chicken tikka marsala
first marinade:
- chicken thigh
- lime juice
- cayenne
- chili powder
- salt
second marinade:
- greek yogurt
- ginger paste
- garlic

for the curry:
- coconut oil
- 1” cinnamon stick
- 2 green cardamom pods
- 2 whole cloves
- serranos, sliced
- onion, chopped
- cumin, garam masala, madras curry powder, garlic p, cayenne, coriander, smoked paprika, turmeric and white pepper
- tomato paste
- fire roasted crushed tomatoes
- soy sauce and fish sauce
- rock sugar
- coconut creme
- cilantro
top w more cilantro when done serve w white rice and naan (trader joe’s makes amazing frozen garlic naan i always keep em on hand lol)
marinade the chicken the first time for 30 marinade. mix the ingredients for the second marinade then pour in the chicken WITH the first marinade. mix well and marinade at least an hour but it’s best after 24-48 hours.
start ur rice ina rice cooker
preheat ur grill to high heat, then grill the chicken until well charred. then remove and let rest.
melt coconut oil in a pan then add onion and chilis, cook until they soften. stir in garlic and ginger and cook til fragrant. stir in spices and cook, stirring for 2-3 minutes. clear a spot in the middle of the pan then add tomato paste and caramelize. stir in tomato purée, soy sauce and fish sauce then simmer 10-15 minutes until thickened and color deepens.
once deep red, stir in coconut creme and rock sugar, cook 10 more minutes then stir in chicken and chopped cilantro. cook 5 more minutes or until well combined and chicken is cooked through. serve over basmati rice w cilantro!

Singapore curry powder, or gali fen ("gali" from the English "curry"), is a spice blend that was inspired by British Madras curry powder, but grew to incorporate Chinese spices and aromatics. It is representative of the culinary culture of Singapore, which incorporates influence from Chinese, Indian, Thai, Malay, and Indonesian cuisines.
This blend is used in “Singapore” curry fried noodles (actually a Hong Kongese dish) and in other Chinese curry dishes including chicken curry (新加坡式咖喱鸡), beef brisket curry (咖喱牛腩饭), curry soup noodles, and vegetable curries. It is also a popular choice for marinating meat and seafood.
Curry powder Singapura starts from a base of dried red chilis, and is rounded out with earthy spices including turmeric, coriander, cumin, and fenugreek. Warming spices such as nutmeg, mace, cinnamon, and cloves are often also included. Chinese influence sometimes appears in the form of chenpi (dried mandarin orange peel), Sichuan peppercorn, dried radish, liquorice root, star anise, and dried ginger.

Ingredients:
2 Tbsp (17.4g) ground turmeric / 薑黃
10 dry red chilis (11g; adjust to taste)
2 Tbsp (8g) coriander seeds / 芫茜
1 tsp (3.6g) fenugreek seeds (optional)
1 tsp (2.5g) cumin seeds / 小茴香種子
1 tsp (2g) fennel seeds / 谷茴
1 tsp (2g) ground ginger (optional)
1/2 tsp (1.6g) black peppercorns
1 inch (1.5g) Ceylon cinnamon / 桂皮
1 pod (1.4g) star anise / 八角
1g liquorice root / gan cao / 甘草 (optional)
1g chenpi / 陳皮(optional)
1g cao guo / tsao ko / 草果 / Chinese black cardamom, freshly grated (optional)
4 (1g) green cardamom pods
1/2 tsp freshly grated nutmeg / 玉果 (1/4 tsp preground; .5g)
1/4 tsp (7; .4g) cloves
2 blades mace (.2g; optional)
Liquorice root, chenpi, and cao guo may be found at an east Asian or Chinese grocery store, but may need to be purchased online. Many homemade versions of this spice blend do not include these spices.
Hong Kong curries tend to be relatively mild and sweet, including a lot of turmeric and cinnamon relative to the amount of chili and pungent spices. You should adjust the heat, sweetness, and pungency of the blend to your taste.
Instructions:
1. For a less spicy curry powder, you may choose to break open the chilis and remove all or some of their seeds.
2. Roughly crush star anise, cinnamon, nutmeg, and cardamom pods in a mortar and pestle or with the flat of a knife. In a small, dry skillet, toast whole spices (coriander, fenugreek, cumin, black pepper, cinnamon, fennel, star anise, nutmeg, cardamom, Sichuan peppercorn, cloves, and mace) one at a time until each is fragrant. Set aside and allow to cool.
Spices are toasted one at a time so that smaller spices don't burn before larger ones are fully fragrant. Sometimes, I'll toast larger spices (such as cloves and cardamom pods) together, and then toast smaller seeds (such as cumin) together, to speed up the process.
3. Remove pan from heat. Toast ground spices (turmeric, and anything else you used a ground version of) for 30 seconds, stirring constantly, and remove from the skillet.
4. Grind liquorice root in a spice mill or coffee grinder until as fine as possible, then pass it through a sieve to remove larger pieces. Return those pieces to the mill and grind again. This is done separately because liquorice root can be tough to grind!
5. Grind all spices in a spice mill until fine. Pass through a sieve. Store in an airtight container in a cool, dry place.

in one of the doctor who specials last year, donna’s mom mentioned making “tuna madras” and i love tuna, and madras is my fav type of curry so i was like “ooo sounds yummy!! 🤤 i’ll have to try that!!” ..then i forgot abt it for months
but i remembered again a few days ago and got some tuna steaks from work, cos i assumed that was what you’d used in it?? but when i looked up the recipe..

all of the articles are doctor who related, and along the lines of “doctor who fans were left SHAKEN and HORRIFIED at the thought of sylvia noble’s DISGUSTING ABOMINATION.. but try it yourself, IF YOU DARE.. 🫣” ..which makes me wonder if tuna madras isn’t real, and it’s just a joke i missed?? 🙁

One of my favorite soups ever. What makes it a winner for me is its simplicity - no need for an overnight lentil soak, and the ingredients are mostly staples found in the pantry. I always ensure my pantry is stocked with these items, just in case I need a reliable Plan B. When I plan my meals in advance, I like to opt for some fresh ripe tomatoes instead of the canned ones. But, moreover the taste of this soup is just amazing.  
Throwing in some leftover carrots or green onions doesn't compromise the taste at all. A dollop of sour cream adds a festive touch, perfect for weekends or when entertaining guests. Ottolenghi's recipe doesn't include broth or stock, so I skip the salt and instead use chicken or vegetable tablets (1 per half a liter) to give the soup more substance. Additionally, I personally find the soup tastes better without the ginger the recipe calls for – a choice you can make for yourself.
For those looking to elevate the dish, try using coarsely or partly ground curry (Madras is my favorite) powder, or make your own blend. Adding some coriander, cumin, and fenugreek seeds to your existing curry spice blend makes a difference already! This adds a delightful complexity to the soup, creating subtle flavor variations as you enjoy each spoonful.
Furthermore, finding the red variety lentils can be challenging but Sprouts offers them both prepackaged and in bulk. Nevertheless, any lentil is okay! Here's a parting thought: imagine reducing the water, skipping the blending altogether, and serving it with potatoes or rice and some lush green beans? I'll keep you posted once I give it a try!

Hey babe how do u cook your curry? 😍
Hey there 😍 I don't have a recipe, this is just the way I figured out how to do it and how I like it:
First I fry (I like to use peanut oil, but anything other than olive oil or butter is fine here) some plain tofu in the pan and then add some soy sauce and maple syrup. I really like the salty-sweet mixture😍
I use my rice cooker to cook the rice! (oh I have to mention, I work at a company who sells rice cookers, rice, noodles, curry pastes, seasonings and what not...)
I like to use frozen veggies because it's convenient, once they're thawed, I also fry them in the pan with the curry paste (I like Madras or Butter Chicken, they're mild - I absolutely can't eat spicy foods) and then add some vegan soy cooking cream (Idk what it's called in English...)
And I mix everything together and enjoy😍 it's great for meal prep, it's vegan, it has some protein, if you use whole grain rice, it has a lot of fibre, too! 😍

Madras Lentils!
INGREDIENTS
▢2 tablespoons extra virgin olive oil
▢1 cup diced yellow onion
▢1 jalapeno - seeded, stemmed, and diced
▢3 cloves garlic - minced
▢2 teaspoons paprika
▢1 1/2 teaspoons ground cumin
▢1/2 teaspoon ground coriander
▢1/4 teaspoon fenugreek
▢1/4 teaspoon red pepper flakes
▢1/8 teaspoon ground ginger
▢3/4 cup dry adzuki beans - soaked overnight
▢1 quart vegetable broth
▢1 8-ounce can tomato sauce
▢1 1/3 cup mung beans
▢1/2 cup half-and-half*
▢3 tablespoons tomato paste
▢1 tablespoon red wine vinegar
▢1 teaspoon sugar
▢1 teaspoon kosher salt
▢1/2 teaspoon freshly ground black pepper
▢Optional garnish with cilantro
INSTRUCTIONS
Heat the olive oil in a 3-quart or larger pot set over medium heat. Add the onion and jalapeno; saute until onion begins to soften, about 5 to 7 minutes.
Add the minced garlic, paprika, cumin, coriander, fenugreek, red pepper flakes, and ground ginger. Stir well to coat the vegetables in spices. Cook for 1 to 2 minutes, until the garlic is fragrant.
Add the soaked adzuki beans along with the vegetable broth and tomato sauce. Bring the mixture to a boil, then reduce the heat to medium low and cook uncovered for 45 minutes.
Add the mung beans to the pot and allow to cook for another 45 minutes.
Stir in the half-and-half, tomato paste, vinegar, sugar, salt, and pepper. Taste and add more salt and pepper as needed.
Optionally garnish with cilantro.
Serve with rice and/or Naan bread.
For @wanderingmitten and any others interested in making their own madras style lentils! Super savory and satisfying. This recipe uses mung beans and adzuki beans, for texture and nutrition; the lentils tend to disintegrate if you use them. I still add lentils, about a cup, and about a cup of extra broth for them. I also use a madras curry spice mix I found at the grocery store instead of all the individual spices, and prefer canned coconut milk over half and half. As with any recipe, add and subtract ingredients as you see fit to your liking! Enjoy!
