the last couple of years and it is even more festive. If you are so inclined, I recommend a jigger of rum mixed in with the egg-nog base; it is so at home in this mélange.
This can be made and ahead the night before, or when you are ready to eat it.
Egg-nog and panettone French toast bake Created by Chef Ilona Daniel
1 loaf all-butter panettone bread
7 large eggs
1 1/4 cups egg-nog
1 Tbsp vanilla extract
Zest of 1 orange
2 tsp cinnamon
1/2 tsp nutmeg
¼ cup brown sugar
Icing sugar and syrup for serving, if desired.
Slice the panettone into slices that would fit into your toaster and tile them into a buttered casserole dish. Gently whisk the remaining ingredients together and pour over the bread. Cover and place in the fridge overnight so it will ready for baking in the morning or place directly into a pre-heated 375F oven. Bake for 30 minutes and serve with syrup and powdered sugar if desired.

Cranberry & Pomegranate Sauce Recipe! Last year we prepared our cranberry and pomegranate sauce for a holiday gathering, which was loved by all. In our opinion, it pairs well with so many things, such as meats, pancakes, yogurt, smoothie, and toast, just to name a few. Cranberries and pomegranate are two of our very favorite things to eat during this time of year. Not only are they a beautiful, intense red color, they also have antioxidant superpowers! Both, pomegranate and cranberries have an astonishing array of phytonutrients (plant compounds that have been shown in studies to have antioxidant, anti-inflammatory, and anti-cancer health benefits). Since we are huge fans of these superfoods, we decided to create a cranberry and pomegranate sauce for Thanksgiving! And why not add orange zest and peel to the mix for that additional vitamin C, which has many important roles in your body. Here is the recipe from our home and hearts to yours….. Happy Thanksgiving everyone! Pasqualina’s Cranberry and Pomegranate Sauce Ingredients: 12 ounce (1 bag) fresh organic cranberries 1/2 cup maple syrup 1/3 cup freshly squeeze orange juice 1/3 cup water 3/4 cup fresh pomegranate seeds Peel of 1 large orange 1/4 teaspoon cinnamon 1/4 cup Grand Mariner (optional) Zest of 1 orange Directions: 1. Rinse cranberries well and drain off excess water. 2. In a medium saucepan, add maple syrup, orange juice, water, cranberries, pomegranate, orange peels and mix well. Bring mixture to a boil over medium-high heat, then reduce heat to medium-low and cook, stirring occasionally, until the cranberries have popped and the mixture has thickened, about 10 minutes. 3. Remove the pot from heat and crush the mixture with a potato masher. Add the orange zest and Grand Mariner, mix well and bring back to heat and cook for one to two minutes. Remove from heat, remove orange peels, and set aside to cool. The mixture will continue to thicken as it cools. 4. Serve garnished with orange peels and cinnamon sticks. Easy Vegan Peppermint Bark
My husband, David, loves peppermint bark. There is one by “No Whey!” on the market now, and I’m sure some other vegan variations. This is a thicker variation; I was nervous of not being able to cover the entire surface of the baking dish, so I went with a smaller one. As years pass, I will work on a thinner version, but this still has all of the peppermint chocolatey goodness you are looking for! Be sure to let it set at room temp, a cold temperature will cause the two chocolates to separate from each other as they seize.

Easy Vegan Peppermint Bark
Makes: 16 pieces
Serving size: 1 2-inch piece 
1 (10 ounce) bag vegan semi-sweet chocolate chips or vegan dark chocolate chips
1 (8 ounce) bag vegan white chocolate chips (I use King David Kosher)
½ teaspoon peppermint extract, divided 
⅓ cup crushed vegan candy canes (I use Thrive or Yum brand)
Line an 8x8 baking dish with 2 pieces of parchment paper so that the paper hangs over all four sides by a couple inches. 
Melt the semi-sweet chocolate chips in a small pot or double boiler. Remove from the heat and add ¼ teaspoon peppermint extract, stir to combine. Transfer it to the prepared baking dish into an even layer. Immediately melt the white chocolate in a small sauce pot or double boiler. You don’t want the semi-sweet chocolate to set before you add the white chocolate to the top of it. If it sets, the two layers won't stick together.  Remove from the heat and add the remaining 1⁄4 teaspoon of peppermint extract. Fold in ¼ cup of the crushed candy canes.
Carefully transfer the white chocolate mixture to the top of the semi-sweet layer so that it covers the semi-sweet layer completely. Spread gently with an offset spatula. Sprinkle with remaining crushed candy canes. Add more if you would like, I make sure the entire top is covered with candy cane crumbles.
Set aside at room temperature. Allow to set at room temperature, do not put in the refrigerator before it sets. After it sets completely, lift out of the baking dishes and cut or break into bite sized pieces. 
Will keep in a tightly sealed container for up to one week at room temperature.
