It's #MenuMonday here at the Ship History Center! We know many of you have been trying some new recipes while we practice social distancing, so why not try to recreate some historic menus? Check out this beautiful menu with cover art by Claude Monet for Cunard's R.M.S. Carinthia dated March 22, 1967, SSHSA Archives. The star of the show today is GREEN PEAS!.Delicious, and very nutritious, green peas are high in protein compared to other vegetables, so if you’re a vegetarian like me, peas are a great food to have on your plate. They also offer a decent amount of fibre per serving, which is good for digestive health. Additionally, they contain vitamins and minerals that contribute to good health, such as Vitamin A, K, C, and Folate, which is a B vitamin (and ESSENTIAL for mamas-to-be!).They are low on the glycemic index, which means they keep your blood sugar levels from spiking. Low-GI foods are also digested slower, keeping you feeling fuller, longer..I know that peas aren’t a very popular food among kids, but hopefully as an adult you can appreciate how much these little guys have to offer!.#nutrition #health #healthy #healthyfood #menumonday #food #foodfacts #vitamins #minerals #proteinpacked #veganprotein #peas #peasplease #morepeasplease

What is eating healthy?
With so much information available to us and everyone claiming to be right how do we determine what “eating healthy” actually means? Healthy for everyone can be very different dependant on a vareity of things (i.e. your lifestyle, prefrences, activity level, etc.) While there are a few cardal rules to being healthy ultimatly no one can tell you what YOUR health looks like. However, if it helps get you started I do have a few suggestions that may get you on the right track.
Drink water.
Eat your vegetables.
limit your sugars.
Try to avoid processed foods.
Stop making eathing “healthy” so difficult, just keep it simple and change your lifestyle little by little. However we will get more  into detail as the weeks go by.

It’s Meal Prep Sunday. Every Monday, I post up my weekly family menu on the fridge. On Sundays, I start by throwing out any old food from the previous week, tossing expired condiments, taking inventory on what food I already have, then I get started on planning my weekly menu. We usually eat some of the same meals throughout the week, so I usually prep those in advance. Planning our meals helps us to save time, money and a little bit of stress. If you are a member of our @goalsettersclub VIP group, don’t forget to download your free meal planner worksheet. #menu #menumonday #mealprep https://www.instagram.com/p/B_dXHNelQsP/?igshid=mabcnvnop1cc

Menu Monday: In 1876, Princeton student Moses Taylor Pyne (Class of 1877) attended a reunion at Williston Seminary in Easthampton, Massachusetts (now named Williston Northampton School), and probably stayed at Hill's Mansion House, a grand hotel. Some notable historical dishes include the tomato catsup--likely specified as tomato because ketchup came in many varieties, not just the tomato kind we'd think of today--and Halford sauce, which was very popular in the 19th century but is now gone altogether.

For #menuMonday (I just made that up lol) as promised on #instagram yesterday here’s my #recipe for the pickled scallions I topped my avocado toast with. Ingredients for pickled scallions:
2 scallions
1/4 cup white vinegar
1 tbsp sugar
1 tsp salt
Use kitchen shears to cut scallions into a bowl. Add vinegar, sugar and salt. Stir until you no longer hear the salt and sugar granules dissolving. Leave marinating while you grill your bread and cut/season your avocado (don’t forget the lime/lemon juice on your avocado to prevent oxidation!) Drain after 20-30 minutes, top and enjoy on your avocado toast. This would pair really well with a sparkling wine or crisp white like Sauvignon Blanc.

It's #internationalmuseumday AND #menumonday! Check out this menu from the Eastern Steamship Lines. Did you know that we use historical menus to teach students about refrigeration on ships? So you don’t like salads?
A lot of people don’t like salads, for a variety of reasons: they don’t get you full, they don’t taste good, they are boring. Here are some things I’ve found that helped me love the salads I make.
Pack in the lettuce!!! The key to a salad that will keep you full is a lot of lettuce. Making a small salad is where the initial mistake is made.
Find a good dressing! There are so many different flavored dressings aside from caesar and balsamic, currently I’m trying a raspberry vinaigrette, its a little sweet but I like that it gives my salad a different taste..
Season your salad! It may sound weird but adding pepper and a little garlic herb seasoning can make a big difference. Experiment and find the seasoning that makes your taste buds jump for salad joy.
Add things you like, tomatoes, onions, cucumbers, strawberries, blueberries, cheese, croutons, shrimp, chicken, whatever makes you happy. A salad that is filled with different flavors becomes more appealing.
Your salads don’t have to be boring and tasteless or leave you hungry. These tips can help you to make salads a variety of ways. Remember the less dressing the better (I use enough to make it not dry). Overall salads can be a very quick and easy meal (which is why a lot of people losing weight choose to eat them). However, there are many other foods to eat along your journey that we will definitely get into throughout these menu Mondays.
