我们这个小企业办公大楼，进驻不少小型公司，虽说也有华美半导体协会、贸易公司等这类公司在此营运，但多半还是小型初创科技公司。

   而我们这间办公室虽小，却是整栋楼最好的。不只能看到窗外蓝天绿木，旁边还有个极隐密的进出小门，而且隔壁就是餐厅休息室。虽说楼里十多家公司，却少有人使用休息室，对于一进办公室喜欢现磨现煮咖啡，配上一碟自制糕点、午餐后泡壶好茶的我来说，这个休息室仿佛成为我个人的专属休息区。

   一天，大约下午近五点的时候，办公室里突然弥漫着浓郁的咖啡香。

   是有人在煮咖啡吗？下午五点？是幻是真，我疑惑了。

   事隔数天，下午五点左右，一阵香醇的咖啡味又飘了过来。

   我确信有人在煮咖啡。会是谁呢？我不免好奇，在这个大部分的人喝了咖啡晚上都会睡不着的时候。

   然后，咖啡香味的时间固定了。每天差不多这个时刻，休息室就充满了咖啡香的诱惑。

   我终于忍不住，轻轻地像不经意似地，走进休息室，想看看是谁能把咖啡煮得跟我的一样香？

   真有个个子小小的、从背影看起来像是个日本人的男子，正在煮咖啡。

   日本人喜欢喝的是最能保留咖啡豆风味与烘焙技术的日式手冲式咖啡。但当这人转过身来的时候，我惊异地发现，这个大约五十岁的日本人男人手上握着的并不是手冲咖啡，而是美国市面上极少见到的爱乐压（AeroPress）。

   我只听过爱压乐是一种手工烹煮咖啡的简单器具，将现磨好的咖啡粉放入设计如大针筒的圆柱型配有滤纸的滤网裡，加入热水，然后压下推杆，咖啡就会透过滤纸流入咖啡杯裡。爱乐压可以依照个人对咖啡浓度的喜好，自己决定研磨、水量和咖啡粉分量，冲煮出个人风味咖啡。浓度可以达到摩卡咖啡壶煮出来浓郁却圆润而厚实的口感，也可以压出如一般日本人较爱的手冲式清爽乾淨的特色咖啡。

   不小心打了照面，只好称赞他冲的咖啡非常诱人。

   这个叫西村纯的男子，大概是对咖啡太痴迷了，一提到咖啡，完全没有日本人客气却拒人于千里之外的拘谨，竟侃侃而谈起来。

   原来他连咖啡豆都自己烘焙呢。好不容易找到东岸有卖生咖啡豆的公司，网购回来后自己琢磨拿捏烘焙的方法和分量。经过多次的实际经验，终于抓到最完美的配方，而且不嫌麻烦地只烘焙当时要冲的分量。

   喝咖啡喝到这样的境界，也着实让人惊欢！

   有人喝咖啡要喝原味，但也有人专爱喝由 Nespresso 煮出来的Espresso浓郁滋味。有的人不只另加上牛奶，还要加上许多 Cream 。

第一次喝Espresso，小小的杯子，里头的咖啡大约只有约一大口的分量。我轻啜一口，浓稠甘醇内敛，既不浓烈也不涩苦，且能回甘。多层次醇厚的口感，滑顺醉人，真像喝一杯千年酿造的好酒，让人饮后回味无穷。

这些年Nspresso咖啡机忽然火热起来，黑色机器设计得十分高贵华丽，方便好使。

   不加奶、不加糖的Espresso，原始而纯粹，特定的的热水温度，在9或10个大气压的压力下穿过0.25盎司研磨好并压实的咖啡粉，萃取出约30cc的浓缩精华。咖啡呈现着赭红色的黄金泡沫，上面浮着咖啡油，馥郁持久的香气，纯饮也醉人。丰富、芳香，圆润、厚实，内敛、持久，比加奶泡的更有深度，十分贴近我的心。

   其实Espresso的配方可因不同的操作因素而变化，产生多达三十种不同的感觉。加入牛奶、可可粉，便变化出拿铁咖啡、卡布奇诺、焦糖玛奇朵以及摩卡咖啡等咖啡饮品，制作出来的咖啡与奶泡完美结合，顺着杯沿入口，鲜奶浓郁，烘托了咖啡的甘醇，口中绵密着奶香、咖啡香与甘醇厚实的口感，层次丰富的味觉感受，充满了不可言喻的美妙和回味。冲泡咖啡成了一种艺术，成了许多人生活的调味剂。

   一位朋友买了Nspresso，请我去喝咖啡。朋友製作了一杯她认为的极品咖啡，在香浓的咖啡里加了大量的Cream和糖。初品尝，如痴如醉，如同单调婚姻生活里一个惊艳的邂逅，一个不在计划里的意乱情迷的一夜情。但是这种咖啡好喝是好喝，连着喝只觉得腻，无法持久。如入芝兰之室，久而不闻其香，破坏了它特有的梦幻香气和口感。

   咖啡以它不同的面貌诱惑着人们，二十多年来，一直用的是市面上销声匿迹许久的美式老祖母咖啡机。煮出的咖啡，上面浮着一层油亮的咖啡油，让世界不同地区特有的咖啡，散发着属于它们独特的单一与纯美。

   对我而言，单品咖啡是生活，Espressog是生活中的一个变化、一个惊喜，一个心情，或者不曾期望的一个偶然的惊艳。
