BIO-COP I did this illustration based on Steven Kostanski's "BIO-COP" fake film trailer a few weeks ago. her confession was met with an eyebrow raise , gaze shifting from her oh - so creative elder to the carefully placed rocks .

“ jill , ” slender digits tightened around the handles of their cart , pushing herself up on her tippy toes to get a better look . “ i think i’m more concerned about where the rocks came from .”

an endearing gaze , curled brims parting enough to let a laugh slip through . “ you know , considering we’re in a walmart. ”

Visite de la Cantoche

Compte rendu de l’entretien à la Cantoche le vendredi 16 octobre 2020 où nous avons été accueilli par Mathis, Jean-Yves et Soulou. 

La Cantoche est née de l’idée de deux personnes en 2016. Au début, c’était un lieu éphémère qui proposait une cuisine simple, peu cher et locale. En novembre 2018, ils ouvrent le bar permanent, puis en juin 2019 la cuisine est proposée à la carte.

Le parcours de Mathis : après un BTS informatique, il change de cursus et commence la cuisine à 24 ans à l’étranger pendant 3 ans. Il se forme ensuite à Lyon avec une formation adulte après avoir eu son CAP cuisinier. I travaille dans quelques restaurants à Lyon, en l’occurrence dans l’une des brasseries de Paul Bocuse. Il voyage ensuite pour le travail en Pologne et en République Tchèque, c’est grâce à ces expériences qu’il propose une cuisine influencée de ses voyages. En rentrant en France, il intègre un poste de Chef de cuisine dans un ESAT à Bainville-sur-Marne – Établissement et service d’aide aux travailleurs - puis il a commence à la Cantoche, où il a commencé en tant que bénévole puis devient chef.

Jean-Yves a commencé par un CAP cuisine sur deux ans, puis a travaillé en tant que commis de cuisine. Cela fait un mois qu’il travaille à la Cantoche.

Soulou fait partie d’un ESAT et il est à la Cantoche depuis un mois pour aider à la cuisine.

Présentation du lieu : la Cantoche est un restaurant associatif solidaire, qui accueille des bénévoles en cuisine, en salle et aussi sur d’autres pôles appelés des cercles : le cercle d’animations, le cercle finance et employeurs. La Cantoche n’a pas de système hiérarchique, c’est une gouvernance partagée avec un système horizontal. Tout le monde peut prendre une décision selon le cercle auquel ils sont affiliés. Au niveau de la cuisine, qui est végétarienne, ils travaillent avec des produits locaux, bio, de saisons et aussi issus du commerce équitable comme pour les épices comme la vanille et le café.

Ils travaillent avec des producteurs de maraichers aux alentours : Charlie et Fix basés près de Toul et Mirabio, qui les livrent en fruit et en confitures, une ferme de fromage. Au niveau des matières sèches, ils commandent sur une plateforme qui s’appelle PBL (Paysans Bio Lorrain), une sorte de grosse coopérative bio.

La Cantoche accueille des bénévoles au quotidien, qui peuvent accéder à un planning en ligne et participer à la cuisine ou au service en salle. Le chef et un ou deux bénévoles, préparent chaque jour dès 9h le menu qui est composé d’une entrée, un plat et un dessert. Comme le but est d’éviter au maximum les déchets alimentaires, s’il reste des denrées de la veille, ils les réutilisent le lendemain ou les transforment en un autre plat.

La crèmerie qui vient de la ferme Fonteney – au marché de Vandoeuvre - est la denrée qui nécessite le plus de surveillance.

L’été passé, ils ont organisé un atelier de verrine avec des légumes lacto-fermentés.

Une de leurs collègues a effectué des tests de lacto-fermentation de légumes dans les bocaux conservés dans la cave. Le principe est de découper les légumes assez fins à la mandoline, type carotte par exemple, et de faire un mélange eau et sel – en y ajoutant si on le souhaite des aromates. Le tout est conservé au sec et à l’abri de la lumière. Cette préparation peut être conservée environ 6 mois et a un intérêt par rapport aux conservations classiques qui, elles, nécessitent de la place au frais. Cette technique influence également le goût. Comme ils savaient qu’ils allaient fermer cet été la Cantoche, et qu’il leur restait des légumes, c’était également l’occasion de tester ce type de conservation. Ils attendent de tester entre eux le résultat de cette expérimentation pour par la suite l’utiliser dans des salades. Mais aujourd’hui, par soucis d’hygiène, ils ne savent pas si les bocaux peuvent être proposés aux clients, donc  ils vont contacter un laboratoire vétérinaire et alimentaire.

Les autres conservations dont Mathis nous a parlé est la confiture et les fruits sirop, également dans des bocaux aussi conservés à la cave. Pour les fruits en sirop, ils utilisent de l’eau et du sucre, puis les pochent. Notamment les mirabelles, qui sont procurées localement. Si on n’utilise pas autant de sucre que de fruits, il faut faire attention à la conservation.

Tous les mardis ils se fournissent à l’AMAP du CD 54 – conseil départemental. Pour le pain, ils se le procurent au moulin du petit poucet.

Les restes alimentaires sont soit consommés par l’équipe de bénévole et de salariés (ils sont 4/5 à déjeuner après chaque service), soit ils utilisent une cellule de refroidissement qui permet de redescendre rapidement en température un produit pour éviter la prolifération de bactéries. Le lendemain les plats sont réchauffés rapidement (pour également éviter la formation de bactéries) puis consommés. 

On lui a aussi demandé s’il connaissait des personnes sur Nancy qui travaillent sur la conservation des aliments. Il connait Franck Magot, qui est un traiteur en bio qui travaille aussi la viande et qui répond aussi à des évènements (mariage...)

Il nous a également évoqué le traiteur Les fermiers d’ici qui fait déjà des bocaux et qui a l’idée d’ouvrir une conserverie et pourquoi pas vendre ses bocaux dans lieu type biocop.

the sun sunk beneath her line of view , replaced by the moon that reflected light upon the street before her . motorcycle revved triumphantly as a previous conversation she had with her brother echoed in her mind . " this was the reason of her whole trip , to find jill and demand answers about her brother's little trip . it had been ages since they've been in contact , and this was claire's desperate attempt to make sure he's okay . ' i can handle myself , ' she thought . after all , she was a long way from home now and there was no guarantee that the woman would even be there . it was gamble ; her wrist - watch read 10 p.m. as she approached the apartment complex . this was information given to her by her brother , a way to offer the younger redfield comfort . there was no hesitation in her decision knock on the door , but her weight still shifted nervously .

" jill ? " another couple knocks . " it's ( claire ) . " she spoke to the door in hopes of coaxing the other to open up , if she was even home .

@biocop was her only hope , guilt - ridden by her blind faith ; how she was showing up unannounced . it couldn't be for nothing , the last thing the younger redfield wanted to do was waste jill's time . but , at the same time , she was tired of unanswered emails & straight - to - voicemail calls . claire needed answers .
