Two eyes are intended to work as a pair. So when one is lost other has to compensate for it. Also they represent vulnerable body part, as its lost is major handicap. My two cents are whenever characters loses an eye in clamp in conotation of mlm pairing (exception being Fai->Sayoran where bond is more motherly), two aren't working as a pair to solve the issues but implicitly against each other because they'd rather prioritize their own (often self destructive) wishes than interest of both as a pair.
Watanuki couldn't stand the guilt because in his mind he was responsible for Doumeki's eye being sealed. So he decided to sacrifice his own, something that caused Doumeki, who is stoic, to snap. Fai didn't see worth in his life and allowed Sayoran to harm him instead of potentially harming Sayoran. Later on insisted he'd gladly die, something that Kurogane wouldn't allow. Due to his guilt Subaru wished to lose an eye, something which is revealed later on to greatly upset Seishirou. And so on.
Exchange in relationship is imbalanced because one side is willing to sacrifice themselves or let others do harm to them when other is not happy about it at all. Reconciliation is achieved only when both sides are willing to be equals and work together instead of against each other's wishes. In this essay I will -
