The quality and cleanliness of raw dairy farms is of utter significance, as is identifying conventional, high heat-driven, pesticide-rich farm conglomerates. If you or a loved one suffers from allergies, asthma, or eczema, you might have been advised to steer clear of dairy, as a possible contributor to these issues. However, there’s actually evidence beyond the anecdotal, that dairy can in fact be beneficial and even protective when it comes to these conditions … if it’s raw. While unpasteurized dairy is met with fear by the mainstream, due to highly-publicized, albeit infrequent, foodborne illness outbreaks, if you take a look at the data, the benefits might pique your interest. Raw milk in itself is not an inherently dangerous or unclean substance. Pasteurization, the heating of milk at high temperatures for a short time, began as a solution to a shift in the dairy industry. By the late 19th century, as more people moved to urban areas, the demand for milk followed. Cows were relocated from pastures, to crowded, filthy dairy quarters in cities where they were often fed distillery byproducts instead of grass, leading to their own ill health.  
Given those conditions, it’s no wonder diseases like typhoid and tuberculosis spread through milk. In response, by 1914, 95% of the milk in New York City was pasteurized. As a method of reducing harmful bacteria, pasteurization was a great development; the downside was that killing off harmful bacteria also meant killing off beneficial bacteria. In fact, the natural beneficial bacteria and antimicrobial content of raw dairy have been shown to inhibit harmful bacterial growth. Researchers from the University of Connecticut took both raw and pasteurized cheddar cheese whey (the liquid leftover from making cheese curds), and intentionally contaminated them with E. coli. In the first week, they found rapid growth of the pathogen in the pasteurized whey, but a steady decline of it in the unpasteurized.

White chocolate has flavor and deserves better.
Because the big reason many think of white chocolate mainly as 'white waxy stuff that ideally happens to other people,' especially in the US, is because the mainstream chocolate industry has essentially lied to us about what white chocolate is. For years.
Like okay, most likely in the US if you've had white chocolate on its own, you're thinking of a Hershey Cookies 'n' Creme bar.
I wrote 'creme' there, not 'cream' - that's not a typo, that's the real name. Because it contains no cocoa butter. As in, here are the ingredients:

Vegetable Oil (Palm Oil, Shea Oil, Sunflower Oil, Palm Kernel Oil, Safflower Oil)

It can't even legally call itself white chocolate. It's a creme bar, or a 'white' bar, but not a white chocolate bar.
And it's not just Hershey. If you look around the fine print in grocery stores you'll see a lot of 'white' or 'creme' or 'candy' products, but not much in the way of 'white chocolate.'
In contrast, here are the ingredients for a bean to bar white chocolate bar, Pump Street 44% Hacienda Limon: cocoa butter, cane sugar, milk powder. And that 44% means it's 44% cocoa butter.
What's even more offensive is that cocoa butter, like the cocoa beans it's pressed from, has flavor. Sure it's mainly creamy, but it's like how quality butter from happy grass fed cows has more depth of flavor compared to the cheaper stuff. Which is why brands like Pump Street make single origin cocoa butters, because they can show off that flavor.
So yeah, if you can try bean to bar or craft white chocolate, please do? You might be pleasantly surprised.

I live my life by the Reddit Click Theory (something I just now invented on the spot), which states: the number of clicks it takes to get to a piece of information on Reddit is directly correlated with its status as a conspiracy theory. One click? You're probably safe. Five clicks? You're in anti-vaxxer territory. Anyway, as I Googled "best baby formula" to feed my twin boys, Reddit threads professing the life-altering magic of HiPP, Holle, Kendamil, and other European baby formulas kept rising to the top. Upon further research, it became clear that there is a fairly sizable faction of parents who prefer the standards of European Union baby formulas to American recipes. "We dug into this trend in 2019, prior to the infant formula shortage," says Dina DiMaggio, MD, FAAP, medical research director at Bobbie Labs, an offshoot of the organic formula brand that supports research on infant feeding. "Our research, which focused on New York City-based parents, found that 20 percent of families were using illegally imported European infant formulas [bought through unregulated third-party websites]." Parents who utilize EU formulas regularly cite that the EU has stricter standards for baby formulas than in the United States, with non-GMO, grass-fed dairy, and organic ingredients being frequently thrown around. If you look at third-party sites, this is echoed in the reviews, which bemoan the use of corn syrup, pesticides, and sugar levels in American formulas. "The rise in this trend came while consumers were beginning to understand the difference between EU and US regulations in other product categories," says Dr. DiMaggio. "Just as people were taking a closer look at what was in the products they were purchasing for themselves, it's natural that they started to do the same for their babies."
