*Mushroom Do Pyaza* Recipe: Ingredients - 2 cups of chopped mushroom, 2 medium sized onions (cut in cubes), 1 small onion (finely chopped), 4 cloves of garlic (mashed/finely chopped), 1" ginger (finely chopped), 1 green chilli (chopped), 1 medium sized tomato (finely chopped), 1/2 capsicum (cut in cubes), 1 bay leaf, 1 tbsp cumin seeds, 1/4 tbsp turmeric powder, 1/2 tbsp coriander powder, salt to taste, 1/2 tbsp sabzi masala, red chilli powder as per taste, pinch of asafoetida, coriander leaves for garnishing, mustard or refined oil. Method: 1. In a pan, take some mustard oil and heat it well to see fumes. Now add cubical onions to it and let it cook. In between add cubes of capsicum. Let the onions turn golden-brown at the edges. Remove the pan from gas and keep it aside. 2. In a kadhai, take some oil and heat it well. Now add pinch of asafoetida and then add cumin seeds to crackle. Add washed bay leaf to it. 3. Then add finely chopped ginger-garlic and heat it to smell it's raw aroma. Now add finely chopped onion and green chilli. Cook it to see change in color of the mix to little brown. 4. Now add finely chopped tomatoes and cook it for a minute. Then add all the dry spices like, turmeric powder, coriander powder, sabzi masala, salt, red chilli powder. Mix it well. And let it cook for 2-3 mins. 5. Then add chopped mushrooms to this mix and let it cook till the water dries up completely. 6. Later add the onion capsicum mix kept separated in another pan to this kadhai of mushroom. Mix it well and let it cook for 2 more minutes. This is a normal Sunday afternoon for me. Meal prep Sunday #mealprepislife The only part that sucks is that my back hurts like a bad curse word. Lacrosse is on Sunday afternoons as well. So that means I have to foam roll my entire back. I am grateful for the pain because there is someone out there worse than I am. Don’t get me wrong I hurt but you would never know unless I told you. As one of my friends said today, “I thought you said you were fine?” What are you prepping for the week? I have egg roll in a bowl with brown rice noodles, spinach Italian turkey meatballs with Parmesan sweat potatoes and pepper zucchini, breakfast will be a banana oatmeal bake. *Gajar Aloo* Recipe: Ingredients - 1/2 kg carrots (cut in small pieces), 2 medium sized potatoes (cut in cubes), mustard oil, pinch of asafoetida, 1 tbsp cumin seeds, 4 garlic cloves (mashed), 1" ginger (mashed), 1/2 cup peas (optional), 1 medium sized tomato (chopped), 1 green chilli (chopped), 1/2 tbsp turmeric powder, 1/2 tbsp coriander powder, 1/2 tbsp sabzi masala, salt to taste, 1/4 tsp red chilli powder (optional), coriander leaves (for garnish) Method - 1. In a kadhai, heat mustard oil till fumes are seen. Now add pinch of asafoetida. Then add cumin seeds to crackle. 2. Later add ginger-garlic and let it leave it's raw aroma. Now add potato cubes and let it cook for 3 mins on slow flame. 3. Then add peas (optional) and then add carrot cubes. Let it cook for 5 mins. 4. Now add chopped tomatoes and green chilli. Then add all dry spices: turmeric powder, coriander powder, red chilli powder, sabzi masala, and salt. Mix it all well. 5. Let this mixture cook for atleast 15-20mins on slow flame. *Aate ka halwa for Ahoi* Recipe : Ingredients - 1 cup wheat flour, mustard oil, 2 medium sized pieces of jaggery, 2/3 tbsp saunf, 4 cups of water Method - 1. In a kadhai, heat mustard oil really well so as to finish it's raw taste. 2. Meanwhile in a separate vessel, take 4 cups of water and melt jaggery in it by heating it. Once done, strain it and keep separate. 3. When the oil gets heated up properly, put the wheat flour in it and keep mixing it well till it turns Brown. 4. Now put the jaggery-water into the vessel and start stirring it. 5. In between add saunf to it and keep stirring till water dries up according to your liking.
