After everything was tightened up, we were off on our 45 minute flight. We arrived in Austin at the same time we would have had we driven, go figure… Another short uber from the airport to the accomodation (20 minutes in peak hour traffic), and we were settled in out little shack for the next 5 days. The uber driver kindly let us know, when he dropped us off, “be careful in this neighbourhood at night time. Its not dangerous, but just be aware” Wicked.

Ignoring our uber driver, we got settled and went out after dark to get some food. Where were staying in austin is the hip east neighbourhood. countless bars, restaurants, clubs, food trucks, chic stores. Like a mini footscray or Brunswick. A lot of old dilapidated houses but next door will be a beautiful, brand new home. The other great thing about austin is how many e-scooter and bikes they have, it makes getting around extremely easy. We scooted a couple of blocks down the the main drag of east austin and had the classic american meal of ramen for dinner. Credit too them, it was some of the best ramen I’ve had (Outside of Japan, Humble brag)

The also had Kirin on tap, but not just any kirin. You could get a kirin float! Whats a kirin float you ask? Well, a kirin float is a normal pint of kirin with frozen beer on top, AND it gets served with a shot of vanilla flavour, so you can basically make a vanilla ice cream on your beer! DO NOT, and i repeat, DO NOT order that ever. If anyone asks “would you like the beer float” say no. Hand down one of the worst things I’ve had ever.

We finished dinner and crossed the road to Zilker Brewery. A nice little joint with plenty of offerings! 

After a couple more beers, we scooted home to get ready for a big day tomorrow. We’re off to one of the most famous and highly rated texan bbq places in the world, Franklin BBQ. It’ll require a sun up start, no doubt a few hours in line, and then eating around lunch time!

Julia’s Raspberry, Coconut and Lime Cake

Coming into high spring, berries are noticeably more affordable and tasting as they should. Every time I go grocery shopping, I can’t help but pack punnets and punnets into my basket. They’re often eaten even before we make it home (anyone with a small child knows their love for berries knows no bounds). But sometimes they last long enough to make it into a cake. Here bright raspberries are folded through a coconut and lime cake batter and baked into a loaf cake. It’s perfect for afternoon tea or to pack for a picnic, now that we can!

The glaze is inspired by the sour cream glaze which graces the tall chiffon cakes at Beatrix Bakes. It just sets and isn’t too sweet. I’ve mixed in some lime zest to bring out even more lime flavour from the cake, and topped it with some shredded coconut. While a dusting of icing sugar would do, the glaze turns it into a rather special loaf. While I used fresh, frozen raspberries are also perfectly fine to use, which makes this cake a great all year-rounder. Other berries like blueberries and blackberries would work in this cake wonderfully too.

Ingredients

(Serves 8) 200g unsalted butter, softened 200g caster sugar 3 eggs Juice and zest of two limes 150g sour cream or crème fraîche 100g desiccated coconut 250g self raising flour 125g raspberries, plus extra to serve

Lime sour cream glaze 70g sour cream or crème fraîche 150g Icing sugar, sifted Zest of a lime and juice, if needed Shredded coconut, to serve

Method

Preheat oven to 180C. Grease and line a 23 x 13x 8cm loaf pan.

Cream the butter and sugar with a wooden spoon or in a stand mixer fitted with a paddle attachment until light and fluffy (around 3 minutes). Beat in the eggs, one at a time, followed by the zest and juice of the limes. Mix in the sour cream then the coconut. Finally sift in the flour and stir until just combined. Gently fold in the raspberries and spoon the batter into the prepared cake tin and bake for 50-60 minutes until a skewer is clean when inserted or the top of the cake bounces back when pressed. Allow to cool in the tin briefly then complete cooling on a wire rack. 

Make the glaze by combining the sour cream in a medium bowl with the icing sugar and lime zest. The glaze should be pouring consistency, but not too thick. Add in a little lime juice if needed. If it is too thin, add some more icing sugar. Pour the glaze over the cake and allow it to drip down the sides. Scatter with some shredded coconut and serve with extra raspberries, if desired.

Asparagus, broad beans and peas! It’s all about new spring greens right now, and one of my favourite ways to enjoy them is in a risotto. I make a light stock with the asparagus ends and pea pods for that maximum green flavour.

Gerald’s Bar in North Carlton were recently selling them which means we could enjoy them safely inside our 5km zone! It’s the little things!

Encore takes the stage for a final performance.

Say what you will about the delivered food revolution, but acknowledge this: it has helped the hungover to no end. Whatever you crave, whatever you believe will make you feel alive again, is just a touch and a transfer away. For me this meal is about consistency and returning to what has worked in the past. Pizza, this meal means pizza. Specifically, this means margherita pizza from Encore, Footscray.  

You see, at Encore there are four sizes: small, medium, large and New Yorker. For the past three years I have relied on the ginormous disk of bread, tomato and cheese with a sprinkle of herbs, known as the New Yorker, to get me through some of my roughest moments. Has it always worked? No, but I find some comfort in the effort. 

I have never set foot in Encore, but I have walked past it many a time. Every time I feel a sense of security in the knowledge that when I am knocked down, these people will always be there to pick me up again. Located on the corner of Barkly and Donald, next to a massage parlour with its curtains drawn, Encore is a strange looking place; certainly not a place that demands to be eaten at. The black sign is covered in flames. The logo, which would not stand out amongst Microsoft word art circa 2007, depicts two armless hands tossing a pizza base high in the air. From across the street, the interior looks dark. 

Now, on the brink of an interstate move, I faced saying goodbye to my cheesy safety net.

On Sunday, after an eventful going away party, I ordered a New Yorker for the last time. Lying supine on my brother’s couch in Kensington, devoid of energy, my phone dinged. Outside, in the searing light of the early afternoon sun, my saving grace had arrived. How awkwardly the delivery person handles the pizza is a sure sign a New Yorker has arrived. They don’t know what to do with that much product. Always trying to hold it up with one hand, the box careening away from them like a leashed dog on the way to the park. ‘Careful mate,’ they always say. 

‘Don’t worry, I know what I’m doing,’ I reply, bleary eyed and confident.

In my opinion, the best way to enjoy Encore involves knowing your limits, and then breaking them. That and a copious amount of vinegar based hot sauce. Tabasco will do, but if you have anything spicier, go the full mile. 

Opening the box is overwhelming. This is a one piece per plate pizza. I wouldn’t dare to guess how much cheese is on there but I would lock in the fact that it comes in an industrial proportion. The crust is thin and crisp, but soft enough still to bend in half with your pinky and thumb. This is a good thing, because to pick up a slice with one hand like a pro, you’re gonna need a little bend.  

On this last consumption, the New Yorker provided precisely what I was after — exactly what it was every other time. A combination of grease and carb, spicy on the lips from the hot sauce and easy on the tummy from the base. Three pieces spread out over forty-five-minutes, and I was in the space I needed to be: on the edge of comatose, drifting between reality and cheesy dreamscape, the soft tones of Blades of Glory background music to the symphony of taste.  Hangover food should do one of two things, put a spring in your step, or send you back to bed. Last Sunday, Encore sang me a lullaby one last time.
