Frev friendships — Lucile Desmoulins and Marie Marguerite Françoise Hébert

Marie was as much as 14 years older (38 years) than Lucile (24 years).

Caballeros Gobres

Poor Gentleman's "French" Toast Dessert

WITH MEDITERRANEAN ORIGINS, SIMILAR to Capirotada or bread pudding,

Caballeros Pobres is a way of using day-old bread and transforming it into something special. Where French toast is usually served hot and topped with syrup, this dessert is cooked, then soaked in aromatic syrup, chilled and served later.

Serves 6 to 8

I. Mix the milks with the vanilla. Dip each slice of bread in the mixture to fully coat, then drain.

2. Beat the egg whites to a medium peak, adding 2 tablespoons sugar at the end. Fold in the egg yolks.

3. Heat a heavy skillet or griddle to medium high. In the pan, place enough oil to cover the bottom generously. Gently dip each soaked slice of bread in the egg whites to coat and then fry in the oil on both sides until golden brown. Drain on paper towels and cool.

4. In a heavy saucepan or skillet (not nonstick), melt the sugar over medium heat until uniformly golden brown and smooth. Move the sugar around the pan by tilting it rather than using a spoon to stir. Carefully add the water, canela and cloves and bring to a full boil. Reduce the heat to a slow boil and cook until the sugar has dissolved and the mixture has thickened to a syrup consistency. Remove from the heat, strain, and then add the raisins and almonds.

5. Dip each slice of bread in the syrup and place on a serving platter. Pour the remaining syrup and the raisins and almonds over the bread slices.

Cover and refrigerate for several hours or overnight.

6. Serve with whipped cream, yogurt or Crema Agria (see recipe on page 189).

1 (5-ounce) can sweetened condensed milk or dulce de leche

1 tablespoon Mexican or other premium vanilla extract

4 loaf French or other crusty bread, sliced diagonally, 3/4 to 1 inch thick

5 egg whites

2 tablespoons sugar

2 egg yolks, well beaten

Vegetable oil

2 cups sugar

2 cups water

2 (2-inch) sticks canela

1/2 teaspoon whole cloves

1/3 cup raisins or currants

1/3 cup slivered almonds, toasted (optional)
