Dinner at 3-Michelin-starred Le Bernadin was the highlight of my whirlwind trip to New York! While Chef Eric Ripert worked the room, I sampled succulent seafood! Big, briny East Coast oysters (pic 2), salmon rillette (pic 3), fluke ceviche (pic 4), and hamachi tartare with flying fish roe were all outstanding! But the seafood causa took things to another level. The causa (pic 5) is a cunning combination of crustaceans - lobster, crab and shrimp - in a decadent mousseline! These seafood dishes all paired perfectly with a bottle of 2017 Peter Lauer “Kupp” Grosses Gewachs Riesling (pic 6). Not wanting to leave without indulging in some caviar, next up was the Croque Monsieur, which featured smoked salmon, Gruyere cheese and golden Osetra caviar (pic 7)! This delicious dish was complemented by a glass of Pichler Gruner Veltliner. Things ended on a high note with two two desserts - the signature apple dessert and the hazelnut course (pics 8-9). Apple is a life-like faux apple filled with an apple-pie-type mixture. Hazelnut is a heavenly mix of chocolate and hazelnuts richly wrapped by gold leaf. I paired the hazelnut with a beautifully-aged glass of 1994 Quinta do Poco do Lobo Cabernet from Portugal (pic 10), which I enjoyed very much! A tribute to a man that opened himself up many decades ago to the world not knowing what he would unleash. Through his faults and successes in life, he taught us that our “bodies are not a temple, but an amusement park”. Through a simple book he wrote, he put a face to million of cooks and service industry people. From his first show through the Food Network (A Cook’s Tour) whom the network he himself hated, to No Reservations, The Layover and finally Parts Unknown through CNN, he opened the world to everybody that haven’t been there before. He asked difficult questions regarding the socio-economic situation of the place he was presenting. But at the end of it all, it was the food , the only thing that creates this atmosphere of conviviality and community in this oh so dismal world. The people that he met was a variety of cooking legends, the famous, the downtrodden, the fabulous and the outcasts. And yet he had that personality that he can be with anybody anywhere at any time. Cheers to you sir! Your friends around the world will not forget what you have done. Today we celebrate you and dedicate a toast to you.
