Senkin Organic Nature 2020 Senkin, Sakura-shi Tochigi I kept seeing this nihonshu on other instagram accounts, so snatched up a bottle when I came across it. It is made by an old rediscovered method using organic rice from designated fields and no added yeast, only that which is naturally present in the brewery. Crystal with a slightly oily gold tinge. Refreshing aromas of white peach and mandarin orange, subtle floral notes of tea rose, and hints of cedar, nutmeg, and sticky rice. Intial dry impression leads to a pronounced umami spreading across the tongue balanced by a refreshing citrusy acidity. Slight hoppy bitterness and lactic acid twinge on the sides of the tongue. Long, lingering complex finish and citrus, peach, and yogurt retronasal aroma. Unique and intriguing, fans of sour beers would love this.
