The word Shami and contemporary preparation
There are several etymological elucidations concerning Shami Kabab. One account is that the name of the dish descends from the word Shaam, which means “nightfall” in Persian, while according to another; the name may also have sprung from the scent of a perfume called Shamama. Nonetheless, whatever be the reason of its origin, Shami Kabab is made out of meat and lentils. Meat can be chicken, mutton, lamb, or beef– a Shami Kabab can be prepared of any meat. It also contains a variety of spices, fresh coriander, chopped onion and green chillies.
Traditionally, Shami Kabab has been a delicious Awadhi dish made from minced meat, lentils and spices, but a vegetarian version of Shami Kabab is also getting popular these days.
