Just made mashed kabocha squash with kale and some herbs and now its gonna be SQUASH WEEK.
Meals planned
- balsamic mushrooms and rotisserie chicken + mash
-turning the mashed squash into pizza sauce somehow and topping it with carmelized onions and more balsamic chicken
- turning any leftovers into soup (need to get an immersion blender for this I think)

Kabocha Turmeric Tea Cake, p.42, Dessert Person by Claire Saffitz

I made this with the help of Caroline! Very similar to a pumpkin loaf, this bake was a much needed reprieve after those biscuits. Super easy to make (and make vegan) and very much in the fall spirit. The only thing I needed to substitute to make this vegan was two eggs (swap with flax eggs, easy peasy).
Tips:
1. I found the kabocha squash at H Mart, the Korean-American supermarket down the street. I learned that this squash originates from Japan, but this particular one was grown in Mexico. Fascinating. Next time I would roast my squash a little less time than Claire recommends (90 minutes for a medium squash), it was just a touch dry which may have affected the overall moisture of the cake. She also says you can try substituting for canned pumpkin or mashed roasted sweet potato, which I will also try in the future.
2. We loved the sugar top on this loaf, but I wanted more of it. Next time, I'll add butter and sugar to the inside of the loaf pan to see if I can get more of that sugar on all sides.
3. This recipe calls for a quarter cup of hulled pumpkin seeds (not seen in photos, but they are all throughout the cake). I didn't particularly care for the crunch of the seeds, I think next time I'll try substituting for crushed walnuts instead. The seeds just made this feel more like a health bread.
4. Not really a tip, but a sidenote. Claire confirms in this bake that it's okay if the coconut oil solidifies when it hits the eggs, because it will smooth back out in the oven. If you will remember from my muffin post, this exact thing happened where the coconut oil 'bloomed' and I assumed I made a grave error. Apparently, that's fine. So. The more you know.
Overall, a tasty and easy bake, that confirmed that I do still like baking and I do still like Claire's food. That sugar top though, was seriously next level delicious for me. I could see this being something you bring to a Thanksgiving dinner. I give this a 14/18, the sugar top gaining this bake an additional 2 star points.
