A thought on Sokka and Katara and Literacy
Sokka and Katara are both clearly literate. It's worth pointing out that this is a bit unusual, historically. Before the industrial revolution, literacy was chiefly associated with the state apparatus in state-dominated societies or with certain religious practices. The upper-classes in hierarchical, state-based societies have particular interest in literacy. It makes absolute sense that Fire Nation upper class is really into it. Same with the Earth Kingdom nobles and the Northern Water Tribe elite. For the Air Nomads, literacy likely had an important religious function.
On the other hand, it's not clear if the Southern Water Tribe/Tribes ever had anything resembling a state, and toward the end of the Hundreds Years War they definitely do not. in our own world, some Iñupiat and Inuit groups are nomadic or semi-nomadic, while others are not. We really don't get a sense of what is typical in the SWT. If Sokka and Katara's subtribe is often nomadic, they are probably not carrying around a whole lot of records with them.* It's pretty clear that the SWT does not have anything resembling a school system, and it's not clear how relevant or useful reading and writing is to their everyday lives. Admittedly, we do see Hakoda use writing to send a message to Bato, so perhaps writing is commonly used by the SWT in warfare, but we can't be certain. Beyond that, we don't know what kind of utility writing might have to SWT society, or who exactly is likely to learn how to read.
Yet both Sokka and Katara are clearly literate. Writing and reading are natural to them.
For Zuko, Azula, Mai, Ty Lee, Yue, Aang, etc. learning to read was a normal and expected part of growing up in their society. However, we have reason to doubt the same is true in the SWT. Teaching Sokka and Katara to read was a deliberate choice by someone, by their parents or grandparents or someone else. Someone within their tribe or their family believed that it was important for them to learn literacy. And given that the SWT does not have a school system, someone close to them almost certainly taught the siblings how to read. Perhaps it was Hakoda, Kya, Bato, or Kanna, or perhaps it was someone else. Either way, this decision and this teaching probably has some emotional significance to the water siblings.
*It's possible that the Southern Water Tribe might rely on oral tradition to keep their history and legends, but it's also possible they might have some sort of equivalent of the winter counts of the plains Native Americans, albeit likely with writing included alongside or instead of pictographs.

In a discord server someone brought up how Kanna traveled to other places before arriving in the SWT
Kanna ship goes of course but instead of arriving in the fire nation the boat arrives at a mysterious remote island close to the FN hidden by mist created by spirits. Kanna discovers that civilians live there but what surprise her in disbelief is they are mix of both FN & WT and she falls in love with one of the locals. (These descendants of WT and FN will take inspiration from Polynesia and Melanesia countries)
I have headcanon when during the great migration to the South Pole thousands of years ago, Long before the great 100 year war, some of northern water tribe migrants decided to live in the fire nation.
During Sozin’s reign they went into hiding on the small islands before/during the war.

I know a lot of people discuss the cultural inaccuracies of the Water Tribes in ATLA having very strict gender roles, so I just wanted to share my headcannon that explains it.
In conflicts, a victimized society/culture will sometimes adapt to the cultural and societal standards of their enemy, either through choice or by force. I think that when the Fire Nation first started attacking the NWT, they began to strictly adapt to the standards of the (at the time) more sexist & heteronormative rules of the facist Fire Nation to intimidate their enemy and force the Fire Nation to take them seriously. Similar things happened in the SWT later down the line when they started prepping for war and after the Fire Nation began picking off their waterbenders.
Even as these rules got loosened in the Fire Nation as the years passed, the Water Tribes still felt the need to hold onto these ideas because it was ingrained into them as a survival technique.

"It’s a girl! Ex-orphan Mudanda is now a proud mum. She gave birth right outside the Voi stockades, then waited patiently for her Keepers to wake up so they could be the first to meet her daughter.
We knew Mudanda was pregnant, but we hadn’t seen trunk nor tail of her since May. Much to our surprise, Mudanda and her ex-orphan herd reappeared earlier this month and took up residence in the area.
The timing was unusual: At the peak of the dry season, it is a long and difficult journey to Voi, which is why ex-orphans typically only return ‘home’ after the rains have fallen. In hindsight, it is clear that Mudanda and her team made the pilgrimage so she could give birth in the presence of the people who raised her.
We named Mudanda’s daughter Miale, which means ‘sunray’ in Swahili. She is plump, inquisitive, and spry — everything a baby elephant should be!"
