Tender, juicy pork roast slow-cooked in a savory broth with aromatic herbs and spices, served on crusty French rolls with melted provolone cheese and a side of rich au jus for dipping.
Ingredients: 3 lb pork roast. 1 onion, sliced. 4 cloves garlic, minced. 1 cup beef broth. 1/2 cup soy sauce. 1/4 cup balsamic vinegar. 1 tablespoon honey. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. 1/2 teaspoon black pepper. 1/4 teaspoon red pepper flakes optional. 8 French rolls. 8 slices provolone cheese.
Instructions: Place sliced onions and minced garlic in the bottom of the slow cooker. Place the pork roast on top of the onions and garlic. In a mixing bowl, combine beef broth, soy sauce, balsamic vinegar, honey, thyme, rosemary, black pepper, and red pepper flakes if using. Stir well. Pour the mixture over the pork roast in the slow cooker. Cover and cook on low for 6-8 hours or until the pork is tender and easily shreds with a fork. Remove the pork from the slow cooker and shred it using two forks. Strain the cooking liquid from the slow cooker and reserve for dipping. Slice the French rolls in half and place a slice of provolone cheese on one side of each roll. Pile shredded pork on the other side of the rolls. Preheat the broiler. Place the assembled sandwiches on a baking sheet and broil for 1-2 minutes or until the cheese is melted and bubbly. Serve the sandwiches with the reserved cooking liquid for dipping.

Ingredients: 3-4 lbs beef brisket. 1 onion, sliced. 3 cloves garlic, minced. 1 cup beef broth. 1/2 cup barbecue sauce. 2 tbsp Worcestershire sauce. 1 tbsp brown sugar. 1 tsp smoked paprika. 1 tsp salt. 1/2 tsp black pepper.
Instructions: In the bottom of the slow cooker, put sliced onions. Use salt, pepper, and smoked paprika to season the brisket. On top of the onions, put the brisket. Beef broth, barbecue sauce, Worcestershire sauce, and brown sugar should all be mixed together in a bowl. Add the mix to the slow cooker with the brisket. Brisket should be soft after 8 to 10 hours on low heat or 4 to 6 hours on high heat. Take the brisket out of the slow cooker when it's done cooking and let it rest for 10 minutes before cutting it. Sliced brisket should be served with onion and slow cooker sauce.

This year for Mother's Day John cooked. He made Chicken Enchiladas and Mexican rice from scratch using my home canned broth, tomato sauce, salsa and my homemade creme friache. It took him hours and it was wonderful. After dinner we went over to see Mom and took her a lemon meringue pie. It's been a pretty good day so far, I feel loved and spoiled.
