Abel pats his side pocket. "Check."
"Keys?"
"Check," he says, dangling his car keys on his index finger.
"Phone?"
"In your bag with yours. I think we're set, Dee."
Sadie chews on her bottom lip. "You sure? I feel like we're forgetting something," she mumbles, not looking at him. Instead she's scanning their hotel room, searching for an item unknown to her, but somehow is essential. Her fingers absentmindedly toy with the charm hanging around her neck.
Lost in thought, she's unaware of the tender gaze Abel sends her way. A sudden warmth enveloping her hand startles her back to reality. Soft to the touch, Abel's hold is steady. It never fails to surprise her how the simplest gesture from him makes her heart soar.
A smile tugs at the corner of her mouth as he soothes her further by running his thumb over her knuckles, then along each of her fingers. She joins in, tracing nonsensical patterns over his scars before eventually intertwining their fingers together. "We have everything, I promise." He squeezes her hand in reassurance.
"You're right," she exhales, releasing the last bit of tension from her body.
"I'm always right," he grins, bringing her hand to his lips. "Now come on, I'm starving." She yelps as he eagerly pulls her out the door, nearly tripping over her feet.
"Slow down! My legs are a lot shorter than yours," she giggles.
"This restaurant has ube crème brulee and buko pandan, babe. We're running."

One sprint out of the hotel lobby and a fifteen minute drive later, she and Abel stood by the entrance of Nina's, the best Filipino family-owned restaurant in Las Vegas, according to Lincoln. "Do you see him?"
Abel squints, then shakes his head. "No, he must still be-" his words die off as the familiar sound of a motorcycle roars through parking the lot. "Nevermind, I found him."
"So did I," she chuckles.
Lincoln parks his bike and jogs over to them both. "Hey, sorry I'm late. My last tattoo session ran long."
"No worries! It's good to see you again, Lincoln," Sadie smiles, bringing him into a friendly hug.
""Nice seeing you, too." He hugs her back, greeting Abel over her shoulder. "Sup, Flint."
"Nope. None of that. I'm coming in too," he states, swooping in to bear hug the both of them.
"Dude, you're crushing me."
"You get used to it," Sadie says, her words muffled into his chest.
"I don't want to get used to it. I want to breathe," he protests half-heartedly. Laughing, Abel gives them one final squeeze, then releases them both. Lincoln makes a show of rubbing his shoulder, but is otherwise unbothered. "C'mon, let's head inside. I'm not trying to see hangry Abel tonight."
"I don't get-"
"You do," Sadie and Lincoln cut him off in unison. They both snicker as Abel gapes at them.
"Dee, you're supposed to be on my side!"
"I'm always on your side, baby. But... you did almost knock over a bellboy on our way here."
Lincoln snorts. "He did?"
"The operative word in that sentence is almost," Abel grumbles, defending himself.

What Defines Filipino Food?

What defines "Filipino food"? Some misguided purists argue that true Filipino cuisine comprises only dishes eaten by locals before the influx of foreign influences. However, our history is far more intricate than just the pre-colonial era. It's a rich tapestry woven from pre-colonial, colonial, and external influences. Philippine cuisine is as diverse as our islands.
If we were to apply the logic that authentic Filipino food is solely native to our land, then Italian cuisine couldn't claim many of its dishes because the tomato, a staple ingredient, is not indigenous to Italy. The truth is, the majority of cuisines worldwide borrow, exchange, and adapt elements from other cultures.
The Philippines, situated in a strategically significant location, has a long history of interaction with traders, colonizers, refugees, and neighboring countries. From these interactions, we assimilate aspects of their culture, a process known as indigenization. What starts as foreign can become truly Filipino when embraced by locals. Numerous examples of indigenization exist in Philippine cuisine.
Perhaps the most famous example of indigenization is Filipino Spaghetti. Its distinct sweetness is far from that of Italian spaghetti. We use sweet-style tomato sauce or the more local banana ketchup, which is also an example of indigenization (replacing tomatoes with bananas).
There are more cases of indigenization. Take champorado, for instance. In Mexico, it's known as "champurrado," a hot beverage made from chocolate and masa de maiz. Filipinos transformed the Mexican champurrado, which was introduced via Manila-Acapulco galleon trade, into Philippine champorado by replacing corn with glutinous rice, creating a sweet chocolate rice porridge. In return, we shared our knowledge of tuba making and varieties of mangoes with Mexico.
Another example is avocado, an introduced species, regarded as a dessert fruit by Filipinos. It's often eaten with milk and sugar or added to ice cream, ice candies, and shakes—a contrast to its use in savory dishes in the Americas.
In Palawan, chao long, a localized version of Vietnamese pho, was introduced by refugees from Vietnam after the fall of Saigon. Adapted to suit local tastes, this soup boasts a hint of sweetness and is served with a localized version of Vietnamese Banh mi known as 'French bread', sourced from local panaderias.
In Sulu, Zamboanga, and other parts of Mindanao, satti, a skewered grilled meat dish, is our local take on satay or sate, influenced by neighboring Southeast Asian countries. Unlike the traditional peanut sauce served with satay, ours comes with a thick, spicy orange sauce.
Chinese influence permeates our culture, evident in our celebration of Chinese New Year as a national holiday, portrayal in popular media, and a significant portion of the population with Chinese ancestry. If I may add, did you know that chopsticks, which we traditionally call "sipit," were used by locals long ago; it's not a recent fad.
One of many Chinese influences on our cuisine is the introduction of noodles. Since then, noodle dishes have undergone a remarkable evolution, giving rise to diverse regional variations that incorporate locally available ingredients.
For example, Malabon boasts pancit malabon, renowned for its seafood toppings, reflecting the area's abundance of marine resources. In Quezon Province, a leading coconut producer, locals enjoy pancit buko, a unique creation that substitutes young strips of coconut meat for noodles. There are more pancits like pancit pusit, pancit dinuguan, pancit habhab, pancit cabagan, pancit puti, and others . We've crafted numerous exceptionally unique variations that would likely be unrecognizable to a native of China.
While we actually have pre-colonial dishes like kinilaw and budbod kabog, it's crucial to recognize that dishes like morcon, empanadas, and lumpia, though influenced by foreign cultures, are also Filipino. These foods are intertwined in our culture and cherished as part of our collective memory and shared heritage. They are part of our birthdays, weddings, diet, sold in our markets, or perhaps a specialty of our beloved mothers. They are undeniably Filipino. -John Sherwin Felix (Facebook Post, April 4, 2024)

Even though it was still sunny at that time, I was able to handle it even though I was a little sweaty because I only walked 2 km near Sanjuan. However, I didn't continue because I had already walked more than 2 km so I decided to pause it and planned to buy a buko shake because I was dehydrated and thirsty.

Friends and Family Features Nostalgic Family-Friendly Diner
Remember your childhood birthday parties which somehow had the best-tasting spaghetti you’ve ever had? What about those old family gatherings with cousins and grandparents where everyone enjoyed eating all their favorite Filipino dishes? Those memories don’t have to fade away because you can make new memories and celebrate with friends and family once again at Friends and Family in Bonifacio Global City.
The aptly-named Friends and Family is a tribute to Manila's neighborhood eateries and diners of yesteryears. This casual, family-friendly restaurant is located at the busy Bonifacio High Street Central where family gatherings and barkada get-togethers usually take place. It offers twists on our favorite comfort food while also serving classics that you may have already forgotten.
Friends and Family is open from as early as 8:00am all the way to 10:00pm. It is owned and managed by Raintree Hospitality which also gave us other notable restaurants such as Saboten, Providore, Jones All Day, Farmer’s Table Tagaytay, and more.
You can drop by Friends and Family for breakfast, merienda, lunch, dinner, or desserts. The bakery section offers many options for those quick snacks on the go. One of their new specialties is the Spanish Bread Croissant with a sweet and thick custard filling.
Our group of friends, who I’ve come to treat as my own family, gathered at Friends and Family to sample their many comfort food dishes as well as some new breakfast items.
We started with some Refreshers like the Fresh Buko in the Shell (P275). They also have other beverages like Sago’t Gulaman and Coconut Mango Shake.
I ordered the Saba Langka (P195) for myself which is like a drink and dessert in one. Other interesting options include the Buko Pandan, Ube Macapuno, Yema Crema, and more.
For our appetizers, we had the Crispy Tofu & Mushroom (P280). This sizzling plate of “pulutan” comes with crispy tofu, mushrooms, and kangkong with bell peppers.
Another fantastic starter would be the Cheesy Garlic Butter Scallops (P280) topped with breadcrumbs, calamansi and garlic pasrley butter. I loved how garlicky and cheesy these scallops are and I almost finished this entire serving myself.
The Crispy Catfish & Buro Platter (P295) is a unique Filipino salad dish that needs some participation from the guest. Grab one of the mustasa leaves and place some of the green mango salad, red onions, fresh ginger, ground peanuts, calamansi, patis, garlic and fresh chilies inside. Top it off with their homemade buro, wrap it all together then take a bite.
Filipinos love to eat dinuguan so the Day 2 Dinuguan at Puto (P175) will be a crowd favorite. This pork blood stew is topped with spring onion, fried green chili and lemongrass then served with puto which is a steamed rice cake that goes well with savory dishes.
The Dinakdakan is an Ilocano dish similar to the popular sisig of Pampanga but with just a little difference. The grilled pork is served with mayonaisse and spices and has bigger chunks compared to the sisig.
One of the most popular dishes at Friends and Family is their Birthday Spaghetti with Hotdog and Marshmallow (P225). This Filipino-style spaghetti has a sweet house made beef sauce topped with grated cheddar cheese. No matter what others say, I think Filipinos want their spaghetti like this instead of the more authentic Italian style.
This was also a special day for us because we were also celebrating the birthday of The KTG founder, Spanky Enriquez, who got how own plate of birthday spaghetti with a special song and greeting from the staff. Of course, I got the marshmallow and hotdog for myself.
What goes well with Pinoy spaghetti? Barbecues! You can order these barbecue sticks per piece like the BBQ Pork Tenga (P85), Isaw Bilog (P65), Isaw Manok (P55), and Special Pork BBQ (P125).
One of my favorites that afternoon was Chef K’s Crispy Tortang Talong (P250) served with banana ketchup vinaigrette. The eggplant was so crispy on the outside but still soft on the inside.
Then there’s the classic Pork Binagoongan (P325) with its crispy pork belly together with eggplant, tomato, and F&F Salsa.
What is a Filipino meal without rice? There are several rice dishes to choose from but one of the favorites here is the Tinapa Rice (P280) prepared with salted egg and F&F salsa.
Friends and Family actually serves breakfast daily from 8:00am to 11:00am so we also tried a few of their morning offerings. The Longanisa Omelette (P350) comes with an interesting combination of longanisa, pimientos, cheese, onions, and kangkong then topped with hollandaise and served with salad and pandesal brioche.
I still prefer having rice during breakfast so the Two Way U.S. Beef Tapa (P375) is my choice. It has crispy beef flakes and their famous Jones Tapa with garlic rice, two eggs, atchara, Tagaytay piña and green beans for a complete breakfast set.
For something different, try the Grilled Bacon Tocino Benedict (P395) which is a Filipino twist on the Eggs Benedict. This version is served with tocino and egg on a pandesal brioche then doused with calamansi hollandaise.
For dessert, we had the classic Leche Flan (P125) but they also have other desserts like Ube Tres Leches, Ultimate Halo Halo, Jackfruit Sansrival, and more. Friends and Family is truly a perfect place to celebrate with all your family and friends. Make your reservations early this holiday season and I’m sure you will all have some great bonding moments.
